4 cups cooked brown rice
8 ounces beef, chicken or pork ((225g, cut into small 1/2-inch pieces; if using shrimp, use 70-90 size peeled shrimp))
1 tablespoon water ((plus 2 teaspoons hot water, divided))
1 1/2 teaspoons dark mushroom soy sauce ((or regular dark soy sauce))
1 teaspoon vegetable oil
1 teaspoon cornstarch
1/4 teaspoon granulated sugar
1/8 teaspoon ground white pepper
1/2 teaspoon sesame oil
1 teaspoon dark soy sauce
1 tablespoon light soy sauce
1/2 teaspoon MSG ((totally optional))
3 tablespoons vegetable oil ((divided))
2 eggs ((beaten))
1 medium onion ((about 165g, chopped))
3/4 cup carrots ((chopped, fresh or frozen))
1 tablespoon Shaoxing wine
1 cup frozen peas ((135g))
1 scallion ((chopped))

Steps:

  • Brown rice is easy to cook. We have detailed instructions in our post on How to Make Perfect Brown Rice, either on the stove, or in any rice cooker.
  • If you are making brown rice fresh the same day, let the cooked rice cool completely before using it. It's best to transfer the rice from the pot to a sheet pan and fluff it with a fork, so it can dry out and cool simultaneously.
  • Day-old brown rice also works nicely, as cold rice clumps are drier and easily broken apart in the wok. Simply take the brown rice out of the refrigerator, wet your hands with a little water, and break up any clumps so you have individual rice grains. Rinse your hands with a little more water if rice sticks to your hands.
  • If using beef, chicken, or pork, add 1 tablespoon water, 1¼ teaspoons dark mushroom soy sauce, and 1 teaspoon vegetable oil to the meat. Mix until all the liquid is absorbed by the meat to tenderize and add moisture. If you're using shrimp, just omit the dark mushroom soy sauce.
  • Next, mix in 1 teaspoon cornstarch and set aside. We made a version with beef, but you can pick any meat of your choosing or go vegetarian with a vegetable fried brown rice.
  • Mixing your sauce ahead of time is much easier than adding everything individually to a hot wok. In a small bowl, mix 2 teaspoons hot water and ¼ teaspoon granulated sugar until dissolved. Stir in ⅛ teaspoon ground white pepper, ½ teaspoon sesame oil, 1 teaspoon dark soy sauce, 1 tablespoon light soy sauce, and ½ teaspoon MSG if using. Set aside.
  • Heat the wok until just smoking. Spread two tablespoons of vegetable oil evenly around the wok, and add the beaten eggs. Turn the heat down and stir the eggs until scrambled. Transfer back to the same bowl, and set aside.
  • Heat the wok until smoking. Add one tablespoon of vegetable oil. Add the marinated meat to the wok. Spread it out in one single layer, and sear for 30 seconds on each side. Scoop it back into the bowl and set aside.
  • With the heat on high, add the chopped onions to the wok (there should be some oil remaining from searing the meat). Cook until translucent. If using fresh carrots, add them at the same time you add the onions. If using frozen carrots, add them after the onions turn translucent.Continue stir frying until the carrots are heated through.
  • Add the cooked brown rice. Your heat should be really high at this point to prevent sticking. Use your metal wok spatula to stir-fry the rice, scraping from the bottom of the wok to prevent sticking. This is an essential technique for fried rice.
  • Once the brown rice is warmed (after 1 to 2 minutes of stir-frying), pour the prepared sauce evenly over the rice. Stir fry for another 1-2 minutes to evenly distribute the sauce.
  • Add in the seared meat. Spread 1 tablespoon of Shaoxing wine around the perimeter of the wok, and give everything a quick stir.
  • Next, stir in the scrambled eggs. Then, stir in the frozen peas until heated through. Toss in the chopped scallions and stir fry for another 15 seconds. Use a clean spoon to taste the rice, and re-season with more soy sauce or salt if needed.
  • Plate and serve immediately.

3 large eggs
1/2 pound rice vermicelli or rice-stick noodles
2 tablespoons canola oil, plus more if needed
1 pound boneless, skinless chicken thighs, cut into 1 1/2-inch pieces
1/2 pound small shrimp, peeled and deveined, tails intact (reserve shells for Fish Stock)
Coarse salt and freshly ground pepper, to taste
1 medium onion, finely chopped (1 cup)
3 carrots, cut into 1/4-inch dice ( 1/2 cup)
2 tablespoons minced garlic
1/2 pound ground pork
1 tablespoon fish sauce
4 cups napa cabbage (about 1 pound), thinly sliced
2 1/4 cups Shrimp Stock for Rice Noodles with Chicken, Pork, and Shrimp
2 tablespoons fresh lemon juice
1 scallion, thinly sliced on the diagonal (1/4 cup)
1 to 2 lemons, cut into wedges

Steps:

  • Place eggs in a small saucepan, and cover with cold water by 1 inch. Bring to a boil. Turn off heat; let stand, covered, for 13 minutes. Drain. Cover with cold water, and let stand 2 minutes. Peel and quarter eggs. Cover, and refrigerate.
  • Fill a large bowl with warm water. Add noodles, and let soak for 15 minutes, stirring to separate as they soften. Drain.
  • Heat oil in a large, heavy stockpot over medium-high heat. Season chicken and shrimp with salt and pepper. Working in batches, cook chicken, turning occasionally, until browned on all sides, about 5 minutes. Transfer chicken to a plate. Add shrimp to stockpot, and cook, stirring, until bright pink, 2 to 3 minutes. Transfer shrimp to another plate.
  • Reduce heat to medium. Add additional oil if necessary. Add onion, carrots, and garlic, and cook, stirring occasionally, until tender, about 4 minutes. Add pork, and cook, breaking up with a spoon, until no longer pink, about 3 minutes. Stir in fish sauce, and cook 1 minute. Add cabbage, and toss to coat. Add noodles, chicken, and stock, and gently stir. Bring to a boil. Reduce heat, cover, and simmer, stirring occasionally, until noodles are tender and most of the stock has been absorbed, about 10 minutes. Remove from heat, and let stand, partially covered, 5 minutes. Add shrimp and lemon juice, gently stirring to avoid breaking noodles.
  • Transfer to a platter. Sprinkle with scallion. Arrange hard-boiled eggs around noodles, and serve warm or at room temperature with lemon wedges.

This is my revised version of another pork fried rice recipe. I often substitute chicken for pork, and it doesn't change anything. I have used both basmati rice and long-grain rice which gives the dish only a slight flavor difference. I have also added celery in the past with good outcomes. Enjoy.

1 (6 ounce) boneless pork loin chop, cut into small pieces
¼ cup chopped carrot
¼ cup chopped broccoli
1 green onion, chopped
1 egg, beaten

⅛ teaspoon garlic powder
⅛ teaspoon ground ginger

Steps:

  • Melt butter in a large non-stick skillet over medium heat. Cook and stir pork, carrot, broccoli, peas, and green onion in melted butter until pork is cooked through, 7 to 10 minutes. Remove pork mixture to a bowl and return skillet to medium heat.
  • Scramble egg in the skillet until completely set. Return the pork mixture to the skillet. Stir rice, peas, soy sauce, garlic powder, and ground ginger into the pork mixture; cook and stir until heated through, 7 to 10 minutes.

I combined a few recipes together to come up with fried rice that really hits the spot. This recipe is great for using up leftover meat, and I love the bit of flavor from the sesame oil and oyster sauce. Adjusting the recipe for fewer or more people is easy. I often serve this with Recipe #292268.

2 cups instant brown rice, uncooked
1 3/4 cups water
1 beef bouillon cube
1 chicken bouillon cube
2 tablespoons soy sauce
2 tablespoons oyster sauce
1/2 teaspoon sesame oil
2 tablespoons canola oil or 2 tablespoons peanut oil
1 cup chicken or 1 cup shrimp, cooked and diced
1/2 cup baby carrots, thinly sliced
1/2 cup frozen sweet peas
4 green onions, sliced
3 eggs, lightly beaten

Steps:

  • Bring water and bullion cubes to a boil.
  • Add rice and return to a boil, reduce heat, cover, and simmer 5 minutes.
  • Remove rice from heat, let stand 3 minutes. (The rice should be slightly undercooked so that it won't be sticky to work with).
  • In a small bowl, combine soy sauce, oyster sauce and sesame oil.
  • Heat oil in a wok or frying pan over high heat.
  • Add rice and meat to pan and stir-fry for about 2-3 minutes.
  • Pour soy sauce mixture over rice and cook about 2 minutes.
  • Add carrots, peas, green onions and lightly beaten eggs to pan.
  • Cook until eggs are done and carrots are beginning to soften, about 4-5 minutes.

Steps:

  • Combine chicken, soy sauce, brown sugar, salt, Shaoxing rice wine, and 1 teaspoon cornstarch in a bowl. Mix and set aside to marinate for 15 minutes.
  • Place shrimp in a separate bowl and season with salt, black pepper, and 1 teaspoon sesame oil. Stir in remaining 1 teaspoon cornstarch and set aside for 15 minutes.
  • Remove 1/4 of the pineapple lengthways, leaving the green leaves intact for presentation, if you like; scoop out the pineapple flesh using a spoon. Chop pineapple flesh into small pieces and set aside. Place hollow pineapple on a baking tray.
  • Preheat the oven to 350 degrees F (180 degrees C).
  • Heat remaining 1 teaspoon sesame oil in a wok over high heat. Add garlic, carrots, and bell peppers and cook for 3 to 4 minutes. Stir in chicken and cook until browned, 4 to 5 minutes. Add prawns and cook for 1 to 2 minutes; add cooked rice and pineapple, mixing well to combine. Stir in beaten egg until cooked through.
  • Spoon fried rice into prepared pineapple shell; bake in the preheated oven until piping hot, about 10 minutes. Bring pineapple to the table and let everyone help themselves!

This is a fried rice that I have been making for a long, long time. You can add whatever you want to this basic recipe. We like it as is, but you may add chicken, shrimp, pork, or beef. Also, you may add scallions instead of onions, two eggs instead of one, grated carrots or zucchini or more mushrooms. You may add canned bean sprouts or sliced green pepper if you want. It is so versatile. If you add a lot of extras, you may need more soy sauce and brown sauce. This is the basic recipe.

  • Rice ... I use my wok to prepare this, but if you don't have one, you need to use a large deep non-stick saute pan. Add a tablespoon of the peanut oil to the pan on HIGH heat. Peanut oil really does make a difference DO NOT use olive oil. Vegetable oil would be my next choice. Add the rice and celery and stir until well coated - cook until you can actually hear the rice 'crackling' a bit. This means the rice is getting a crisp coating which is what you want ... it is FRIED rice by the way. Continue to stir as it cooks. About 3-4 minutes.
