ROASTED GREEN BEANS WITH GARLIC, LEMON, PINE NUTS & PARMESAN

Roasted Green Beans with Garlic, Lemon, Pine Nuts & Parmesan image

Roasted green beans are a revelation, especially when tossed with chunks of garlic, lemon, pine nuts, and cheese.

Provided by Adapted from Chef Ris Lacoste in

Categories     Vegetables & Sides

Time 40m

Yield 6-8

Number Of Ingredients 10

⅓ cup pine nuts
2 pounds fresh green beans, stem ends trimmed
¼ cup thinly sliced garlic, from 7 to 10 cloves, (a medium clove should yield 4 slices)
6 tablespoons extra virgin olive oil
1½ tablespoons lemon zest
1½ teaspoons kosher salt
½ teaspoon ground black pepper
¼ teaspoon sugar
1½ tablespoons freshly squeezed lemon juice
6 tablespoons coarsely shredded Parmigiano-Reggiano

Steps:

  • Set an oven rack in the middle position and preheat the oven to 450°F. Line a rimmed baking sheet with heavy-duty aluminum foil.
  • In a small dry skillet over medium heat, toast the pine nuts until golden. Watch carefully and stir frequently as they can burn quickly. Immediately transfer the nuts to a small bowl (don't leave them in hot pan as they will continue to cook). Set aside.
  • Put the green beans in a large bowl. Add the sliced garlic, olive oil, 1 tablespoon of the lemon zest, kosher salt, pepper, and sugar; toss well. Transfer the mixture to the prepared baking sheet (don't leave any flavor behind: use a rubber spatula to scrape all of the oil and seasoning out of the bowl and onto the beans).
  • Roast the beans and garlic for 15 minutes. Stir with a spatula to promote even cooking, then continue roasting until the beans are tender throughout, about 10 minutes more. The beans should be fully cooked, with some lightly browned but not overly shriveled.
  • Add the lemon juice, Parmigiano-Reggiano, remaining ½ tablespoon lemon zest, and pine nuts to the beans and toss well. Taste and adjust seasoning with salt, pepper and lemon juice if necessary. Transfer to a serving platter and serve hot or room temperature.

GREEN BEANS WITH BACON & PINE NUTS

Green Beans with Bacon & Pine Nuts image

Tender-crisp Green Beans with Bacon and Pine Nuts is a great combination of textures and flavors - rich and buttery and crispy and crunchy. It's the perfect side dish for your holiday feast!

Provided by Amy Nash

Categories     Side Dish

Time 20m

Number Of Ingredients 7

2 1/2 pounds fresh green beans (washed & ends trimmed)
1/2 pound bacon (roughly chopped)
1 small yellow onion (finely chopped)
3 garlic cloves (minced)
1/2 cup pine nuts
Juice of 1/2 a lemon
Salt & freshly ground pepper (to taste)

Steps:

  • Prepare a large bowl of ice water for an ice bath. Set aside.
  • Fill a large pot with salted water and bring it to a boil over high heat. Add the washed and trimmed green beans to the salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and then shock them by dumping them in the bowl of ice water to stop the beans from cooking any more. Drain the beans again and pat dry.
  • Cook the bacon in a large, heavy pan over medium-high heat until crisp. I prefer chopping my bacon first and then stirring it around in the pan to cook it for this dish, rather than frying the bacon in strips and chopping it up afterwards. Remove the cooked bacon pieces to a plate lined with paper towels using a slotted spoon, then pour out all but 2 tablespoons of the excess bacon grease
  • Add the onion to the pan with the reserved bacon grease and sauté until soft, about 4 to 5 minutes. Add the garlic and sauté just until fragrant, about 1 more minute.
  • Add the green beans and the pine nuts to the onion and garlic and toss to combine. Cook until heated through and pine nuts are toasty, about 5 to 6 minutes more, tossing frequently so the pine nuts don't burn. Return the bacon to the pan, add the lemon juice and toss everything to combine. Season with salt and pepper to taste.

GREEN BEANS WITH SHALLOTS AND PANCETTA

Green Beans with Shallots and Pancetta image

Quick and delicious green beans recipe with fresh green beans, shallots, and pancetta.

Provided by Elise Bauer

Categories     Side Dish     Quick and Easy     Green Bean     Green Vegetables     Pancetta

Yield 4

Number Of Ingredients 6

1 pound green beans, ends trimmed, strings removed (if any)
Salt
2 ounces pancetta, diced very small
2-3 large shallots, chopped
2 teaspoons butter
Freshly ground black pepper

Steps:

  • Boil the green beans: Blanch the beans in a large pot of boiling salted water 4 minutes, or until they are crisp tender. Note: Test one, if it is "chewy" keep the beans cooking a bit longer. If you are using French cut beans, or extra thin beans, they may not need to cook as long as 4 minutes; start testing them at 1 1/2 to 2 minutes.
  • Drain and shock with ice water: Drain and place the beans in a bowl of ice water to stop the cooking. Drain again and set aside. (At this point you can make the beans a day ahead, store in refrigerator.)
  • Brown the pancetta: Heat a large sauté pan on medium high heat. Add the diced pancetta and cook, stirring occasionally, until lightly browned, 2-3 minutes. Use a slotted spoon to remove the pancetta from the pan to a plate.
  • Add the shallots: Add the shallots to the pan. Cook, stirring often, on medium high heat, in the fat rendered from the pancetta, until lightly browned.
  • Add butter and green beans: Add butter to the pan; add the drained green beans and pancetta. Season to taste with salt and pepper. Stir constantly until the beans are hot and are well mixed with the shallots and pancetta. Serve immediately.

Nestle the cod steaks in among the runner beans, lightly season again, and then place some pancetta over the cod and among the beans. Sprinkle with pine nuts and drizzle a little olive oil over the top. Take your lemon halves and place them in the tray-they will cook and colour slightly, going jammy, sweet and lemony. Fantastic.
  • Cook for roughly 15 minutes in the middle of the preheated oven. Lightly lay kitchen foil over the fish for the first 5 minutes and then remove it. You know the cod is cooked when the bone in the middle is easily removed. This is a meal in itself, so serve with all the lovely juices from the tray drizzled over the top

  • Blanch Green Beans: Fill a large pot with water and a few tablespoons of salt. Bring the pot of water to a boil. While waiting for the water to boil, make an ice bath by filling a large bowl with water and a few handfuls of ice. Once the water has come to a rolling boil, put a few handfuls of green beans in the boiling water for about 2-3 minutes or until cooked through but firm. Then remove the green beans with tongs, a small mesh strainer or slotted spoon and immediately put them in the ice bath. Repeat this process until all green beans have been blanched. Strain the green beans and pat down with paper towels to remove excess moisture.
  • Make Vinaigrette: In a small bowl, whisk together all the vinaigrette ingredients until well combined. Set aside.
