Grilled potatoes in foil are a great side dish to any grilled meat. Easy to fix and cooks while your meat does.

Ingredients

aluminum foil
1 ½ tablespoons butter
6 medium unpeeled potatoes, washed and cut into thick slices
1 onion, sliced
1 green bell pepper, cut into long strips
2 teaspoons garlic powder
salt and ground black pepper to taste

Steps:

Preheat an outdoor grill for high heat; close cover. Lay out three 18-inch long pieces of aluminum foil on a work surface, dull side facing up.
Smear 1/2 tablespoon butter in the middle of the first piece of foil. Add 1/3 of the potato slices, onion, and bell pepper. Sprinkle with 1/3 of the garlic powder; season with salt and pepper. Fold up the edges of the foil over the vegetables to create an almost leak-proof packet, making sure to seal the edges. Repeat with last 2 pieces of foil and the remaining ingredients to make 2 more packets.
Reduce the heat of the grill to medium. Place foil packets on the grate; cook until potatoes are tender, 20 to 30 minutes.

Ingredients

1 potato
2 slices onions
2 teaspoons butter
aluminum foil (I prefer the heavy duty kind)

Steps:

Make one per person, leave out onion for kiddies who are picky eaters.
Russet potatoes work best.
get a piece of foil about 12 inches square.
Cut potato into 3 equal parts.
place a slice of onion and a slice of butter between the slices of potato.
roll in foil and seal the ends.
place on grill or charcoal for about 45 minutes or until soft, turning once.
serve with butter and sour cream.

Place foil on the counter and spray with a non-stick cooking spray. I used 1 piece of foil per each potato.
Place the potatoes and onion slices on the foil. Season each packet with approximately 1/4 tsp of the Salt and Pepper and top with 1 Tablespoon of the butter.

Chop the potatoes and onions into bite-sized pieces. Place them in a medium bowl and mix them with the olive oil, chopped fresh herbs, garlic powder, kosher salt, and several grinds of black pepper.
Place the potatoes and onions on a large sheet of foil and fold up sides. Place the butter, cut into thin pats, on top. Place second piece of foil on top and seal the seams. Poke several holes in the packet with fork (to allow stem to escape).
Place directly on the grill grates and cook for 25 to 30 minutes until tender (open and test with a fork to assess doneness; exact timing depends on the size of pieces and exact grill temperature). Taste and add additional salt as necessary.
