Grill the green beans for this side dish with a bacon-mustard dressing.

1 1/4 pounds green beans, trimmed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 slices bacon, chopped
1 tablespoon whole-grain mustard
1 tablespoon apple cider vinegar

Steps:

  • Prepare an outdoor grill for medium-high heat.
  • Crimp and fold the edges of a double layer of aluminum foil so it resembles a rimmed baking sheet. Put the beans in the center and toss with 1 tablespoon of the oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Add 2 tablespoons water.
  • Place the foil on the grill cook, tossing the beans occasionally, until lightly charred and tender, about 15 minutes.
  • While the beans grill, cook the bacon in a small skillet over medium heat until crisp; transfer to a paper-towel-lined plate to drain. Pour off all but 1 tablespoon of bacon drippings and then stir the mustard, vinegar and remaining 1 tablespoon oil into the skillet until combined.
  • Transfer the beans to a servings bowl and pour the warm vinaigrette over top. Toss well, scatter with the cooked bacon and adjust the seasoning with additional salt and pepper.

1 pound (about 12) red-skinned boiling potatoes
3 cups (about 1 pound) diced slab bacon
2 tablespoons minced garlic
1/2 cup chopped shallots
6 tablespoons packed light brown sugar
6 tablespoons balsamic vinegar
1/2 cup extra virgin olive oil
6 tablespoons freshly squeezed orange juice
1/2 head frisee (curly endive), well washed and torn into pieces
4 cups mixed salad greens (mesclun), or a mixture of at least 3 lettuces such as red leaf, Romaine, endive, radicchio, arugula, frisee, watercress or Boston
4 teaspoons chopped chives
2 plum tomatoes, seeded and diced
1/2 English cucumber, peeled, halved lengthwise, sliced into half-moons
2 celery ribs, sliced 1/4 inch thick
6 ounces fresh, mild goat cheese, crumbled
Croutons, recipe follows
16 to 20 baguette slices, 1/4 inch thick
3 tablespoons garlic oil, or olive oil mixed with 1 minced garlic clove
1/4 cup freshly grated Parmesan
Freshly ground black pepper

Steps:

  • Put potatoes in a saucepan and cover with cold water. Cover the pan and bring to a boil over high heat. Uncover and boil until the potatoes are tender, between 12 to 15 minutes.
  • While the potatoes are cooking, make the dressing. In a skillet, saute the bacon over a medium-high heat until most of the fat has been rendered and the bacon is golden and beginning to crisp, about 5 minutes. Turn off the heat and pour off the fat into a glass-measuring cup. Remove the bacon from the pan and let drain on paper towels. In the skillet, with its thin coat of bacon fat, add the garlic and shallots and cook over medium heat, stirring, until softened, about 5 minutes. Add the brown sugar and cook, stirring, until dissolved. Scrape the mixture into a blender or food processor and add the balsamic vinegar, extra-virgin olive oil, and orange juice. Add 1/4 cup of the bacon fat and process, pulsing, until, just until smooth. Season to taste with salt and pepper. Slice the warm potatoes 1/4 inch thick and combine with half of the warm vinaigrette (reheat the vinaigrette in the microwave if necessary) and half of the bacon pieces. Divide in roomy serving bowls. In a large bowl, combine the lettuces, chives, tomato, cucumbers, and celery. Toss with the remaining vinaigrette and divide on top of the potatoes in the serving bowls. Sprinkle the crumbled goat cheese and reserve bacon pieces over the salads, place 3 or 4 croutons on each, and serve.
  • For the croutons, preheat to 350 degrees. Arrange the bread slices on a baking sheet and brush the tops with garlic oil. Bake 10 to 12 minutes, until golden. Remove from the oven and immediately sprinkle with cheese (if using) and pepper. Cover with foil to keep warm.

1 cup dried navy beans, soaked overnight in cold water
2 garlic cloves, smashed
Fresh thyme sprigs
4 cups cold water
1 teaspoon salt
2 cups crusty bread cubes
2 tablespoons extra-virgin olive oil, plus 2 teaspoons
1/4 pound thick sliced smoked bacon, cut into 3-inch strips
3 large shallots, thinly sliced
3 tablespoons balsamic vinegar
Fresh ground pepper
1/2 pound frisee, washed
1/2 pint yellow cherry tomatoes, halved
1/4 pound mild goat cheese crumbled

Steps:

  • Drain and rinse off the beans. In a medium saucepan, combine beans, garlic, fresh thyme sprigs, and 4 cups cold water. Bring to a boil and skim off any foam. Simmer until tender. About 10 minutes before they are done, add the salt (about 1 teaspoon). Drain the beans and allow to cool room temperature. Throw away garlic and thyme.
  • Preheat oven to 350 degrees F.
  • Toss the bread cubes with 2 tablespoons or more of olive oil, salt, and pepper. Toast until golden. Fry bacon until crisp. Transfer to paper towels and drain. Add 2 teaspoons of olive oil to bacon pan. Saute the shallots in the olive oil until just colored light golden. Whisk in the vinegar and season with salt and pepper. Keep the dressing warm.
  • In a big bowl, toss the frisee, beans, bacon, toasted croutons, and tomatoes together. Add the dressings and toss. Plate each salad and sprinkle the crumbled goat cheese over top.

1½ lb. green beans, washed and trimmed
2 tablespoons extra-virgin olive oil
1 tablespoon sherry vinegar
½ teaspoon sea salt
Ground black pepper to taste
⅔ cup dried cranberries
1 (4-ounce) log goat cheese, crumbled
Optional: ¼ cup almonds and/or cooked bacon (crumbled)

Steps:

  • Bring a large pot of salted water to a boil.
  • Add green beans and cook until just tender, 3 to 4 minutes.
  • Drain well and transfer to a large bowl.
  • Toss with oil, vinegar, salt and pepper and transfer to a large platter.
  • Scatter cranberries, goat cheese and almonds over the top and serve warm.

1/2 pound smoked bacon chopped (6 to 8 slices )
1/2 cup shallots, chopped (about 3)
2 garlic cloves, chopped
1/4 cup sherry wine vinegar
3 tablespoons Dijon mustard
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 cup crumbled goat cheese
1/2 cup sweetened dried cranberries

Steps:

  • Cook the beans in a large pot of boiling water until tender-crisp, about 5 minutes. Drain.
  • Rinse with cold water, and drain. Pat dry. (Beans can be prepared 1 day ahead. Wrap in paper towels, put in a ziplock bag, and chill. Bring to room temp before continuing.)
  • Place the beans in a large bowl. cook the bacon in a skillet, and transfer to paper towels to drain, reserving the drippings in a skillet. Add the shallots and garlic to the drippings in a skillet. Sauté over medium, 1 minute or just until soft. Add the vinegar. Dijon, and dry mustard. Whisk, stirring to loosen the browned bits in the bottom of the skillet. Whisk in the olive oil. Season with salt and pepper.
  • Toss the beans with the warm dressing. Sprinkle with the bacon, goat cheese and dried cranberries. Serve immediately.

Found in the November 2008 Woman's Day magazine and thought that DBF Steve would like it as he loves green beans with vinegar. I was right! He loves it and has requested it again and again so I'm posting it here for safe keeping. Note: I am listing the recipe as it was in the magazine, but when I make it I have used a 2 pound package of frozen green beans and cook them in those new Ziploc steamer bags (from frozen) for about 5-6 minutes. I also chop the bacon before frying it.

2 lbs fresh green beans, trimmed
4 slices bacon
3 large shallots, thinly sliced
2 tablespoons cider vinegar
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In large pot, bring green beans and enought water to cover to a boil.
  • Cook 6 minutes or until tender crisp.
  • Cook bacon in large skillet over medium heat until crisp.
  • Drain on paper towel,.
  • Remove all but 2 TBS bacon fat from skillet.
  • Add shallots and saute` 1-2 minutes untils slightly golden.
  • Remove from heat and stir in vinegar.
  • Add green beans and salt and pepper.
  • Toss to coat.
  • Crumble bacon on top.
  • Serve immediately.

2 bacon slices
1 tablespoon chopped shallot
2 teaspoons white wine vinegar

Steps:

  • Cook green beans in large pot of boiling salted water until tender, about 8 minutes. Drain. Transfer to shallow bowl.
  • Meanwhile, cook bacon in medium skillet over medium heat until crisp, about 8 minutes. Drain bacon on paper towel. Add shallot to skillet and sauté 30 seconds. Remove from heat and cool slightly. Stir vinegar into shallot mixture in skillet. Season warm dressing to taste with salt and pepper.
  • Pour dressing over green beans and toss to coat. Crumble bacon over.

For Dressing:
1 1/2 tbsp dijon mustard
3 tbsp balsamic vinegar
1/2 medium red onion, sliced
1 tbsp minced thyme
1 lb bacon, chopped
EVOO (if necessary), up to 1/4 cup
For Salad:
6 ozs mixed greens of choice
1 1/2 cups chicken (shredded off rotisserie breasts)
1 lb green beans
1/4 cup crushed walnuts
smoked paprika (eyeball it)
4 ozs goat cheese, slightly softened
1 tbsp chopped thyme

Steps:

  • For Dressing: 1) Cook off the bacon, reserving 1/4 cup of drippings. Store 1/2 of the bacon pieces for another use. 2) Return the drippings to the pan. Add the sliced red onion, balsamic vinegar, thyme, and mustard. Heat through, scraping any browned bits off bottom of pan. Add EVOO to taste to make the dressing consistency to your liking. Salt and pepper to taste. Set aside until salad components are prepared and ready to be tossed. Keep warm. For Salad: 1) Boil green beans just until crisp-tender, about 4 minutes. 2) Crush or chop walnuts. Sprinkle with paprika to cover. Toast in hot pan, shaking, for 5-10 minutes, until brown. Remove from pan and let cool. 3) Arrange greens on 4 plates. Top with equal amounts of chicken, green beans, walnuts, bacon, and thyme. Drizzle dressing over. 4) Sprinkle 1 oz crumbled goat cheese over each salad.

Transfer bacon to paper towels. Add shallot & garlic to drippings. Saute over med heat till beginning to soften, about 1 min. Add vinegar, mustard, dry mustard; whisk, scraping up browned bits. Whisk in oil. Season dressing with salt & pepper. Toss beans with dressing. Sprinkle with cheese, bacon& pomegranate seeds.
