Garlic and Thyme Green Beans image

Here's a quick & easy way to fix those ol' green beans! The recipe comes from the Sunset Best Recipes 2010 cookbook. Great for those of us who love their garlic!

1 tablespoon olive oil
1 1/2 lbs green beans, trimmed
2 tablespoons garlic, minced
1/2 teaspoon kosher salt
2 teaspoons fresh thyme leaves, chopped
1 tablespoon fresh lemon juice
1/4 teaspoon fresh ground black pepper

Steps:

  • Heat oil in a large frying pan over medium heat, then add the beans & cook, stirring occasionally, for about 8 minutes, or until they start to soften & brown.
  • Add garlic & cook another 2 minutes until fragrant, then remove from heat & add remaining ingredients, stirring well.
  • Serve & enjoy!

Coarse salt and fresh ground pepper
1 1/4 pounds green beans, ends trimmed
3 tablespoons fresh lemon juice (from about 1 lemon)
2 tablespoons butter
1 teaspoon fresh thyme leaves, plus more for garnish (optional)

Steps:

  • In a large skillet with a tight-fitting lid, bring 1/2 inch water to a boil; salt generously.
  • Add the green beans; reduce to a simmer, and cover the skillet. Steam the beans, tossing occasionally, until crisptender, 6 to 10 minutes.
  • Pull the lid back slightly, and tilt the skillet to drain the water from the green beans; add the lemon juice, butter, and thyme. Season with salt and pepper, and toss to melt butter. Serve the green beans garnished with additional thyme, if desired.

2 pounds green beans, trimmed
2 tablespoons olive oil
2 tablespoons butter
1/4 cup thinly sliced shallots, 2 medium
12 ounces fresh shiitake mushrooms, stemmed and halved
2 teaspoons finely shredded lemon peel
3 tablespoons lemon juice
2 tablespoons fresh thyme leaves
Coarse sea salt or kosher salt
Freshly ground black pepper
1/2 cup slivered almonds, optional

Steps:

  • Bring a large pot of salted water to boiling. Add green beans. Return to boiling; reduce heat. Cook, covered, for 8 to 10 minutes or until crisp-tender. Drain green beans in a colander. Run cold water over beans until chilled to stop the cooking and keep the beans bright green. In an extra-large skillet heat oil and butter over medium heat. Add shallots; cook just until tender, stirring frequently. Add mushrooms; cook for 6 to 8 minutes or until tender, stirring frequently. Add green beans. Cook for 5 to 8 minutes or until heated through, tossing occasionally. Add lemon peel, lemon juice, and thyme; toss to coat. Season to taste with salt and pepper. If desired, garnish with almonds.

1 (4 ounce) package sliced pancetta, chopped
1/2 cup thinly sliced shallot
2 tablespoons balsamic vinegar
1 -1 1/2 lb fresh green beans, trimmed
1/4 teaspoon coarse salt
1/4 teaspoon ground black pepper

Steps:

  • Cook pancetta in a large skillet over medium-high heat, stirring frequently until crisp, about 5 minutes. Remove pancetta with a slotted spoon and drain on paper towels; reserve drippings in pan.
  • Add shallots to the skillet drippings; cook over medium-high heat until golden brown, about 6 minutes. Add balsamic vinegar and cook for 1 minute. Remove from heat.
  • Place green beans in large pot of lightly salted, boiling water. Cook until just crisp-tender, 5-6 minutes. Drain immediately and add green beans to shallot mixture; season with salt and pepper. Toss until coated, place in dish, sprinkle pancetta over top, and serve.

Personally, I recommend revising the original 2 tablespoons butter to 1 tablespoon butter and 1 tablespoon olive oil. Note: the purple shallots generally available are "large" shallots, and 2 small shallots equal 1 large shallot, but the large shallot will be stronger. Old French recipes generally refer to small shallots.

1 lb fresh green beans
1 tablespoon unsalted butter
1 tablespoon olive oil
2 small shallots, minced (1 ounce)
1 teaspoon fresh thyme leaves or 1/3 teaspoon dried thyme leaves
salt, to taste
fresh ground black pepper, to taste
1/2 lemon, juice of

Steps:

  • Wash beans in cold water. Trim ends of beans, either using a sharp knife or snap them off.
  • Heat a large skillet over medium heat and add butter and olive oil. Add shallots and saute for 30 seconds.
  • Add beans, sprinkle with thyme, salt, and pepper, and cover. Cook for 3-4 minutes, shaking pan once in a while to prevent them from burning or sticking. Check to see if tender: if not, recover and cook until desired doneness. (They should still have snap, but rawness should be cooked out.).
  • Add lemon juice, toss, and serve.
