1 cup gold tequila
1 1/2 cups freshly squeezed lime juice (8 limes)
1 cup freshly squeezed orange juice (4 oranges)
1/2 cup freshly squeezed lemon juice (2 lemons)
2 tablespoons chili powder
2 tablespoons seeded and minced jalapeno pepper (2 peppers)
2 tablespoons minced garlic (6 cloves)
4 teaspoons kosher salt
2 teaspoons freshly ground black pepper
3 whole (12 split) boneless chicken breasts, skin on
Olive oil, for brushing the grill

Steps:

  • Combine the tequila, lime juice, orange juice, lemon juice, chili powder, jalapeño pepper, garlic, salt, and pepper in a large bowl. Add the chicken breasts. Refrigerate overnight.
  • Heat a grill with coals and brush the rack with oil to prevent the chicken from sticking. Remove the chicken breasts from the marinade, sprinkle well with salt and pepper, and grill them skin-side down for about 5 minutes, until nicely browned. Turn the chicken and cook for another 10 minutes, until just cooked through. Remove from the grill to a plate. Cover tightly with aluminum foil and allow to rest for 5 minutes. Serve hot or at room temperature.

3 skinless, boneless chicken breasts
½ cup tequila
1 lime, zested and juiced
¼ teaspoon garlic powder, divided
¼ teaspoon chili powder, divided
3 ounces shredded Mexican-style cheese blend

Steps:

  • Arrange chicken breasts in a baking dish; add tequila and juice of 1/2 a lime. Sprinkle 1/2 of the lime zest, 1/2 of the garlic powder, and 1/2 of the chili powder over the chicken. Cover dish with plastic wrap and marinate in the refrigerator for 30 minutes.
  • Turn chicken breasts; sprinkle remaining lime juice, lime zest, garlic powder, and chili powder on top. Cover again and marinate in the refrigerator for another 30 minutes.
  • Preheat the oven to 425 degrees F (220 degrees C). Uncover baking dish and discard tequila-lime marinade.
  • Bake chicken in the preheated oven for 25 minutes. Sprinkle Mexican-style cheese over the chicken and continue to bake until the chicken is no longer pink in the center and the juices run clear, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/4 cup fresh lime juice
1/4 cup olive oil
1 tablespoon garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper, freshly ground
4 chicken breast halves, rinsed and patted dry (2 lbs. total, with or without skin)
lime wedge

Steps:

  • Whisk together lime juice, oil, garlic, salt, and pepper in a large bowl.
  • Add chicken, turning to coat. Marinate chicken, covered and refrigerated, turning once or twice, for at least 2 hours and up to 8 hours.
  • Put a rack in the upper third of the oven and preheat to 400 degrees.
  • Remove chicken from marinade (discard marinade) and arrange skin side up, without crowding, in a shallow baking dish.
  • Season with salt and pepper. Roast until just cooked through, 25 to 30 minutes.
  • If chicken has a skin, turn oven to broil. Broil chicken about 2 inches from the heat until skin is crisp, about 2 minutes.
  • Serve with lime wedges.

3 tablespoons olive oil
3 tablespoons tequila
1 tablespoon lime zest, from about 2 limes
4 cloves garlic, minced
1¼ teaspoons ground ancho chili pepper
½ teaspoon ground coriander
¼ teaspoon dried oregano
1¼ teaspoons salt
½ teaspoon freshly ground black pepper
2 teaspoons honey
4 boneless skinless chicken breasts (or about 2 pounds), pounded to an even ½-inch thickness
1 lime, sliced into wedges, for serving (optional)

Steps:

  • Combine all of the ingredients except for the chicken breasts in a 1-gallon freezer bag. Close the bag and squish the marinade around to mix. Add the chicken breasts and massage the marinade into the meat until evenly coated. Seal the bag and place it in a bowl in the refrigerator (the bowl protects against leakage); marinate for at least 6 hours or overnight.
  • Clean the grill and preheat to high. Lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated. (Alternatively, you can spray the grates with a non-flammable cooking spray.) Place the chicken breasts on the grill and spoon any remaining marinade from the bag over top. Grill, covered, for 2 to 3 minutes per side (turning only once). Serve immediately with lime wedges.

Steps:

  • Pour tequila into the plastic containers. Squeeze juice from 10 or more lemons into the containers. Add some olive oil, and salt and pepper. Place the chicken breasts in the marinade and let marinate overnight in the refrigerator. The next day, preheat grill to high and place chicken breasts on grill. Prepare bowl of olive oil mixed with tarragon and rosemary, to taste, and brush onto chicken while grilling. Cook each side for about 10 to 15 minutes each.

¼ cup mayonnaise
¼ cup sour cream

1 cup fresh cilantro, chopped
3/4 cup tequila
1/2 cup fresh lime juice
2 tablespoons firmly packed light brown sugar
1 fresh jalapeno chile, seeded, and minced
1 1/2 tablespoons minced garlic
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
3 teaspoons grated lime zest

Steps:

  • With a sharp, heavy knife, cut each chicken breast in half crosswise for a total of 6 pieces. In a large glass or plastic bowl, combine cilantro, tequila, lime juice, brown sugar, chile, garlic, salt, and pepper. Add chicken and mix to coat with marinade. Cover and let stand at room temperature for 30 minutes. (Do not marinate longer, because the acid in the marinade will begin to "cook" the chicken.).
  • Prepare a gas or charcoal grill for direct, medium-high heat (you can hold your hand 1 to 2 inches above the cooking grate only 2 to 3 seconds; visit our Grilling Essential section for complete instructions).

1/4 cup tequila
2 tablespoon olive oil
1/2 teaspoon salt
4 cloves garlic
1/2 jalapeno
1/4 cup fresh cilantro
3 chicken breasts (boneless, skinless, cut in half lengthwise)
1 cup long grain rice (I used basmati)
1 tablespoon olive oil
3 cloves garlic (minced)
1 onion (chopped)
1/2 teaspoon cumin
salt and pepper to taste
1/4 teaspoon cayenne pepper
1/4 teaspoon turmeric (for nice yellow color)
2 cups low sodium chicken broth
juice from half a lime
fresh cilantro (sliced tomatoes, sliced jalapenos and lime slices for serving)

Steps:

  • Heat the oil in a dutch oven and add onion and garlic. Cook for 3 to 4 minutes until onion is tender and translucent. Reduce heat to low and add the rice. Cook for about a minute stirring constantly making sure the rice doesn't burn.
  • Add cumin, salt, pepper, cayenne and turmeric, and then add the chicken broth and stir everything together. Bring the mixture to a boil and then reduce the heat to low. Cover, and simmer until the rice is done. Stir in lime juice and cilantro.
  • Slice the lime and squeeze the juice into a blender. Add tequila, olive oil, salt, garlic, jalapeno, and cilantro. Blend the mixture until totally combined.
  • Add the chicken to a large plastic bag and pour in the lime-tequila mixture. Seal the bag and marinate in the fridge for several hours or overnight.
  • Remove the chicken from the bag and grill it over medium-high heat, flip the chicken and continue grilling until chicken is cooked through, about 5 min per side. Slice the chicken and server over the cilantro and lime rice.
  • Top with diced tomatoes, jalapenos, cilantro and lime slices.

Our Tequila chicken thighs are rubbed in ancho chilies, cumin, & a dash of sugar. These BBQ chicken thighs will give your taste buds a kick the heat is on.

Steps:

  • When ready to cook, set Traeger temperature to 375°F and preheat, lid closed for 15 minutes.
  • In a large bowl, whisk together the cilantro, ancho chile powder, sugar, granulated garlic, cumin, black pepper, chili powder, salt until well combined. Add the chicken to the bowl and toss to coat in the dry rub, then drizzle with the olive oil and toss again until evenly coated.
  • Arrange the chicken thighs directly on the grill grates, meat-side down. Insert the probe horizontally into the center of one of the thighs, avoiding the bone. Close the lid and and cook for 15 minutes.

1 small orange, juiced
3/4 cup tequila
2 chipotle chiles in adobo
1/2 cup onion, coarsely chopped
1/2 cup olive oil

1 large garlic clove, chopped
2 teaspoons kosher salt

  • In a bowl, place 2 tablespoons canola oil, all marinade ingredients, and chicken, and mix thoroughly.
  • In a large saute pan, heat 3 tablespoons canola oil over medium-high to high heat. Place the coated chicken breasts in the hot pan and sear on one side until golden brown for about 1 minute. Turn and sear the other side for a few seconds more, and sizzle with the tequila.
  • Transfer seared chicken breasts to a lightly greased sheet pan and bake in oven for about 10 minutes until fully cooked.
  • Remove chicken from oven and top with the shredded cheese. Place back in the oven for just a minute to melt the cheese and remove. Serve and enjoy!
