Steps:
- In a small bowl, mix together the cheeses and basil and season with salt and pepper, to taste.
- Gently pull the dates apart and stuff with about 1/2 teaspoon of the cheese mixture. Close the dates around the filling. Wrap a piece of prosciutto around each date and secure with a toothpick.
- Arrange the stuffed dates on a platter and serve.

- Spread the butter on one side of each bread slice. Heat a large skillet over medium heat. Put 2 bread slices in the skillet, buttered-side down. Layer 2 slices of prosciutto, 1 slice of cheese, one-quarter each of the dates and basil, and another slice of cheese on each piece of bread. Close each with another piece of bread, buttered-side up.
- Cook, pressing the sandwiches occasionally with a spatula, until the cheese melts and the bread is golden, 3 to 4 minutes per side. Repeat to make 2 more sandwiches.

Steps:
- Soak toothpicks in water while preparing the dates. Use a sharp paring knife to slit each date lengthwise, and pop out the pit. Snip basil leaves from stems - use sharp scissors to avoid bruising the leaves. For larger leaves, slice in half lengthwise.
- Cut prosciutto into strips about 1 inch wide by 4 inches long. For packaged prosciutto this generally means cutting each strip into quarters.
- Preheat broiler.
- With a small spoon, butter knife, or offset spatula, stuff about 1 teaspoons goat cheese into each date.
- Wrap a basil leaf around each date.
- Wrap prosciutto over the basil, securing with a toothpick.
- Place in a single layer on a cookie sheet.
- Broil for about 2-3 minutes, use tongs to turn dates over, and broil another 2-3 minutes until prosciutto is golden and sizzling.
- Transfer to serving dishes.
- Garnish with fresh basil.
- Delicious hot from the over or at room temperature.

- Melt 1/4 -1/3 of butter in large skillet over medium heat.
- Place 1-2 ounces prosciutto on 1 slice of bread. Cover prosciutto with single layer of basil leaves. Scoop roughly 2/3 -1 cup of prepared macaroni and cheese on top of basil and top with another slice of bread to form a sandwich.

- Preheat oven to 400.
- Lightly butter 1 side of each bread slice.
- Top unbuttered side of 2 pieces with 2 proscuitto slices, then 4 basil leaves, then cheese slices.
- Sprinkle with salt and crushed red pepper. Top with remaining bread, buttered side up.
- Heat olive oil in an oven proof skillet over medium high. Cook until golden brown on the bottom, about 4 minutes.
