- In a shallow dish, combine chicken and teriyaki sauce. Cover and refrigerate 1-2 hours. , Drain and discard marinade. In a large nonstick skillet, heat oil over medium-high heat. Add chicken; cook and stir until no longer pink, 5-7 minutes. Refrigerate until chilled., In a large bowl, combine salad greens, chicken, oranges, carrot, almonds and onions. In a jar with a tight-fitting lid, combine dressing ingredients; shake well. Drizzle over salad; toss to coat.

- Marinade: In a large resealable plastic bag, mix vinegar, lemon juice, mustard, garlic, pepper, tarragon and oil. Remove and reserve 1/2 cup for dressing the final salad.
- Slice chicken into strips about 2-inches long. (Chicken that is partially frozen is easier to slice). Add chicken pieces to marinade in the bag; seal and refrigerate for 1 hour.
- Meanwhile, wash and thoroughly dry spinach leaves. Line 4 salad plates with leaves and refrigerate until ready to serve.
- Drain mandarin oranges and chill segments.
- Coat a nonstick skillet with cooking spray. Remove chicken from marinade (discard marinade) and add to the skillet.Saute chicken strips for 7-10 minutes, until chicken is cooked through.
- Assembly: divide chicken equally among 4 spinach lined plates. Top each plate with 4 orange segments and 1/4 of the green onions. Drizzle each plate with 2 tablespoons of the reserved marinade/dressing.
- Serve immediately.

- In a zippered plastic bag (gallon size), combine the chicken and teriyaki sauce. Seal the bag, turn to coat and refrigerate for 1-2 hours to marinate.
- Drain and throw away the marinade and place chicken cubes into a large skillet that has been sprayed with non-stick spray.
- Cook chicken for 5-7 minutes over a medium-med. high heat, stirring often until it is cooked through (180 degrees F).
- Refrigerate chicken until chilled (about 2 more hours).
- In a large bowl, combine the salad ingredients along with the prepared chicken.
- In a large jar with a tight lid, combine the dressing ingredients and shake well.

MANDARIN ORANGE CHICKEN DELIGHT
This is a light and easy chicken dish with a brightly-flavored sauce of Mandarin orange juice, lemon juice, soy sauce, and honey. - Make the sauce by combining reserved orange juice with honey, soy sauce, lemon juice,, and ginger in a small bowl.
- Blend well and set aside.
- Combine flour with salt and pepper in a shallow pie pan.
- Set aside.
- Trim off any fat and white veins from chicken breasts and slice each breast into about three strips.
- Dry between double layers of paper towels.
- Heat butter and oil in large skillet or wok over medium-high heat.
- Coat all sides of chicken strips in seasoned flour and brown lightly in skillet.
- Reserve browned pieces on a plate lined with paper towels.
- When all chicken is browned, pour sauce into wok or skillet.
- Place chicken in the sauce and turn to coat.
- Reduce heat to medium-low, cover, and simmer for 20 to 30 minutes, or until chicken is tender and white throughout and sauce begins to caramelize on the chicken.
- Turn several times during cooking to coat evenly with sauce.
- Meanwhile, prepare rice.
- When chicken is done, remove from heat and quickly stir in the Mandarin oranges.
- Sprinkle with your chosen garnish and serve over rice.
