Lebanese-inspired Chicken Kabobs are seasoned with za'atar and served with a cool Laban Cucumber Yogurt Sauce.

1 1/2 lbskinless boneless chicken breast or thighs, cut into 1 inch cubes
2 Tbspfresh squeezed lemon juice
1 Tbspextra virgin olive oil
1 tspdried za'atar or oregano
1clove crushed garlic
1 1/4 tsp kosher salt
pinchfresh ground black pepper, to taste
4lemon wedges for serving
3/4 c Stonyfield Organic Plain Lowfat Yogurt
3/4 cfinely chopped cucumber, peeled and seeded
1 Tbspfresh lemon juice
1/2 Tbspfresh dill, chopped
1/2 Tbspfresh mint, chopped
1/2 tspkosher salt
pinch black pepper, to taste

Steps:

This is a great, healthy dinner, lunch or appetizer that fills you up, but doesn't leave you feeling guilty. I love the combination of the chicken with peppers and onion. You can also use your broiler for this recipe.

1 cup low-fat peach yogurt
1 tablespoon low sodium soy sauce
1 lime, juice of
2 garlic cloves, chopped
1 teaspoon ground ginger
1 tablespoon fresh parsley, finely chopped
2 boneless chicken breasts, cut in 1/2-inch chunks
1 red onion, cut in large chunks
2 bell peppers, cut in large chunks (red, yellow or green)
3 tablespoons olive oil
salt & pepper
4 bamboo skewers (soaked in water a few hours)

Steps:

  • (4 hours preparation includes the time to marinate the chicken.).
  • -Combine yogurt, soy sauce, lime juice, garlic, ginger and fresh parsley. Add chicken chunks & refrigerate in a sealed container a few hours.
  • -Preheat grill. Peel onions & cut into thick slices, also chunk peppers.
  • -Alternate chicken, onion and peppers onto bamboo skewers. Remove excess marinade.
  • -Brush w/olive oil & season w/salt & pepper. Grill approximately 10 minutes; turn once & cook until brown & cooked through.
  • -Serve over a bed of hot, cooked rice or fresh salad greens. You can even have as an appetizer with your favorite dipping sauces (bbq, honey-mustard, teriyaki, etc).

Always loved the taste of Greek Yogurt sauce that accompanies Chicken Souvlaki and Gyros. Created this recipe so that I could enjoy it at home.

16 ounces plain yogurt (if skim or low-fat yogurt is used, strain in coffee filter overnight before using, to remove excess)
1 cucumber, peeled and seeded, grated
4 teaspoons olive oil
3 garlic cloves, minced (pressed through a garlic press)
1 teaspoon white vinegar
salt and pepper
6 boneless chicken cutlets
2 (2/3 ounce) packets Good Seasons salad dressing mix, prepared according to packet instructions
3 zucchini, sliced into 2 inch rounds
2 large onions, quartered
2 green peppers, trimmed an cut into 2 inch squares
potato, small, whole, 2 cans
skewer
pita bread (optional)
olive oil (optional)

Steps:

  • For yogurt sauce: Mix all ingredients and refrigerate overnight.
  • For chicken and veggies: Cut chicken breasts into 2" pieces.
  • Marinate in one of the prepared Good Seasons dressing for at least 1 hour. (The other one will be used for basting)
  • Remove chicken from marinade--discard marinade.
  • Alternately thread chicken, zucchini, onions, and green peppers on skewer (can cook veggies separately from chicken if desired) On separate skewers thread potatoes.
  • Preheat grill until hot.
  • Baste potatoes with dressing and place on grill, turning and basting occasionally--cook until browned.
  • Grill chicken until cooked, basting occasionally.
  • Veggies are done when they're tender and darkened around the edges.
  • Brush both sides of pita with olive oil and grill for 3 minutes each side.
  • Serve chicken, veggies, and potatoes with yogurt sauce and pitas.

16 bamboo skewers
1 lb boneless skinless chicken breast
1 shallot, peeled and finely chopped
2 garlic cloves, minced
1 tablespoon ginger, fresh grated
1 jalapeno, seeded and chopped
3 inches piece lemongrass, sliced
1 tablespoon canola oil
2 tablespoons cilantro, chopped
1 cup light coconut milk
1 tablespoon lime juice
1 tablespoon soy sauce
1 tablespoon turmeric
1/2 cup nonfat plain yogurt
1/2 cucumber, peeled, seeded and diced
2 tablespoons red onions, chopped
1 tablespoon cilantro, chopped
salt and pepper

Steps:

  • Soak bamboo skewars for atleast 30 minutes or overnight.
  • Heat oil in small saucepan. Combine shallots, garlic, ginger, lemon grass and jalepeno and saute for 5 minutes on medium low heat. Put remaining marinade ingredients in a seperate bowl and add cooked mixture. Let cool. Cut chicken breast into 16 slices (appoximately 1 oz each). Pour over chicken and refrigerate atleast 1 hour.
  • Meanwhile mix yogurt sauce ingredients, cover and refrigerate.
  • Preheat grill. Skewer each piece of chicken with one skewer. Place chicken on grill and cook 2 minutes on each side. Serve with yogurt sauce.
