Steps:
- Cream butter and sugar; add eggs, mix well.
- Mix bananas and buttermilk.
- Mix flour, baking powder, baking soda,and salt; add to creamed mixture alternately with banana mixture.
- Stir in bran, apricots, and nuts.
- Pour in greased 9in loaf pan.
- Bake at 350* for 55-60 minutes, until bread tests done.
- Cool 10 minutes before removing from pan.

APRICOT NUT BREAD
Another favorite quick bread that my mom made when I was a child. I often make small tins of my apricot nut bread, pumpkin bread, and cranberry bread to give as teacher gifts, along with the recipe for each, during the holidays.

Steps:
- In a small saucepan, cook the apricots in water until soft; drain.
- Preheat oven to 350 degrees.
- Generously grease and lightly flour two 7x3x2-inch loaf pans.
- In a large bowl, combine flour, sugar, baking powder, and salt; mix well.
- Stir in butter, milk, orange juice, and egg; mix well.
- Fold in dried apricots, nuts, and orange peel.
- Spoon into prepared pans.
- Bake 55 minutes or until a toothpick inserted in center comes out clean.
- Cool on rack 15 minutes.
- Remove from pan.
- Cool completely.
BANANA-APRICOT WALNUT BREAD
Served at the SeaScape Manor Bed and Breakfast in Highlands, New Jersey, this is banana bread with a twist -- apricots! I love banana breads, and am always on the lookout for something new, so when I spotted this I knew it was worthy of sharing. I haven't tried it yet, but will soon.

Steps:
- Preheat oven to 350 degrees. Grease and flour three 2 x 5-inch pans or one 9 x 5-inch pan.
- Whisk together the flour, baking powder, salt, and baking soda, and set aside.
- In a large bowl, mix together butter and sugar on medium speed until light and fluffy. Beat in eggs, milk, and vanilla. At low speed, alternately beat flour mixture and mashed bananas into butter mixture. Stir in apricots and chopped nuts.
- Spoon batter prepared pan(s). Bake until golden brown and a wooden pick placed in the center comes out clean (about 40 minutes for small pans and 50 minutes for a large pan). You can place foil over the top for the last 15 minutes if the bread is becoming too brown.
- Note: The bread has a better flavor when it is wrapped and sits overnight (chilled or at room temperature).
APRICOT BREAD
This is my most asked-for recipe. I've used it for many years, which is obvious from my recipe card that's yellowed and full of stains. The fruity appearance and taste of this easy-to-make bread blend beautifully with our warm Florida sunshine. It's always a hit whenever I serve it.

- Preheat oven to 350°. Soak apricots in warm water for 30 minutes. Meanwhile, in a bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt; stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55 minutes or until bread tests done. Cool 10 minutes in pan before removing to a wire rack.

BANANA AND APRICOT BREAD

Steps:
- Preheat oven to 180C (350F/Gas 4).
- Lightly grease and line a 10cm x 20cm (4inch x 8inch) loaf tin.
- Put the apricots, sultanas and apple juice into a pan and bgring to the boil and cook for 10 minutes or until the fruit has absorbed all the liquid.
- Sift the flour, baking powder and mixed spice into a bowl and stir in the oat bran and sugar or sweetener.
- Whisk together the eggs, buttermilk and oil and stir into the dry ingredients and then fold in the mashed banana and fruit mixture.
- Spoon the mixture into the prepared tin and bake for 50 to 60 minutes or until a skewer comes out clean when inserted into the centre.
- Set aside for 5 minutes before turning out on a wire rack to cool completely.
- Serve the bread plain or with a low fat spread.

DRIED BLUEBERRY, CRANBERRY OR APRICOT BANANA NUT BREAD
This recipe was found in Better Homes and Gardens Cook Book. I've used it for years, adjusting it to my specific tastes. I use either dried blueberries, or cranberries. I have only once used dried apricots, diced. It's fabulous either way, any way.

- preheat oven to 350degrees.
- grease bottom and 1in up the sides of TWO bread 7 1/2x3 1/2x2in bread pans; set aside.
- combine flour, baking powder, baking soda, cinnamon and nutmeg.
- in a medium mixing bowl, or food processor, combine eggs, bananas, sugar and butter. (I use I Can't Beleive It's Not Butter). Mix for 30 seconds.
- fold in nuts of your choice.
- spoon batter into prepared pans.
- bake at 350 for 40-45minutes, or until a toothpick inserted in the center of bread comes clean.
- cool in pan on a wire rack for 10minutes. remove from pan. cool completely on a wire rack and enjoy.

Steps:
- Preheat oven to 180ºC. Line a loaf pan (base about 22cm long x 10cm wide) with non-stick baking paper.
- Sift flours, baking powder, bicarbonate of soda, salt and cinnamon into a large bowl. Stir in sugar and dried apricots.
- Combine buttermilk, vanilla, eggs and mashed banana in a large jug. Whisk until well combined. Make a well in the centre of dry ingredients. Using a metal spoon, gently fold egg mixture into dry ingredients until well combined.
- Spoon mixture into prepared pan. Bake for 50-55 minutes or until a skewer inserted in the centre comes out clean. Cool in pan for 10 minutes then turn onto a wire rack to cool completely. Slice and serve.
