Steps:
- To make the meatloaf: Preheat the oven to 375 degrees F. In a small skillet, heat the oil over medium heat. Add the scallions, carrot and onion and cook until softened, about 10 minutes. Add the thyme, cumin, paprika, and garlic and onion powders. Cook until fragrant, about 1 minute. Scrape into a large bowl and let cool completely.
- Meanwhile, heat the ketchup in the microwave until just warm to the touch. Sprinkle the gelatin over the ketchup and whisk to remove clumps. Add to the cooled vegetable mixture, then add the beef, pork, eggs, and bread crumbs. Season with salt and pepper and mix just to combine. Coat a 9x13-inch baking dish with oil and form the meat mixture into a loaf.
- To make the glaze: In a measuring cup, stir together the ketchup, Worcestershire, and mustard. Brush a little glaze on the meatloaf and bake until the internal temperature reaches 160 degrees F, about 1 hour 15 minutes, brushing three or four times with the glaze until you've used it all. Let meatloaf rest at least 15 minutes before slicing.

MOM'S SECRET INGREDIENT MEATLOAF
My mother made the best meatloaf in town, but would never share her recipe saying it was just a basic meatloaf recipe with a "secret ingredient". Now all MY family and friends beg for this meatloaf, but only my daughter knows the secret ingredient -- now you will too. You will get raves on this one!

Steps:
- Mix ground chuck with breadcrumbs.
- (extra lean works well too).
- Add salt,pepper and egg.
- Mixing with you hands now, add the Heinz Chili Sauce and the milk.
- Seperate the mixture in half and form 2 loaves.
- They will both fit comfortably in a 13" by 9" pan.
- Mix the topping together and spread on the top and the sides of the loaves.
- Cook at 375 for one hour or 400 for 45 minutes.
- Check for firmness.
- Let rest for ten minutes before cutting.
- Tips---------.
- If you have stale bread you can lay 2 slices under each loaf and it will soak up the grease so your meatloaf is a bit leaner upon serving.
- Also, you can use the Chili Sauce on top of the meatloaf instead of catsup.
- This makes it spicier but my mother never did this because it would have given away her"Secret Ingredient" -- and the kids probably will like it better with catsup on top.
- Enjoy!

Steps:
- Preheat the oven to 350°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray. Combine the bread crumbs and the cup of bloody mary mix in a small bowl and mix well, set aside until the bread crumbs have absorbed the liquid (3 to 5 minutes).
- In a large bowl, combine the meat, moistened bread crumbs, egg, onion, bell pepper, garlic powder, pepper and salt. Mix until the ingredients are well incorporated, being cautious not to over mix. Pour the mixture into the baking dish and form into a loaf in the center of the dish.
- In a small bowl, combine the ketchup and remaining 1 tablespoon of bloody mary mix and spread on top of the meatloaf. Bake uncovered for 50 to 60 minutes, or until cooked through. Allow to rest for about 5 minutes before slicing and serving.
MEATLOAF - FAMILY SECRET INGREDIENT
This is my mom's recipe and we loved it so much. You can use a mixture of ground beef, veal and pork if desired. This is a slightly different meatloaf, than what most people are familiar with. After they taste it, they ask for the recipe. This makes a great leftover fried meatloaf sandwich. (Just a note: If my Mom or I make the meatloaf, it falls apart, if my Dad makes it, it stays together...so good luck with yours!)

- Lightly grease a 9 x 5 x 3-inch loaf pan.
- In a large bowl, combine the 2 kinds of ground meat with the chopped onion, egg, applesauce, breadcrumbs, 3 tablespoons of ketchup, salt, and pepper; mix thoroughly with your hands.
- Pat the meatloaf mixture into the prepared loaf pan.
- Bake the meatloaf in the preheated oven for 1 1/2 hours.
- If using the optional topping, take the meatloaf out of the oven about 10 to 15 minutes before it's done. Carefully pour off excess grease and spread the 4 tablespoons of ketchup or barbecue sauce over the top. Return the loaf to the oven and continue baking until it's done.
- The minimum safe temperature for ground beef and ground pork is 160 F (71.1 C). If in doubt, check the temperature by inserting an instant-read thermometer into the center of the loaf.
- Let the meatloaf cool for 10 minutes and then remove it to a platter. Slice and serve.

- Preheat oven to 350F, with rack on middle position. Place large pan of water on lower rack underneath.
- In a large heavy saucepan, saute onion and garlic in olive oil until soft. Add a pinch of kosher salt, pinch of pepper, and the thyme. Saute 30 seconds more, and transfer to large bowl.
- Add 1 tsp kosher salt, 1 tsp black pepper, Worcestershire sauce, eggs, beef broth, and bread crumbs. When I made this meatloaf for Lenny recently, I wanted to make sure there weren’t any large chucks of bread or onion so, I toasted about three slices of whole grain bread and then pulsed it to a nice crumb consistency in my food processor. I also processed the onion in the food processor. (By the way, this is a great trick for incorporating onions in dishes that all those picky eaters won’t even notice.)

- Place the mixture into the center of the prepared foil and form into a circle that is approximately 6 inches in diameter. Wrap the foil up and around the edges so no juices can escape.
- Pour 1 1/2 cups of water into Instant Pot. Place the foil-wrapped meatloaf on trivet and lower into the pot.
- Place the cover on the pot and set timer to 25 minutes on high pressure (pressure cook setting). It will take the IP around 11 minutes to build up pressure before it begins cooking.
5 SECRETS FOR MAKING BETTER MEATLOAF - ALLRECIPES
From allrecipes.com
Estimated Reading Time 7 mins
- Meat Matters. The right cut of meat makes for a juicy, crave-worthy loaf that just might taste better than Mom's. "I like using a ground sirloin so you don't get so much shrinkage as it cooks," says McLaughlin.
- Texture Tips. The ideal meatloaf holds its shape while staying moist, which is no easy feat. "You need the vegetables in the mix for flavor and moisture, but no one wants to bite on a big chunk in their meatloaf," shares McLaughlin.
- Spiced Right. Most meatloaf recipes are fairly straightforward when it comes to diving into the pantry. Salt and pepper reigns, but it's easy to add complexity and character by going deeper into the spice rack.
- Handle with Care. Once all the ingredients are assembled in a mixing bowl, use a light touch to combine. Set aside the spoon and work the mixture lightly with your hands, just long enough so everything has been incorporated.
- The Big Finish. A sweet ketchup glaze is the traditional topper on the majority of meatloaf preparations, but some prefer a more savory approach. Nicole's secret to a perfectly tangy ketchup topping is balsamic vinegar and Worcestershire sauce.

From thekitchn.com
- Campbell’s Condensed Beef Consommé. “My mom used to make these French dip sandwiches with store-bought roast beef and French rolls. The secret ingredient was Campbell’s Condensed Beef Consommé.
- McCormick Fajita Seasoning Mix. “I mostly grew up on Hamburger Helper, tuna noodle casserole, and the like. I always joke that this is why I became a cook, though, and one of the things I was really proud to learn as a 12-year-old was skillet fajitas — so I do have a love of McCormick Faijta Seasoning packets still.”
- Bagoong. “Bagoong is fermented shrimp paste that I like to add to a bunch of different dishes to boost umami. This Filipino condiment is salty, stinky, and funky in all the best ways.
- Grandma’s Robust Molasses. “My grandma used to use robust molasses (or sorghum!) in her signature soft ginger cookies. I always have a jar in my cabinet for making those.
- Marshmallow Fluff. “We always had a tub of Marshmallow Fluff in the pantry for making Fluffernutter sandwiches (peanut butter and Marshmallow Fluff on squishy slices of white bread) when I was a kid.
- Manischewitz Matzo Meal. “My Bubbie made the best matzo balls … sometimes. (They were either rock-hard, the way we liked them, or soft floaters — and each batch was wildly unpredictable.)
- Knorr Pesto Sauce Mix. “I realize the first ingredient listed is maltodextrin (while basil is #10!) , but hear me out. Whenever my mom would whip up spaghetti with this instant pesto mix, my siblings and I would simply devour it.
- Pasta’s Daily Spicy Hot Tomato Oil. “My family wasn’t big on cooking, so I really started to cook for myself and developed a culinary identity in college.
- Good Seasons Italian Dressing Mix. “I first learned how to make ‘homemade’ dressing by pouring oil, vinegar, and Good Seasons Italian Dressing Mix into a bottle and giving it a good shake.
- Bisquick. “A yellow box of Bisquick is a permanent staple in my parents’ pantry. When I was growing up, my friends would always look forward to my dad’s waffles the morning after a sleepover.
