Number Of Ingredients 13

1/4 cup extra-virgin olive oil, plus additional for brushing
1 tablespoon lime juice plus lime wedges, for garnish
2 teaspoons ground cumin
1 teaspoon garlic powder
1 teaspoon coarse salt, plus additional for sprinkling
Four 6-ounce skinless salmon fillets

Torn fresh cilantro, for garnish

Steps:

  • Preheat a grill for cooking at medium-high heat.

CHIPOTLE SALMON TACOS WITH AVOCADO SALSA

Chipotle Salmon Tacos with Avocado Salsa image

If you're looking for a refreshing weeknight taco, fish tacos are always a great way to go. These tacos include a sweet orange and avocado salsa that perfectly pairs with the spicy chipotle salmon.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 13

1 1/2 teaspoons chipotle chile powder
1 teaspoon ground cumin
2 navel oranges, 1 zested
Kosher salt
4 5-ounce skinless salmon fillets, cut into strips
1 avocado, diced
2 tablespoons finely diced red onion
1/2 cup fresh cilantro, chopped, plus more for topping
1/2 jalapeño pepper, seeded and finely diced
1 lime, 1/2 juiced and 1/2 cut into wedges
Vegetable oil, for grilling
1 ear of corn, shucked
12 corn tortillas

Steps:

  • Preheat a grill to medium high. Whisk together the chipotle powder, cumin, orange zest and 1/2 teaspoon salt. Toss with the salmon and set aside.
  • Meanwhile, cut off the tops and bottoms of the oranges with a sharp knife. Place cut-side down, then cut off the peel and white pith. One at a time, hold each orange over a bowl and cut along the membranes to remove the segments, letting them fall into the bowl. Squeeze the juice from the membranes into the bowl. Chop the orange slices into small pieces, then return to the bowl. Add the avocado, red onion, cilantro, jalapeño, lime juice and a pinch of salt; toss well.
  • Lightly oil the grill and add the corn. Grill, turning occasionally, until charred all over, 12 to 15 minutes. After a few minutes, add the salmon to the grill and cook until well marked and charred at the edges, about 2 to 4 minutes per side, depending on the thickness. Grill the tortillas until marked and warmed, 20 to 30 seconds per side.
  • Cut the corn kernels off the cob and toss with the avocado-orange salsa. Divide the tortillas among plates and top with the salmon, salsa and more cilantro. Serve with the lime wedges.

ROASTED SALMON TACOS

Roasted Salmon Tacos image

Provided by Ina Garten

Categories     main-dish

Time 1h10m

Yield 6 servings

Number Of Ingredients 14

3/4 pound green cabbage, cored and finely shredded
1/2 seedless cucumber, unpeeled, halved lengthwise, seeds removed and very thinly sliced
1/4 cup good white wine vinegar
3 tablespoons minced fresh dill
Kosher salt and freshly ground black pepper
Olive oil, for greasing the pan
1 3/4 pounds center-cut fresh salmon fillet, skin removed
2 teaspoons chipotle chile powder
1 teaspoon grated lime zest
Kosher salt and freshly ground black pepper
3 tablespoons freshly squeezed lime juice, divided
12 (6-inch) corn tortillas
4 ripe Hass avocados, seeded and peeled
3/4 teaspoon Sriracha

Steps:

  • At least an hour before you plan to serve the tacos, toss the cabbage, cucumber, vinegar, dill, 1 teaspoon salt, and 1/2 teaspoon black pepper together in a large bowl. Cover and refrigerate, allowing the cabbage to marinate.
  • When ready to serve, preheat the oven to 425 degrees. Brush a baking dish with olive oil and place the salmon in it. Mix the chile powder, lime zest, and 1 1/2 teaspoons salt in a small bowl. Brush the salmon with 1 tablespoon of the lime juice and sprinkle with the chipotle seasoning mixture. Roast for 12 to 15 minutes, depending on the thickness of the fish, until the salmon is just cooked through.
  • Wrap the tortillas in 2 foil packets and place them in the oven with the salmon. Roughly mash the avocados with the remaining 2 tablespoons of lime juice, the Sriracha, 1 teaspoon salt, and 1/4 teaspoon black pepper.
  • To serve, lay 2 warm tortillas on each of 6 plates. Place a dollop of the avocado mixture on one side of each tortilla, then some large chunks of salmon, and finally, some of the slaw. Fold the tortillas in half over the filling (they will be messy!) and serve warm.

CHIPOTLE-RUBBED SALMON TACOS

Chipotle-Rubbed Salmon Tacos image

From Food & Wine Magazine March 2010 - This is super yummy, but much too spicy as written for our taste. I reduce the Chipotle to 3/4 t. We also like the fish more as is, with the avocado and mayo lime sauce without the cabbage and tortillas.

Provided by TattooedMamaof2

Categories     Lunch/Snacks

Time 21m

Yield 8 tacos

Number Of Ingredients 10

2 tablespoons mayonnaise
1 teaspoon fresh lime juice
2 teaspoons dried chipotle powder
2 teaspoons orange zest, finely grated
2 teaspoons sugar
1 lb salmon, skinless fillet cut into 4-inch pieces
1 tablespoon extra virgin olive oil
8 corn tortillas
1 Hass avocado, mashed
1 cup cabbage, finely shredded

Steps:

  • Preheat oven to 350°F In a small bowl, whisk the mayo with the lime juice. In another small bowl, combine the chipotle powder with the orange zest and sugar. Rub each salmon piece with 1 t. olive oil and then the chipotle-orange zest mixture. Let sit 5 minutes.
  • Wrap the tortillas in foil and bake for about 8 minutes, until they are soft and heated through.
  • Meanwhile, heat a grill pan. Season the salmon with salt and grill over high heat, until nicely browned and just cooked through, about 3 minutes per side.

Categories     One Dish Meal

Time 55m

Yield 6 serving(s)

Number Of Ingredients 23

1/2 lb salmon fillet, skin on and scaled, pin bones removed
2 tablespoons olive oil
1/4 cup blackening mixed spice (recipe below)
vegetable oil, for brushing
12 corn tortillas
1/2 head cabbage, cored and finely shredded (about 5 cups)
3 green onions, including green tops, quartered lengthwise and cut into 1-inch lengths
3 tablespoons fresh lime juice
2 ripe tomatoes, halved crosswise, cored, seeded, and cut into 1/4-inch dice
chipotle chili sauce (recipe below)
1 cup mayonnaise
3 tablespoons buttermilk or 3 tablespoons sour cream
2 minced canned chipotle chiles in adobo
2 tablespoons minced fresh cilantro
1/4 teaspoon kosher salt or 1/4 teaspoon sea salt
2 tablespoons kosher salt
2 tablespoons sugar
1 tablespoon fresh ground pepper
1 tablespoon cayenne pepper
1 teaspoon cayenne pepper
2 tablespoons paprika
1 tablespoon dried thyme
1 tablespoon dried oregano

Steps:

  • Blackening Spice Mix: Combine all ingredients in a small bowl. Stir well to blend. Store in an airtight jar in a cool, dark place for up to 6 months. Makes about 2/3 cup.
  • Chipotle Sauce: In a small serving bowl, mix together the mayonnaise, buttermilk or sour cream, chipotle chiles, cilantro and salt. Cover and set aside for up to 45 minutes, or cover and refrigerate for up to 3 days. Makes 11/4 cups.
  • To Finish and Assemble: Preheat the oven to 350 degrees.
  • Prepare a medium fire in a charcoal grill or preheat a gas grill to medium. Arrange the salmon, skin side up, on a rimmed baking sheet. Oil the skin generously with about 1 tablespoon of the olive oil. Turn the salmon over and rub the flesh side all over with the blackening spice. Using fingertips, lightly dab the remaining olive oil over the blackening spice.
  • When ready to grill, brush the grill grate generously with vegetable oil. Grill the salmon, skin side up, directly over the fire. Cover the grill and cook on one side for 4 minutes. Turn and cover again. Cook until almost opaque throughout but still very moist, or until an instant-read thermometer inserted in the center registers 125 to 130 degrees, about 5 minutes more. Transfer to a cutting board and cool slightly.
  • Meanwhile, place the tortillas in a covered heatproof container or sealed aluminum foil packet.
  • Warm the tortillas in the oven for 15 minutes before serving.
  • In a medium serving bowl, toss together the cabbage, green onions and lime juice. Place the tomatoes in a small serving bowl. Slice the salmon crosswise into 12 strips, lift the salmon off its skin, and arrange on a warm serving plate. Discard the skin. Transfer the warm tortillas to a serving plate. Let each diner assemble his or her own tortilla. To assemble, spread a generous spoonful of Chipotle Sauce down the middle of a tortilla, arrange a strip of salmon on top, mound with a bit of the cabbage mixture, and garnish with some diced tomatoes.
