CHOCOLATE CHIP CHERRY OATMEAL COOKIES

"My husband and I love homemade cookies, but a full batch is too much," writes Denise Fritz of Ormond Beach, Florida. "So I concocted these oatmeal cookies with chocolate chips and dried cherries. This recipe is for chocolate-covered cherry lovers everywhere!"

1/2 cup butter, softened
2/3 cup packed brown sugar
1/3 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup quick-cooking oats
3/4 teaspoon baking soda
1/2 teaspoon salt
2/3 cup dried cherries, chopped
1/2 cup semisweet chocolate chips

Steps:

  • In a small bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, oats, baking soda and salt; gradually add to creamed mixture and mix well. Stir in cherries and chocolate chips., Drop by scant 1/4 cupfuls 3 in. apart onto ungreased baking sheets. Bake at 350° for 14-16 minutes or until golden brown. Cool for 1 minute before removing from baking sheets to wire racks. Store in an airtight container.

1 cup butter, softened
3/4 cup sugar
3/4 cup light brown sugar, packed
2 eggs
1 teaspoon vanilla extract
3 cups quick-cooking oats
1 1/2 cups all-purpose flour
1 (3 1/2 ounce) box French vanilla instant pudding
1 teaspoon baking soda
1 teaspoon salt
1 (12 ounce) bag miniature semisweet chocolate chips
1 cup nuts, chopped (I don't use these because of possible allergies) (optional)

Steps:

  • Preheat oven to 375 degrees.
  • In a large mixing bowl, cream butter and sugars. Beat in eggs and vanilla.
  • Combine the oats, flour, pudding mix, baking soda and salt in another bowl. Gradually add this mixture to the creamed mixture. Stir in the chocolate chips and the nuts, if you are using them.
  • Drop by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. I use my Pampered Chef Cookie Scoop for this. Bake for 12 minutes or until lightly browned. Remove to wire racks to cool.

1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups rolled (old-fashioned) oats
1/2 cup coarsely chopped pecans
8 tablespoons (1 stick) unsalted butter, at room temperature
1/2 cup lightly packed light brown sugar
1/2 cup granulated sugar
1 large egg
1/4 cup maple syrup
1/2 teaspoon vanilla extract
3/4 cup semisweet chocolate chips

Steps:

  • Set 2 racks in the middle and upper thirds of the oven and preheat to 350 degrees F.
  • In a medium bowl, stir the flour, baking powder, baking soda, salt, oats, and pecans together with a whisk or fork.
  • In a large bowl, beat the butter, brown sugar, and granulated sugar together for 30 seconds until blended. Beat in the egg until smooth and barely fluffy. With mixer running on medium high, drizzle in the maple syrup, and vanilla until incorporated. Turn the mixer down to its lowest setting and gradually add the flour-oatmeal mixture. Blend just to combine, then mix in the chocolate chips.
  • Drop walnut-sized balls of dough onto a nonstick or parchment-lined cookie sheet at 3-inch intervals. With moistened fingers, flatten and round out the cookies a little. Bake for 9 minutes, turning the pan once for even baking. The cookies are done when they are lightly browned on top. Set the cookie sheets on a rack to cool.

1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. 2 teaspoons cornstarch
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup salted butter, at room temperature
1/4 cup all vegetable shortening (unflavored), at room temperature
1 cup granulated sugar
1 large egg
1 large egg white
2 teaspoons vanilla extract
1/2 teaspoon almond extract
1/3 cup salted butter, at room temperature
2 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
1-2 drops of almond extract
2 1/2 to 3 tablespoons half-and-half
food coloring, optional

Steps:

  • Sift flour, cornstarch, baking powder and salt into a large bowl. Whisk a few times; set aside. In the bowl of an electric stand mixer whip butter, shortening and sugar on medium speed until pale and fluffy; about 4 minutes. Scrape down sides of bowl and mixing paddle as needed. Add in egg and mix until well combined. Add in remaining egg white, vanilla and almond extract and mix thoroughly. With mixer running on medium-low, slowly add in dry ingredients and mix just to incorporate. Transfer dough to an airtight container and refrigerate 2 hours. Pre-heat oven to 375 degrees F during the last 10 minutes of refrigeration. Scoop dough out an even 1/4 cup at a time, or portion with a scale (mine were about 64 grams each), and roll into a ball. Place dough ball on lightly floured surface, sprinkle top lightly with flour. Flatten dough to 1/2″ thick using a smooth, flat object (cookie will be about 2 5/8″ - 2 3/4″ after flattening). Transfer cookie to a parchment lined, or buttered cookie sheet and repeat process with remaining dough (use 2 cookie sheets). Bake in pre-heated oven for 9 - 11 minutes, until centers just puff, and do not indent when lightly touched. Allow cookies to cool 5 minutes on baking sheet before removing to a wire rack to cool. Cool completely. Frost and decorate.
