CAJUN MEATBALL STEW

CAJUN MEATBALL STEW image

This is a very popular recipe in the Cajun part of South Louisiana, which is frequently referred to as "Acadiana." If there's one thing we folks in Acadiana love, it's our rice and gravy! I have often said that when I die, if wherever I end up doesn't have rice and gravy, I'll know I didn't make it to Heaven. Cajun Meatball Stew starts off with your typical dark brown roux. Some people prefer to buy it in stores, ready made. I've never understood why, because it's not that difficult to make from scratch. The main thing you must do is stir, constantly, over a medium high heat, never leaving the stove until it's almost the color of chocolate syrup. If you burn it, throw it out and start over, because it will give your gravy a very bitter taste. When I have the time, I prefer to make this the day ahead, separate the meatballs from the gravy, and refrigerate. Not only does this cause the fat from the meat to rise to the top and harden for easy removal, but, enhances the flavor.

Time 1h45m

Yield 6 serving(s)

Number Of Ingredients 15

3/4 cup vegetable oil
1 cup all-purpose flour
3 cups onions, finely chopped
1 1/2 cups bell peppers, finely chopped
1 cup celery, finely chopped
water or beef broth
4 garlic cloves, minced
2 lbs ground chuck
2 large eggs
1/4 cup milk
1 tablespoon Worcestershire sauce
1/2 cup fresh parsley, chopped
1/3 cup plain breadcrumbs
salt and cayenne pepper
1/4 cup green onion, chopped

Steps:

  • In heavy dutch oven (preferably cast iron or cast aluminum), heat oil over medium high heat. Add flour. Stir, constantly, until flour is dark brown, being very careful not to burn. Flour should be almost the color of chocolate syrup. This is your roux, which is the base of your gravy.
  • To the flour mixture, add 2 cups of the chopped onion, 1 cup of the bell pepper and 1/2 cup of the celery. Reduce heat to medium, cooking until onions are transparent. Add enough water or beef broth to fill pot 2/3 of the way. Bring to a boil, then reduce heat to a simmer.
  • While this is cooking, make meatballs by combining ground chuck, remaining onions, bell pepper, and celery, 2 cloves of the minced garlic, eggs, milk, worcestershire sauce, 1/4 cup of the parsley, bread crumbs, and salt and cayenne pepper. Mix well.
  • Form into whatever size meatballs you prefer. I like to make mine about 1 1/2 - 2" round. One trick to making tender meatballs is not to pack the meat too firmly. Just form them enough for them to hold together. Also, do not pre-cook the meatballs after rolling.
  • Add meatballs to the gravy. DO NOT STIR FOR AT LEAST 20 MINUTES! Stirring them will break them apart. Cook over medium low heat until gravy is desired consistency. Adjust seasoning with salt and cayenne pepper. Skim as much of the fat as you can off of the top.
  • Stir in remaining garlic, parsley, and chopped green onions. Cook for 5 minutes longer.
  • Serve over hot cooked rice. I usually serve this with a side of early green peas or corn, and a fruit salad of some kind, such as pineapple, topped with grated cheddar cheese.
  • As for the prep and cooking times, I just took a wild guess. Hehe!

CHEDDAR MEATBALLS

Cheddar Meatballs image

I've been tweaking my old meatball recipe over the years, and finally came up with a version everyone loves. And as we all know---everything's better with CHEESE! This also makes a great burger, just omit the parsley and oregano and try substituting the cheddar for pepper jack cheese.

Provided by saammw

Categories     One Dish Meal

Time 1h25m

Yield 36 meatballs, 6-7 serving(s)

Number Of Ingredients 11

1 1/2 lbs ground beef (80/20)
1 large egg, beaten
1 1/2 cups shredded sharp cheddar cheese
10 saltine crackers, crushed
3 -4 garlic cloves, minced
1/2 cup onion, minced
2 teaspoons dried parsley
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon oregano
1 -2 tablespoon olive oil

Steps:

  • Preheat oven to 350 degrees.
  • Saute onion in olive oil on low-med heat until translucent, about 5 minutes Add minced garlic and saute one minute more. Set aside.
  • In large bowl, beat egg. Add the cracker crumbs, seasonings, onion and garlic and mix well with fork. Crumble the ground beef into the bowl and gently mix with hands, being careful not to "overwork" it, as this can cause tough meatballs.

Categories     main-dish

Time 6h10m

Yield 6 slices

Number Of Ingredients 21

4 cups plain yogurt
3 cloves garlic, finely minced
3 tablespoons olive oil
1 tablespoon lemon juice, or to taste
1/4 cup chopped fresh mint
Salt and freshly ground pepper
1 pound red onions, thinly sliced
1 tablespoon salt
1/2 cup chopped fresh flat leaf parsley
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
2 pounds ground beef
1 1/2 cups grated onion
2 minced garlic cloves
2 eggs, lightly beaten
1 tablespoon chopped fresh thyme
1 teaspoon freshly ground black pepper
1/2 teaspoon salt, or to taste
Olive oil for brushing
6 pita breads, warmed
Sliced tomatoes

Steps:

  • Make yogurt sauce:
  • Line a large sieve with cheesecloth and place it over a bowl. Spoon the yogurt into the sieve and refrigerate for 4 to 6 hours to drain off the excess water. You should end up with 1 1/2 to 2 cups drained yogurt. Place the yogurt in a bowl and stir in the garlic, olive oil, and lemon juice. Fold in the mint and season to taste with salt and pepper. Cover and refrigerate until needed.
  • Make the onion salad:
  • Place the onion slices in a colander and sprinkle with salt. Toss and let stand for 15 minutes. Rinse well and pat dry. In a bowl, combine the onions, parsley, coriander, and turmeric. Toss well and set aside.
  • Preheat the grill or broiler.
  • In a bowl, combine the beef, onions, garlic, eggs, thyme, pepper, and 1/2 teaspoon salt. Mix until mixture holds together well. Form into twelve 3-inch ovals, about 1 1/2-inches wide and thread them onto metal skewers.
  • Brush the meatballs with olive oil and sprinkle with salt. Place the skewers on an oiled grill rack or broiler pan and grill or broil, turning to brown on all sides, until cooked through, about 8 minutes.
  • Remove the skewers from the grill or broiler and slip the meatballs off the skewers. Cut the pitas into halves and place a meatball into each half. Serve with the yogurt sauce, onion salad, and tomato slices on the side

Spicy meatballs with a flavorful remoulade dipping sauce. If you can't get andouille sausage, you can use keilbasa and just add some extra Cajun spice or cayenne to the mix. From "The Meatball Cookbook Bible"....

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 20

1/2 lb andouille sausage
2 tablespoons olive oil
1 large onion
2 garlic cloves
1 egg
2 tablespoons milk
1 tablespoon Worcestershire sauce
1/2 cup breadcrumbs
1/2 cup grated sharp cheddar cheese
3/4 lb ground beef
vegetable cooking spray
salt and pepper
1 1/3 cups mayonnaise
6 scallions
3 garlic cloves
1/4 cup lemon juice (fresh is best)
3 tablespoons mustard (grainy is best)
3 tablespoons chopped fresh parsley
3 tablespoons horseradish sauce
2 tablespoons chili sauce

Steps:

  • Chop the onion and scallions. Mince the garlic. Remove casings from sausages (if necessary). Cut sausage into chunks and chop finely in a food processor.
  • In a small mixing bowl, prepare the remoulade sauce by mixing the mayonnaise, chopped scallions, 3 cloves chopped garlic, lemon juice, mustard, parsley, horseradish sauce, and chili sauce. Whisk well and season with salt and pepper. Refrigerate until ready to use.
  • Heat the oil in a small skillet and add the onions and 2 cloves chopped garlic. Sautee for about 3 minutes or until onion is translucent.
  • In a large bowl, whisk the egg, milk and Worcestershire sauce. Add the breadcrumbs and cheese and mix well.
  • Add the onion mixture, chopped sausage, and ground beef to the bowl, season with salt and pepper, and mix well.
  • Divide mixture into 8-12 sausage-shaped portions. Insert a metal skewer into each portion so that the tip of the skewer is almost at the top of the meat. Bamboo skewers may be used but should be soaked well in cold water first.

Categories     Meat

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 16

2 lbs ground veal
1 lb ground lamb
3 large eggs, lightly beaten
2 slices bacon, minced
1/4 cup shallot, minced
1/4 cup fine fresh breadcrumb
1/4 cup fresh ricotta
1/4 cup montasio cheese (freshly grated) or 1/4 cup parmigiano-reggiano cheese
kosher salt
3 cups chicken stock or 3 cups low sodium chicken broth
3 cups water
1 1/2 lbs thin scallions, trimmed
vegetable oil, for drizzling
1 tablespoon olive oil
1 cup parmigiano-reggiano cheese, shaved
1 preserved lemon, halved (see Note)

Steps:

  • Light a grill. In a large bowl, mix the ground veal and lamb with the eggs, bacon, shallots, fresh bread crumbs, ricotta, montasio and 2 T of salt. Shape the mixture into 40 golf ball-size meatballs.
  • In a wide saucepan, bring the chicken stock and water to a boil. Add half of the meatballs and simmer over medium-low heat until just cooked through (about 10 minutes). Using a slotted spoon, transfer the cooked meatballs to a rimmed baking sheet. Repeat the process with the remaining meatballs.
  • On another large rimmed baking sheet, drizzle scallions with vegetable oil and season with salt. Working in 3 batches, grill scallions over high heat for about 2 minutes, turning once, until charred on both sides; return the grilled scallions to the baking sheet. Gently toss the grilled scallions with the olive oil and Parmigiano-Reggiano shavings. Grill the preserved lemon halves over high heat, cut side down, for about 4 minutes, or until charred. Squeeze the grilled lemon halves over the scallions and toss again. Arrange the scallions on a platter.
  • Lightly drizzle meatballs with vegetable oil and roll to coat. Grill the meatballs over high heat, rolling to turn them, until lightly charred all over and heated through, (about 3 minutes total). Using tongs, arrange the meatballs on top of the scallions and serve.
