- Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases. In a large bowl beat 2 medium eggs lightly with a handheld electric mixer for 1 min.
- Add 125ml vegetable oil and 250ml semi-skimmed milk and beat until just combined then add 250g golden caster sugar and whisk until you have a smooth batter.
- Sift in 400g self-raising flour and 1 tsp salt (or 400g plain flour and 3 tsp baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough.
- Stir in 100g chocolate chips or dried fruit if using.
- Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
- Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

- In large mixing bowl place cake mix, eggs, oil and 1 tablespoon reserved pineapple juice, stir well to combine, add drained crushed pineapple and pecans, stir to blend. Batter will be thick and smooth, if it's too stiff, add a little bit more pineapple juice.
- Place paper muffin liners in muffin tin, divide batter equally between muffin liners.
- Bake for 25 - 30 minutes, test with a toothpick for doneness.
- Cool on wire rack.

- Preheat the oven to 200C/gas 6/ fan 180C and very lightly butter a 12-hole muffin tin. Sift the flour and baking powder into a bowl. In another bowl, lightly beat the eggs, then stir in the melted butter, milk and honey. Add to the flour with the remaining ingredients. Combine quickly without overworking (it's fine if there are some lumps left - you want it gloopy rather than fluid). Spoon the mixture into the muffin tin. Bake for 20-25 minutes until well risen and pale golden on top.
- Leave in the tin for a few minutes before turning out. When cool, they'll keep in an airtight tin for two days. (Can be frozen for up to 1 month.)

MUFFINS CAKE MIX STYLE
This is an invention that turned out great. Can be made in a 9-inch square pan or make in a 12 cup muffin pan. These are so good for breakfast, with butter or honey. These are so good and crunchy as if there were nuts inside.Family approved.

- 1. Preheat oven to 325^. Spray muffin tins or 9-inch pan with non-stick olive oil.
- 2. Pulverize the corn chips of your choice in the blender- just until fine not paste. In your large mixer bowl combine cake mix,the ground corn chips,(if you don't have corn chips you could use 3/4 c. corn meal- but it will change the crunch),baking powder, eggs ,lemon juice, and olive oil.
- 3. Mix well- the dough will be thick. Spoon a heaping Tablespoon of dough into each muffin well or cover bottom of 9-inch pan. Using a teaspoon- measure a teaspoonful of dry strawberry jello(or you favorite flavor) in the center of the dough, do not get on the sides of the muffin pan. Sprinkle jello powder all over first layer of dough if using 9-inch pan- not touching side of pan. Spoon dough carefully over the jello powder- using all the dough equally in each muffin tin; or covering it in the 9-inch pan.
- 4. Bake in oven for about 25-30 minutes for muffins or 35-40 minutes for 9-inch pan. Test before assigned time with a toothpick s all ovens are different. Butter tops and cool slightly then remove from muffin tin- leave in 9-inch pan and cut into squares.
COFFEE CAKE MUFFINS

- Preheat oven to 375 degrees F. Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray; set aside. To make the crumb topping, combine sugars, cinnamon and salt in a medium bowl. Whisk in melted butter. Add flour and stir using a rubber spatula just until moist. Spread out mixture on parchment paper to dry until ready to use. In a large bowl, combine flour, sugar, baking powder, cinnamon, baking soda and salt. In a large glass measuring cup or another bowl, whisk together milk, canola oil and eggs. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Scoop the batter evenly into the muffin tray. Sprinkle with reserved crumb topping, using your fingertips to gently press the crumbs into the batter. Place into oven and bake for 15-17 minutes, or until a tester inserted in the center comes out clean. To make the glaze, combine confectioners' sugar, vanilla and milk. Whisk until smooth. If the glaze is too thin, add more confectioners' sugar as needed. When the muffins are done, cool for 10 minutes and drizzle the glaze on each muffin. Allow glaze to set before serving.

- Preheat the oven to 375°F. Butter muffin pans. Mix the flour, baking powder, salt, and sugar in a large bowl. Add the egg, milk, and butter, stirring only enough to dampen the flour; the batter should not be smooth. Spoon into the muffin pans, filling each cup about two-thirds full. Bake for about 20 to 25 minutes each.
- Blueberry Muffins.

MASTER BAKERY STYLE MUFFIN RECIPE
This kitchen tested muffin batter creates extra large bakery style muffins with big muffin tops and dense, moist centers. Create plenty of flavors using this as the base-- 1 muffin batter with endless options.

- Preheat oven to 425°F (218°C). Generously grease a jumbo 6-count muffin pan with butter or nonstick spray (nonstick spray recommended) or line with muffin liners. Set aside.
- Whisk the flour, baking powder, baking soda, salt, and cinnamon (if using) together in a large bowl. Set aside.
- Whisk the melted butter, oil, sugar, and eggs together until combined. Then whisk in the sour cream, milk, and vanilla extract. Mixture will be pale yellow. Pour wet ingredients into dry ingredients and fold together with a rubber spatula or wooden spoon until completely combined. Use a whisk to rid any large lumps of flour, if needed. Avoid overmixing. The batter will be thick. Fold in the add-in(s).
- Divide batter between each muffin cup, filling all the way to the top. Sprinkle with coarse sugar (for added crunch, recommended!). Bake at 425°F for 5 minutes, then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C) and continue to bake for 25-30 minutes or until the tops are lightly golden brown and centers are set. Stick a toothpick in the center of a muffin to test for doneness. If it comes out clean, the muffins are done.
- Allow to cool for 10 minutes in pan before serving.
- Cover leftover muffins and store at room temperature for 5 days or in the refrigerator for 1 week. Muffins freeze well for up to 3 months. Thaw in the refrigerator or on the counter.
APPLE CINNAMON SUGARED MUFFINS (FROM A CAKE MIX!)
I was looking for some simple muffins to make for a church bake sale when I came across the "base recipe" for these muffins on the Dunkin Hines website. I added a few ingredients and came up with this delicious number that combines my bounty of apples, cinnamon and sugar to create a moist muffin that goes great with your morning cup of java! Cooking time is per each dozen tray of muffins. (Also, the picture is missing the cinnamon/sugar coating. I decided to add that later)

- Preheat oven to 375.
- Grease muffin cups generously or line with paper liners.
- Mix yellow cake mix, baking powder, flour, milk, canola oil, eggs and cinnamon in a large bowl. Mix until combined well, scraping the sides of bowl as you go.
- Fold in apples and stir until covered.

CAKE MIX CRANBERRY ORANGE MUFFINS

- Preheat the oven to 350 degrees F. Lightly coat the top and inside cups of a 12-cup muffin pan with nonstick cooking spray.
- Put 1/4 cup almonds in the bowl of a food processor. Process until very fine and the nuts are the texture of cornmeal. Add the cake mix, yogurt, eggs, oil, 1/4 cup water and the remaining 3/4 cup whole almonds. Pulse until no bits of dry cake mix remain and the nuts are coarsely chopped Add 1/4 teaspoon of zest and the orange juice to the batter with the cranberries. Pulse two or three times to just combine the fruit.
- Divide the batter between muffin cups and bake until the tops are lightly browned and spring back to the touch, 18 to 20 minutes.
- Cool 10 minutes in the pan then transfer to a cooling rack to cool completely. In a small bowl whisk the powdered sugar, hot water and remaining 1/2 teaspoon zest until glossy and smooth. Adjust the consistency of the glaze with the remaining water, a few drops at a time until just loose enough to drizzle. Spoon over the cooled muffins. Let stand a few minutes for the glaze to harden.

- Heat the oven to 180C/160C fan/gas 4. Line a muffin tin with six muffin cases. Sieve the flour, cocoa and baking powder into a medium bowl. Mix together the egg, sugar, oil and milk together in a jug, then gradually pour into the dry ingredients (add chocolate chips now to make double chocolate muffins, if you like) and mix until combined.

- Preheat the oven to 200C/gas mark 6/fan 180C. Melt the margarine in the microwave.
- Top and tail, then peel and grate the carrots.
- Combine the carrots, sugar and margarine in a bowl.

- Put carrots and apple sauce in to food processor, mix until it has the consistency of baby food. Set aside.

- Heat your oven to 425 degrees. Fill a muffin tin with 9 muffin liners. Then use an electric mixer to combine the butter and cream cheese. Once well mixed, add the granulated sugar and mix on a medium high speed until the mixture is fluffy. This will take about 2 minutes.
- Add the egg, egg white, and vanilla and beat until it is just combined with the butter, cream cheese, and sugar mixture.
- In a separate bowl, combine 1 cup and 3 tablespoons flour, with the baking powder, baking soda, and salt.
- Remove the bowl of the electric mixer, you want to fold everything together by hand. Fold the flour mixture and buttermilk into the ingredients in the bowl from the mixer. Stir in a third of the flour mixture, then half the buttermilk, another third of the flour mixture, the remaining buttermilk, and then the remaining flour mixture. Fold together until it is just mixed - don't over mix. Let the batter sit for 15 minutes.
- While the batter is sitting, pour the berries and other mix ins into a bowl. Dust with a tablespoon of flour, and gently mix coating the berries in flour. This prevents the berries from sinking to the bottom.
- After the batter has rested, fold in the berries and other mix ins.
- Pour the batter into 9 muffin liners, filling them all the way to the top. Then top with the melted butter and raw sugar.
- Turn your oven light on, and place the muffins in the oven to bake. It will take 10-12 minutes for the muffins to rise and the muffin tops to brown. At this point, reduce the heat to 350 degrees (don't open the oven though). Let bake for another 5-7 minutes.
- Remove the muffins from the oven, let cool for 2 minutes, and then place the muffins on their side on a towel to finish cooling. This prevents the muffin tops for sinking as they cool.
