2 medium eggs
125ml vegetable oil
250ml semi-skimmed milk
250g golden caster sugar
400g self-raising flour (or same quantity plain flour and 3 tsp baking powder)
1 tsp salt
100g chocolate chips or dried fruit such as sultanas or dried cherries (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases. In a large bowl beat 2 medium eggs lightly with a handheld electric mixer for 1 min.
  • Add 125ml vegetable oil and 250ml semi-skimmed milk and beat until just combined then add 250g golden caster sugar and whisk until you have a smooth batter.
  • Sift in 400g self-raising flour and 1 tsp salt (or 400g plain flour and 3 tsp baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough.
  • Stir in 100g chocolate chips or dried fruit if using.
  • Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
  • Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

1 (18 ounce) betty crocker carrot cake mix
3 large eggs (or according to cake mix directions)
1/2 cup vegetable oil (or according to cake mix directions)
1 (8 ounce) can crushed pineapple, juice drained and reserved
1 tablespoon reserved pineapple juice
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°.
  • In large mixing bowl place cake mix, eggs, oil and 1 tablespoon reserved pineapple juice, stir well to combine, add drained crushed pineapple and pecans, stir to blend. Batter will be thick and smooth, if it's too stiff, add a little bit more pineapple juice.
  • Place paper muffin liners in muffin tin, divide batter equally between muffin liners.
  • Bake for 25 - 30 minutes, test with a toothpick for doneness.
  • Cool on wire rack.

225g plain flour
2 tsp baking powder
2 large eggs
50g butter , melted
175ml skimmed milk
100ml clear honey
140g fresh blueberry
85g dried cranberry
140g seedless raisin
140g dried apricot , chopped
1 tsp grated orange zest
1 tsp ground cinnamon

Steps:

  • Preheat the oven to 200C/gas 6/ fan 180C and very lightly butter a 12-hole muffin tin. Sift the flour and baking powder into a bowl. In another bowl, lightly beat the eggs, then stir in the melted butter, milk and honey. Add to the flour with the remaining ingredients. Combine quickly without overworking (it's fine if there are some lumps left - you want it gloopy rather than fluid). Spoon the mixture into the muffin tin. Bake for 20-25 minutes until well risen and pale golden on top.
  • Leave in the tin for a few minutes before turning out. When cool, they'll keep in an airtight tin for two days. (Can be frozen for up to 1 month.)

This is an invention that turned out great. Can be made in a 9-inch square pan or make in a 12 cup muffin pan. These are so good for breakfast, with butter or honey. These are so good and crunchy as if there were nuts inside.Family approved.

18 oz pkg. white cake mix
2/3 c ground tostitos corn chips, measure after ground
2 tsp baking powder
4 large eggs
3/4 c extra virgin olive oil
3 Tbsp lemon juice
2 tsp vanilla
3 oz pkg. strawberry jello, using dry

Steps:

  • 1. Preheat oven to 325^. Spray muffin tins or 9-inch pan with non-stick olive oil.
  • 2. Pulverize the corn chips of your choice in the blender- just until fine not paste. In your large mixer bowl combine cake mix,the ground corn chips,(if you don't have corn chips you could use 3/4 c. corn meal- but it will change the crunch),baking powder, eggs ,lemon juice, and olive oil.
  • 3. Mix well- the dough will be thick. Spoon a heaping Tablespoon of dough into each muffin well or cover bottom of 9-inch pan. Using a teaspoon- measure a teaspoonful of dry strawberry jello(or you favorite flavor) in the center of the dough, do not get on the sides of the muffin pan. Sprinkle jello powder all over first layer of dough if using 9-inch pan- not touching side of pan. Spoon dough carefully over the jello powder- using all the dough equally in each muffin tin; or covering it in the 9-inch pan.
  • 4. Bake in oven for about 25-30 minutes for muffins or 35-40 minutes for 9-inch pan. Test before assigned time with a toothpick s all ovens are different. Butter tops and cool slightly then remove from muffin tin- leave in 9-inch pan and cut into squares.

Steps:

  • Preheat oven to 375 degrees F. Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray; set aside. To make the crumb topping, combine sugars, cinnamon and salt in a medium bowl. Whisk in melted butter. Add flour and stir using a rubber spatula just until moist. Spread out mixture on parchment paper to dry until ready to use. In a large bowl, combine flour, sugar, baking powder, cinnamon, baking soda and salt. In a large glass measuring cup or another bowl, whisk together milk, canola oil and eggs. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Scoop the batter evenly into the muffin tray. Sprinkle with reserved crumb topping, using your fingertips to gently press the crumbs into the batter. Place into oven and bake for 15-17 minutes, or until a tester inserted in the center comes out clean. To make the glaze, combine confectioners' sugar, vanilla and milk. Whisk until smooth. If the glaze is too thin, add more confectioners' sugar as needed. When the muffins are done, cool for 10 minutes and drizzle the glaze on each muffin. Allow glaze to set before serving.

3 cups (375g) all-purpose flour (spoon & leveled)
3 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon (optional)
1/3 cup (5 Tablespoons; 80g) unsalted butter, melted and slightly cooled
1/3 cup (80ml) vegetable oil*
1 cup (200g) granulated sugar
2 large eggs, at room temperature
1/3 cup (80g) sour cream or yogurt, at room temperature*
1 cup (240ml) milk, at room temperature*
1 teaspoon pure vanilla extract
1-2 cups add-ins (see blog post above for suggestions)
optional: coarse sugar for sprinkling

Steps:

  • Preheat oven to 425°F (218°C). Generously grease a jumbo 6-count muffin pan with butter or nonstick spray (nonstick spray recommended) or line with muffin liners. Set aside.
  • Whisk the flour, baking powder, baking soda, salt, and cinnamon (if using) together in a large bowl. Set aside.
  • Whisk the melted butter, oil, sugar, and eggs together until combined. Then whisk in the sour cream, milk, and vanilla extract. Mixture will be pale yellow. Pour wet ingredients into dry ingredients and fold together with a rubber spatula or wooden spoon until completely combined. Use a whisk to rid any large lumps of flour, if needed. Avoid overmixing. The batter will be thick. Fold in the add-in(s).
  • Divide batter between each muffin cup, filling all the way to the top. Sprinkle with coarse sugar (for added crunch, recommended!). Bake at 425°F for 5 minutes, then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C) and continue to bake for 25-30 minutes or until the tops are lightly golden brown and centers are set. Stick a toothpick in the center of a muffin to test for doneness. If it comes out clean, the muffins are done.
  • Allow to cool for 10 minutes in pan before serving.
  • Cover leftover muffins and store at room temperature for 5 days or in the refrigerator for 1 week. Muffins freeze well for up to 3 months. Thaw in the refrigerator or on the counter.

1 teaspoon baking powder

2 apples, peeled, cored and chopped (type doesn't matter)

1 cup toasted whole skin-on almonds
1 box yellow cake mix for two 9-inch rounds

1 cup dried cranberries
1 cup confectioners' sugar
2 1/2 tablespoons hot water

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat the top and inside cups of a 12-cup muffin pan with nonstick cooking spray.
  • Put 1/4 cup almonds in the bowl of a food processor. Process until very fine and the nuts are the texture of cornmeal. Add the cake mix, yogurt, eggs, oil, 1/4 cup water and the remaining 3/4 cup whole almonds. Pulse until no bits of dry cake mix remain and the nuts are coarsely chopped Add 1/4 teaspoon of zest and the orange juice to the batter with the cranberries.   • Divide the batter between muffin cups and bake until the tops are lightly browned and spring back to the touch, 18 to 20 minutes.
  • Cool 10 minutes in the pan then transfer to a cooling rack to cool completely. In a small bowl whisk the powdered sugar, hot water and remaining 1/2 teaspoon zest until glossy and smooth. Adjust the consistency of the glaze with the remaining water, a few drops at a time until just loose enough to drizzle. Spoon over the cooled muffins. Let stand a few minutes for the glaze to harden.

60g caster sugar
2 tbsp vegetable oil
100ml whole milk
50g chocolate chips (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a muffin tin with six muffin cases. Sieve the flour, cocoa and baking powder into a medium bowl. Mix together the egg, sugar, oil and milk together in a jug, then gradually pour into the dry ingredients (add chocolate chips now to make double chocolate muffins, if you like) and mix until combined.
  • Spoon the mixture evenly into the cake cases and bake for 20-25 mins until a skewer inserted into the middle comes out clean. Remove from the oven and leave to cool.
  • Meanwhile, gradually mix ½-1 tbsp water into the icing sugar until you have a loose consistency that's not too runny. Drizzle the icing over the muffins once cool.

150g margarine
250g carrots
200g sugar
200g flour
1.5tsp cinnamon
2tsp baking powder
2 large eggs
125g sultanas
50g nuts

Steps:

  • Preheat the oven to 200C/gas mark 6/fan 180C. Melt the margarine in the microwave.
  • Top and tail, then peel and grate the carrots.
  • Combine the carrots, sugar and margarine in a bowl.
  • Sift in the flour, cinnamon and baking powder.
  • Beat the eggs in a small bowl and then add to the mixture. Also mix in the nuts and sultanas.

1/2-3/4 cup applesauce
2 eggs, lightly beaten
1/4 cup oil (I use melted coconut oil, but any vegetable based oil works)
1 1/2 cups whole wheat flour (or any whole grain flour, I use a spelt, kamut, and whole wheat mix)
1/2 cup sugar (or evaporated cane juice)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
1 cup raisins (optional)
1 cup pecans (optional)

Steps:

  • Preheat oven to 350°F.
  • Put carrots and apple sauce in to food processor, mix until it has the consistency of baby food. Set aside.
  • Sift all dry ingredients together.
  • Stir oil, eggs, and carrot mixture together until well blended.
  • Add wet ingredients to dry ingredients, fold gently until blended.
  • Add raisins and nuts mix gently. (Be careful not to over mix, or the muffins will be rubbery).
  • Pour into well greased muffin tins, bake 20-25 minutes or until toothpick come out clean.
  • Cool completely then top with icing if desired.

1/3 cup 1/3 less fat Cream Cheese (softened)
1/2 cup Granulated Sugar
1/2 teaspoon Vanilla
1 Egg
1 Egg White
1 cup (plus 3 tablespoons All Purpose Flour)
2 1/2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/4 teaspoon Salt
1/4 cup Buttermilk
1 tablespoon Flour for tossing the berries
1 1/2 cup Berries
optional 1/2 cup Nuts or White Chocolate Chips
Plus for the topping:
1 tablespoon Butter (melted)
1 tablespoon Raw Sugar

Steps:

  • Heat your oven to 425 degrees. Fill a muffin tin with 9 muffin liners. Then use an electric mixer to combine the butter and cream cheese. Once well mixed, add the granulated sugar and mix on a medium high speed until the mixture is fluffy. This will take about 2 minutes.
  • Add the egg, egg white, and vanilla and beat until it is just combined with the butter, cream cheese, and sugar mixture.
  • In a separate bowl, combine 1 cup and 3 tablespoons flour, with the baking powder, baking soda, and salt.
  • Remove the bowl of the electric mixer, you want to fold everything together by hand. Fold the flour mixture and buttermilk into the ingredients in the bowl from the mixer. Stir in a third of the flour mixture, then half the buttermilk, another third of the flour mixture, the remaining buttermilk, and then the remaining flour mixture. Fold together until it is just mixed - don't over mix. Let the batter sit for 15 minutes.
  • While the batter is sitting, pour the berries and other mix ins into a bowl. Dust with a tablespoon of flour, and gently mix coating the berries in flour. This prevents the berries from sinking to the bottom.
  • After the batter has rested, fold in the berries and other mix ins.
  • Pour the batter into 9 muffin liners, filling them all the way to the top. Then top with the melted butter and raw sugar.
  • Turn your oven light on, and place the muffins in the oven to bake. It will take 10-12 minutes for the muffins to rise and the muffin tops to brown. At this point, reduce the heat to 350 degrees (don't open the oven though). Let bake for another 5-7 minutes.
  • Remove the muffins from the oven, let cool for 2 minutes, and then place the muffins on their side on a towel to finish cooling. This prevents the muffin tops for sinking as they cool.
