2 1/2 pounds green beans, trimmed
Kosher salt
1/2 pound bacon, roughly chopped
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes
1/2 cup chopped toasted pecans
Juice of 1/2 lemon
Freshly ground pepper

Steps:

  • Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
  • Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. Return the bacon to the pan, pour in the lemon juice and toss. Season with salt and pepper.

Steps:

  • Place bacon in a large skillet over medium-high heat. Cook until browned on one side, then turn over to cook on the other side. Add the almonds to the skillet at this time, and cook, stirring until light golden brown.
  • Remove the bacon from the skillet, leaving the bacon drippings. Crumble or chop bacon, and return to the skillet. Melt the butter in with the drippings. Add the green beans; cook and stir until tender, about 8 minutes.

  • Remove both ends of beans, break in half, and wash thoroughly.
  • Place in a large pot and add water 3 to 4 inches from the top. Add bacon and cook until tender.
  • Remove bacon from cooking water and discard. Remove beans and place in a large bowl, add almonds and toss. Serve Hot.

  • In a large pan, cook the bacon until crispy. Remove bacon from pan and cut/crumble. Set aside.
  • Place green beans (if frozen, thaw in microwave first) in the pan with the bacon grease and sauteé until heated through (don't overcook).

450 -500 g / 1 lb green beans, tails cut off
1 tablespoon butter or ghee (olive oil is also fine)
120 g / about 4 ounces bacon rashers, diced into cubes
200 g / 7 oz crimini or Swiss brown mushrooms, sliced
4-5 sage leaves, chopped (about 5 g, you could use dried herbs)
1/3 cup almonds, chopped
1/3 cup dried cranberries, chopped
3 cloves garlic, finely chopped
1 tablespoon Balsamic vinegar
1-2 tablespoons olive oil
Juice of 1/2 orange
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut the tail ends off the green beans, wash and set aside.
  • Preheat a large, deep frying pan to medium-high heat and melt the butter (or another cooking fat of choice). Add the bacon and cook for 1 minute until it starts to brown slightly. Add the mushrooms, stir and cook for 1-2 minutes. Add a splash of olive oil as the cooking fat starts to absorb into the mushrooms. Cook for 2 more minutes or until the mushrooms start to brown up a little.
  • Add chopped bacon, cranberries, garlic and sage and cook, stirring a few times, for 3-4 minutes until everything starts to brown slightly. Finish by adding a tablespoon of Balsamic vinegar, stir through and transfer to a bowl.
  • Return the empty frying pan on the stove over medium-high heat. Add a tablespoon of olive oil and green beans; spread them around evenly. Cover with a lid and cook for 2 minutes. Uncover, stir and pop the lid back on for another 1-2 minutes. This method allows you to steam the green beans as well as browning them slightly on the bottom.
  • Uncover again and now season with salt and pepper and add the orange juice. Stir and cover with a lid again for 2 more minutes. The green beans will continue to saute and steam with the orange juice reducing slightly.
  • Finish the dish by removing the lid and stirring in the pre-cooked bacon and mushroom mixture. Season with another pinch of salt and pepper (taste to see if you need more). Serve with fried shallots and toasted almonds on top. You can serve as is as well.

1 shallot bulb (about 5-6 cloves, peeled and thinly sliced)
1 Tablespoon olive oil
1 teaspoon fresh lemon juice
sea salt (to taste)
fresh ground pepper (to taste)
3 Tablespoons chopped fresh parsley
2 Tablespoons toasted almond slices

Steps:

  • Heat a large dry skillet over medium heat, add almond slices and cook until toasted, about 5-6 minutes or until almonds are golden. Remove almonds from skillet and set aside.
  • In the same skillet, add olive oil and heat over high heat until melted. Add in shallot slices, turn heat down to medium-low. Cover the skillet with a lid and cook shallots until caramelized, stirring frequently throughout the cooking process. This should take about 15 minutes and the shallots should turn golden brown in color.
  • Meanwhile, cook the green beans by bringing a saucepan of water with a pinch of sea salt to a boil. Once water is boiling, add in green beans and cook for about 3-4 minutes or until the beans are bight green in color and tender crisp.
  • Drain and transfer the beans into the skillet with the caramelized shallots. Toss to combine.
  • The oil and shallots will coat the beans. Add in chopped parsley and lemon juice. Season with sea salt and pepper. Heat for another 3-4 minutes or until beans are warm. Transfer beans to a large dish or platter, top with toasted almonds and serve.

1 large Shallot (, peeled and diced)

Steps:

  • In a large skillet over medium-high heat, cook the bacon until done but not crisp. Remove the bacon to drain on paper towels. Reserve 2 teaspoons of the bacon fat in the pan and discard the rest. Chop or break bacon into small pieces.
  • While the bacon is cooking, steam the prepared green beans using a steamer or steamer basket, until almost fully cooked 3-4 minutes (taste to test). Note: they will complete cooking when sautéed and to retain firmness they should not steam until fully done. Remove beans from the steamer.

12 oz frozen greem beans
1/2 lb bacon
1/4 cup slivered almonds
2 cloves fresh garlic (minced)

Steps:

  • Start by cooking bacon in a large skillet or frying pan on medium heat. Place cooked bacon on paper towels and set aside. Once cool, crumble bacon.
  • Add green beans to the pan with all that glorious bacon grease. Stir to coat all the green beans. Continue to stir every couple of minutes or so. This will insure all the green beans are cooking evenly and are all coated in grease.
  • Mince fresh garlic while waiting on green beans to cook.
  • Cook green beans for 5-10 minutes for frozen green beans and 15-20 for fresh, until green beans are soft but have a slight bite and are a bit charred in places.
  • Add in the minced garlic and cook for one minute. I like to push the green beans aside before throwing the garlic. This allows the garlic to cook on the pan surface instead of being stuck on top of green beans.
  • Throw the slivered almonds and bacon crumbles in with the garlic and continue to sauté for another 2 minutes. Make sure the garlic and almonds don't burn.
  • Lightly Salt and then give everything a good last minute stir so that the bacon, garlic, and almonds get distributed. Serve and enjoy!

1 tablespoon olive oil

1/3 cup sliced almonds
1/2 lemon (juiced)
1/2 teaspoon salt (or to taste)

  • Rinse and drain the green beans and snap off one end, removing the tough string if it is present (some will have them, some won't).
  • Bring a large pot of water to a boil. Add green beans and allow to cook for 3 to 4 minutes, just till slightly softened. Remove from heat and transfer to a colander to drain. Rinse with very cold water to stop the cooking process and lock in the bright green color. Drain well.
  • In a 12-inch skillet, melt the butter with olive oil over medium heat. Add the almonds and cook for about 2 to 3 minutes or until lightly golden brown, stirring often.
