Glazed Carrots and Green Beans image

This simple dish is always a big hit, even with non-vegetable lovers. I've substituted frozen green beans for fresh, omitting the blanching process, and it still tastes great.

6 cups water
1/2 pound fresh baby carrots
1/2 pound fresh green beans, trimmed
1/2 cup chicken broth
1 tablespoon butter
1 teaspoon sugar
Salt and pepper to taste

Steps:

  • In a large saucepan, bring water to a boil. Add carrots; cover and cook for 1 minute. Add beans; cover and cook 2 minutes longer. Drain and immediately place vegetables in ice water. Drain and pat dry. , Place the vegetables in a large skillet; add broth and butter. Bring to a boil; cook, uncovered, for 2-3 minutes or until liquid is reduced to about 2 teaspoons. Add the sugar, salt and pepper; cook and stir for 1 minute.

2 medium onions, thinly sliced
1/4 cup all-purpose flour
2 tablespoons panko bread crumbs
1 teaspoon kosher salt
Nonstick cooking spray
2 tablespoons plus 1 teaspoon kosher salt, divided
1 pound fresh green beans, rinsed, trimmed and halved
2 tablespoons unsalted butter
12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1/4 teaspoon freshly ground nutmeg
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup half-and-half

Steps:

  • Preheat the oven to 475 degrees F.
  • Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 400 degrees F.
  • While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
  • Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.
  • Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

1 (14.5 ounce) can French-cut green beans, drained
1 (14.5 ounce) can corn, drained
1 (10.75 ounce) can cream of celery soup
1 cup shredded Cheddar cheese
½ cup sour cream
½ cup diced celery
½ cup onion, chopped
1 sleeve buttery round crackers (such as Ritz®), finely crushed
¼ cup butter, melted
7 tablespoons slivered almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine green beans, corn, soup, Cheddar cheese, sour cream, celery, and onion in a bowl. Mix thoroughly. Pour vegetable mixture into a 8-inch square baking dish and spread evenly.
  • Combine crackers and melted butter in a small bowl. Mix well, coating crackers with the butter. Pour over the vegetable mixture in the baking dish and spread evenly without stirring. Sprinkle almonds on top.
  • Bake in the preheated oven until set, about 30 minutes.

2 pounds haricots verts (French thin green beans)
2 large red onions, finely diced
8 tablespoons (1/2 cup or 1 stick) butter, unsalted
2 (10-ounce) cans cream of mushroom soup
3 tomatoes, seeded and diced
4 cans French-fried onions
Salt and freshly ground black pepper

Steps:

  • Blanch the haricots verts in hot water for about 3 to 5 minutes then remove from heat and shock in iced water. Drain and set aside to cool.
  • Preheat oven to 325 degrees F.
  • In a large skillet saute the chopped onion in butter. Then add the cooled beans and saute for a couple of minutes. Add the canned mushroom soup and mix well.
  • Transfer to a buttered casserole dish and top with the diced tomato, French-fried onions, and season with salt and pepper, to taste. Bake in oven for about 10 minutes.

Green Beans and Carrots:
-- Water
-- Salt, to taste
2 pounds fresh green beans, ends trimmed
2 medium carrots, peeled and thinly sliced
-- White Sauce:
1 tablespoon soy butter or butter
1 medium onion, chopped
1 tablespoon flour
3 cups soy milk or 2 percent milk
-- Salt and fresh-ground black pepper, to taste
Crumb Topping:
1 -- red bell pepper, cored, seeded and sliced in rings
1 cup corn flakes or crushed Ritz crackers
1 teaspoon paprika

Steps:

  • To make beans and carrots: Bring a large (5 1/2-quart) pot of water to boil with a pinch of salt. Add green beans and cook 3 minutes before adding carrots. Boil an additional 2 minutes until tender. Drain well and rinse under cold water. Place in a mixing bowl.
  • To make sauce: Preheat oven to 375F. Heat butter in a medium saucepan over medium heat until melted. Add onions and saute 5 minutes until lightly browned. Add flour and combine well. Add milk and stir in well. Bring to a boil, reduce heat and simmer 15 minutes, stirring frequently, until lightly thickened and smooth. Season with salt and pepper. Mix sauce with green beans and carrots. Transfer mixture to a 2- to 3-quart casserole dish and spread evenly.

1 shallot, peeled and thinly sliced in rings
1/4 cup unbleached all-purpose flour
Kosher salt and freshly ground pepper
1 1/2 pounds green beans
12 slices bacon (3/4 pound), cut crosswise in 1/4-inch pieces
2 tablespoons unsalted butter
1 medium onion, cut into 1/4-inch dice (1 1/3 cups)
8 ounces cremini mushrooms, thinly sliced
3 cups milk, room temperature
1 teaspoon Dijon mustard
1/8 teaspoon cayenne pepper
1 teaspoon Worcestershire sauce

Steps:

  • Heat 1/2 inch of safflower oil in a medium skillet over medium-high. Toss shallot rings with 1 tablespoon flour. Fry the shallots in batches, turning frequently, until golden brown, about 3 minutes. Transfer to paper towels to drain. Season with salt.
  • Cook green beans in a large pot of salted boiling water until bright green and just tender, about 5 minutes. Drain and rinse with cold water to cool. Drain well and pat dry with paper towels. Trim beans, slice in half lengthwise, and cut into 2- to 3-inch pieces.
  • Preheat oven to 375 degrees. Heat a large straight-sided skillet over medium-high. Add bacon and cook, stirring occasionally, until browned, about 8 minutes. Transfer to a paper towel-lined plate. Drain and discard fat.
  • Return skillet to medium-high. Add butter, onion, and mushrooms. Season with salt and pepper. Cook, stirring occasionally and scraping up brown bits on the bottom of skillet as the vegetables release their juices, until tender and just beginning to brown, about 4 minutes. Reduce heat to medium. Add remaining 3 tablespoons flour and cook, stirring, until mixture begins to turn golden, 1 minute. Slowly stir in milk and continue stirring until mixture coats the back of a spoon, about 13 minutes. Remove from heat. Stir in mustard, cayenne, and Worcestershire. Season with salt and pepper. Stir in cooled green beans and 1/2 cup reserved cooked bacon.
  • Transfer mixture to a 2 1/2-quart shallow baking dish; cover. Bake until mixture is bubbly and heated through, 15 minutes. Uncover, top with remaining bacon and fried shallots, and serve immediately.

50g butter
2 tbsp olive oil
250g chestnut or button mushrooms, sliced
500g green beans, trimmed
50g flour
500ml milk
100g crispy onions

Steps:

  • Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
  • Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
  • Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.

3 large shallots
1 ¼ pounds fresh green beans, trimmed and halved crosswise
2 tablespoons unsalted butter
1 (10 ounce) package button mushrooms, sliced
⅓ cup all-purpose flour, divided
1 cup half-and-half
1 cup chicken broth
1 teaspoon soy sauce
salt and ground black pepper to taste
1 cup vegetable oil for frying, or as needed

Steps:

  • Spray a 2 1/2-quart casserole dish with cooking spray. Mince shallots until you have 3 tablespoons; slice remaining shallots into 1/8-inch rounds. Set both aside.
  • Bring a large pot of lightly salted water to a boil. Add beans and cook until tender but still crisp, about 4 minutes. Drain, rinse, and pat dry; set aside.

1 cup fresh carrots, chopped
1 large / 2 small chicken breasts
1/2 onion
1 tsp minced garlic
1/2 tsp salt
1/2 tsp pepper
1 can cream of mushroom soup
1/3 cup milk
1 Tbsp soy sauce
1 cup French's French Fried Onions (divide to 2 parts)
1/2 cup shredded cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F. Cut the green beans into 2-3 inch pieces. Cut the carrot into 1/4 inch cubes, or sliced rounds. Cut the chicken breast(s) into half-inch cubes. Slice the onion thinly. Boil the fresh green beans and carrots for about 5 minutes, or until almost cooked, then strain.
  • In a pan, fry the garlic in med-high heat until brown and add the chicken. Cook until the outside is no longer pink. Add salt and pepper. Add the beans, carrots, and onions. Cook until chicken is cooked through.
  • Transfer to an 8x8 inch casserole dish. Mix in cream of mushroom soup, milk, soy sauce, and half of the French's French Fried Onions until mixed well.
  • Put the casserole in the oven for 10 minutes, and then mix the ingredients together. After another ten minutes have passed, add the cheese on top and the rest of the French's French Friend Onions. Leave it in for another minute or two or until the cheese has melted completely. Take it out, and let it cool for about 10-15 minutes, then serve with long-grained, white rice!
