COPYCAT UMAMI SEASONING



Copycat Umami Seasoning image

This umami seasoning -- inspired by Trader Joe's version -- gets its savory flavor from porcini mushroom powder. It can be scaled up easily and keeps well, so make a double batch to keep on hand to use when you're looking to add a flavor boost to any dish.

2 1/2 teaspoons porcini powder
2 teaspoons white mushroom powder
2 teaspoons onion powder
1 teaspoon crushed red chile flakes
1 teaspoon mustard powder
1/2 teaspoon dried thyme
Kosher salt and freshly ground black pepper

Steps:

  • Combine the porcini powder, white mushroom powder, onion powder, chile flakes, mustard powder, thyme, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Transfer to an airtight container. Umami seasoning keeps up to 3 months at room temperature.
  • Here are two of our favorite ways to use the seasoning.
  • Mac and Cheese: Stir 1 tablespoon umami seasoning into the cheese sauce from your favorite boxed mac and cheese before you toss it with the pasta.
  • Popcorn: Pop a 3.5-ounce package of natural microwave plain popcorn. Drizzle with 1 tablespoon olive oil and sprinkle with 1 teaspoon umami seasoning.

This intriguing sauce is easy to make. Most people can't guess what the ingredients are. Keep a jar in the fridge and use it for steamed vegetables, fish, rice, most anything. It's great on salads, but add it at the last minute so the greens don't wilt. Number Of Ingredients 7

1/4 cup apple cider vinegar
1/4 cup cold water
3 tablespoons tamari soy sauce
1 cup nutritional yeast
8 garlic cloves, mashed
1/2 cup extra virgin olive oil
salt (optional)

Steps:

  • Place the vinegar, water, tamari, yeast flakes, and garlic in a food processor and blend until well combined.
  • Slowly pour in oil and blend until the mixture becomes thick and emulsified, like mayonnaise. Adjust the seasoning with salt as needed.
  • Pour the mixture into a lidded jar and refrigerate for up to 2 weeks.
  • Bring the sauce to room temperature and shake well before using.

  • Miso. This rich, pungent paste is a supercharged Asian condiment. Miso is made from steamed soybeans that have been fermented with rice, barley, or rye. White miso—the most common variety (and easy to find in the international aisle of major supermarkets or health-food stores)—adds nutty undertones to whatever it touches.
  • Anchovies. If you think they're fishy (literally and figuratively), it's time to reconsider. Anchovies are the secret ingredient in several restaurant dishes—from classic Caesar salad to bagna cauda (a traditional warm Italian dip for raw vegetables).
  • Dried Shiitake Mushrooms. These meaty mushrooms, which are easy to keep on hand when dried, add a slightly smoky flavor and satisfying bulk to all kinds of meals.
