If you're looking for simple, delicious, no-fuss dish that can be served in many different ways then you've got to try this green beans and potato salad!

1 lb green beans (, approx 450 g)
4 small size red or gold potatoes (, approx 12-15 oz)
3 tbsp Extra virgin olive oil
1 tbsp White wine vinegar
Fresh parsley (, finely chopped)
1 garlic clove (, chopped (optional))
Salt to taste
Pepper to taste

Steps:

  • Wash and peel potatoes. If using medium size potatoes cut them in half. If using large size potato cut it in quarters. Although I still recommend using small size potatoes.
  • In a large pot with cold salted water add potatoes and bring them to boil. Cook for 5-10 minutes.In the meantime,
  • Wash and trim green beans.
  • To make the process easier and faster work green beans in batches.Line up each batch on one side and trim off the ends with a sharp knife.Flip the beans around, line up the tips again, and trim off the other side.At this point you can cut trimmed beans in smaller size or leave as is.Repeat the process with remaining green beans.
  • Once potatoes have been boiling for a few minutes, add green beans.
  • Cook everything together for another 5-15 minutes. Check occasionally on both veggies (see Note 1).
  • Once both are cooked, remove potatoes and quickly pass green beans under cold water to prevent discoloration (optional).
  • Cut up potatoes into chunks.
  • In a small bowl mix together extra virgin olive oil and white wine vinegar.
  • In a large bowl add potatoes and green beans, add dressing, fresh parsley and give a gentle stir.
  • Top with freshly ground pepper to taste.
  • Since potatoes and green beans were boiled in salted water you might not need extra salt.

2lb fresh Green Beans
1lb small Red Potatoes, about 6-8
1 Tablespoon Bacon Grease
1 teaspoon Sugar
1 teaspoon Black Pepper
1 teaspoon Salt

Steps:

  • Wash the potatoes under cool running water. Set aside.
  • Place a couple inches of cold water in your sink. Add the green beans.
  • Swish the beans around to wash them, removing any leaves or debris.
  • Lift the beans out of the wash water. Place in a colander to drain.
  • One at a time, snap the ends off the beans, removing any strings as you go.
  • Discard the end pieces.
  • Snap each bean into bite sized pieces.
  • Place the beans in a large stock pot and cover with water by about 3 inches.
  • Add the red potatoes. Cut them into quarters if preferred.
  • Add the bacon grease.
  • Add the sugar.
  • Place on stove top over Medium High heat and bring to a boil.
  • Reduce the heat to Medium and let cook for one hour.
  • Add the black pepper.
  • Add the salt. Stir well.
  • Continue to cook the beans and potatoes until done as desired.
  • Enjoy!

  • Bring 1 inch of water to a boil in a large pot fitted with a steamer basket. Fill a large bowl with ice water; set aside.
  • Place green beans, stem ends trimmed, in basket. Cover; steam until crisp-tender, 5 to 8 minutes. Plunge beans in ice water. When cool, drain; pat dry with paper towels. Transfer to a large bowl.

2 pounds green beans, trimmed
2 teaspoons dry mustard
10 tablespoons red-wine vinegar

1 cup sliced scallions
Freshly ground pepper to taste
1/4 cup chopped fresh basil

Steps:

  • Cook the potatoes in lightly salted water. Drain.
  • Wash the beans and steam until tender but crisp, five to 10 minutes. Drain, run under cold water and refrigerate.
  • In a large bowl, blend the mustard, vinegar and olive oil. Stir in the scallions.

2 tablespoons white wine vinegar

1 tablespoon Dijon or Creole mustard
½ cup extra-virgin olive oil
6 ounces cherry or grape tomatoes (, halved)
½ cup shallots (, finely chopped)

Steps:

3 pounds potatoes (cut into 1.5" cubes)
3/4 pound green beans (stems removed and cut into 3" pieces)
1 pint cherry tomatoes (halved)
1 medium red onion (thinly sliced)
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
1/4 cup basil (chopped)
1/4 cup parsley (minced)
1 teaspoon kosher salt
1/4 teaspoon pepper
1 teaspoon Dijon mustard

Steps:

  • In a large bowl make the vinaigrette by whisking the Dijon mustard, extra virgin olive oil, red wine vinegar, salt, pepper, and herbs. Add the red onions into the bowl, mix, and set aside.
  • Bring a large pot of salted (2 Tbsp kosher salt) water to a boil. Once boiling add in the potatoes and cook for 7 minutes. Add in the green beans and continue to cook until the green beans are bright green and the potatoes are almost fork tender (about 3-5 more minutes).
  • Remove the green beans with a slotted spoon and set them aside. Drain the potatoes into a colander.
  • Place the warm potatoes into the vinaigrette and toss to coat. Next, add in the green beans and toss them together. Taste test and make any final adjustments to salt and pepper if required.

Steps:

  • Heat oil in a 5-quart saucepan over medium-high. Add onion. Cook, stirring occasionally, until just tender, about 2 minutes. Add garlic and red pepper, and cook, stirring frequently, until onion is tender, about 3 minutes.

This potato salad with green beans and asparagus features small red potatoes tossed with green beans, asparagus, walnuts and a bold dijon vinaigrette. A great side dish that goes with almost anything.

1 pound of new potatoes - I used about 15 small new potatoes.
1 pound of green beans
1 bunch of asparagus
2 Tbs minced red onion
2 Tbs minced parsley
1 large handful of walnuts
4 Tbs olive oil
2 Tbs red wine vinegar
1 tsp dijon mustard
1 large clove of garlic - put through a garlic press
8 twists of black pepper

Steps:

  • Slice new potatoes in half or quarters (depending on size) and place in a large pot. Cover with cold water and bring to a boil. Turn down the heat to a slow boil and cook for 12 to 15 minutes - until fork tender.
  • Trim green bean ends and cut green beans in half.
  • Snap off tough ends of asparagus and then slice asparagus into an equal size as the green bean pieces.
  • While potatoes are cooking, bring another pot of water to a boil. Once it's boiling add both the green beans and asparagus to the boiling water. Cook for 4 to 5 minutes.
  • Prepare and ice bath (large bowl with half ice and half water). When the green beans and asparagus are ready - drain in a colander and then plunge into ice bath. Let them sit in the ice bath until completely cool.
  • Prepare vinaigrette by whisking together olive oil, red wine vinegar, dijon mustard, minced garlic and black pepper.
  • Mince red onion and set aside.
  • Mince the parsley and set aside.
  • Drain the potatoes when ready, add to a bowl, add half the vinaigrette to the warm potatoes and toss to coat the potatoes.
  • Drain the green beans and asparagus from the ice bath. Pat green beans and asparagus with paper towel so they are mostly dry.
  • Add green beans, asparagus, red onion, parsley and walnuts to potatoes. Toss with the remaining vinaigrette and serve.

Green Beans with New Potatoes image

This easy green bean with potatoes recipe from Paula Deen is a classic side dish perfect for entertaining. Ingredients include fresh green beans, onion, bacon grease and salt pork. Prep time is about 10 minutes and cooking time is 10 minutes on the stovetop.

1/2 stick sliced butter
1 cut into slivers onion
12 small red potatoes
2 to 3 teaspoons Paula Deen's House Seasoning
2 cups plus more if needed chicken broth
1/4 cup bacon grease
1/4 lb sliced salt pork
3 lbs fresh green beans
to taste pepper

Steps:

  • Remove the ends from the beans. Snap the beans in two, place into a colander, wash, and set aside to drain.
  • Meanwhile, in a large cast-iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the stock and House Seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
  • While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add butter and season with pepper.
