I hesitated to even post this recipe, since there are so many green bean casseroles on here. And yes, this one uses soup and canned French fried onions. The difference is, this recipe uses cheddar cheese soup, not cream of mushroom. I first ate it in 1973 at the home of a (then) middle-aged couple who invited my husband and me to dinner shortly after we were married.

2 (14 1/2 ounce) cans French style green beans, drained and rinsed
1 (3 ounce) can French-fried onions, divided
1 (10 1/2 ounce) can cheddar cheese soup
3/4 cup milk (preferably whole milk)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Drain and rinse beans (My mother always taught me to do this when using canned green beans, to get rid of the "can taste").
  • In 1 1/2 to 2 quart casserole dish, mix together milk and cheese soup.
  • Stir in drained beans.
  • Stir in half the french fried onions.
  • Place in preheated oven and cook 30-35 minutes (use the longer time if you like them a little thicker).
  • Sprinkle remaining french fried onions over the top.
  • Return to oven for 5 more minutes.
  • Serve hot.

I've had more requests for this classy, easy recipe over the years than I can count! It's unique from the soup and french fried onion version, and was a favourite of an old friend - the ultimate dinner party hostess of the 60's and 70's. I've never been fond of green beans, but this changed my mind and is a hit with all ages. It's perfect for a family dinner and can be made the day before and reheated for guests. It's a real winner.

2/3 cup onion, chopped
2 tablespoons butter
1 cup cottage cheese (full fat is the best)
1/2 cup cheddar cheese, grated
1/2 cup soft breadcrumbs
3 eggs, beaten
1 teaspoon salt
1/2 teaspoon garlic powder
3 cups green beans, cooked (french cut frozen)
1/4 teaspoon sweet basil
1 dash pepper

Steps:

  • Saute onion in butter until onion is transparent.
  • Combine onion with cottage cheese, cheddar cheese, bread crumbs, eggs and seasonings.
  • Place half the cooked green beans in a large buttered casserole dish.
  • Top with half of the cheese mixture, then remaining beans and cheese mixture.
  • Bake 30 minutes at 375.

1 lb bacon, cut in 1-inch strips
1 1/2 cups chopped onions
3/4 cup brown sugar
3 teaspoons Worcestershire sauce
1 1/2 cups tangy ketchup
7 (15 1/2 ounce) cans green beans

Steps:

  • Cook bacon and onion together and drain. Mix together brown sugar, Worcestershire sauce and ketchup. Add this to the bacon mixture and simmer for 2 minutes. Place drained green beans in a 9 x 13 inch baking dish or a 2 ½ quart casserole. Pour sauce mixture over green beans and bake 350 degrees for 20-30 minutes.
  • Note: If you have a hard time finding the Tangy Ketchup. Chili Sauce made by Heinz can be used.
  • VARIATION: For 2 people: 4 pieces of bacon, ½ cup onion, ¼ cup brown sugar, 1 teaspoon Worcestershire sauce, ½ cup ketchup and 2 to 3 cans green beans.
  • Prep time is approximate.

3 shallots, sliced thin
salt
pepper
3 tablespoons flour
5 tablespoons vegetable oil
10 ounces mushrooms, stems discarded and caps sliced 1/4 inch thick
2 tablespoons butter
1 onion, minced
2 garlic cloves, pressed (or minced garlic)
1 1/2 lbs green beans, trimmed
3 sprigs fresh thyme
2 bay leaves
3/4 cup heavy cream
3/4 cup chicken broth or 3/4 cup vegetable broth

Steps:

  • In a small bowl toss together shallots, 1/4 teaspoon salt, 1/8 teaspoon pepper and 2 tablespoons flour. Set aside.
  • In a skillet heat 3 tablespoon oil over medium high heat; add shallots and cook until golden and crisp (5 minutes).
  • Transfer shallots with the oil to baking sheet lined with paper towels.
  • Wipe out skillet and return to medium high heat, adding remaining oil (2 tablespoons), mushrooms and 1/4 teaspoon salt, cooking stirring until browned (8 - 10 minutes). Transfer to plate and set aside.
  • Wipe out skillet and heat butter over medium heat, adding onion when butter melts, cooking stirring occasionally until edges brown (2 minutes).
  • Stir in garlic and remaining flour (1 tablespoon), green beans, thyme and bay leaves.
  • Stir in cream, broth, increasing heat to medium high, cover and cook until beans are tender (4-5 minutes).
  • Stir in mushrooms, continuing to cook uncovered until beans are tender and sauce thickens (4-5 minutes). Remove from heat.
  • Discard bay leaves and thyme, season with salt and pepper.
  • Transfer to serving dish, sprinkling with reserved shallots.

1 lb green beans, trimmed
2 tablespoons canola oil
2 tablespoons low sodium soy sauce
1 tablespoon sesame oil
1 tablespoon sambal oelek
1 tablespoon brown sugar
2 tablespoons ginger, minced
3 large garlic cloves, pressed
1/2 teaspoon sea salt, to taste
1/2 teaspoon black pepper, to taste
1 teaspoon sesame seeds, for garnish

Steps:

  • Blanch green beans in boiling salted water for 3 to 4 minutes.
  • Using a spider strainer, transfer them to an ice bath; set aside for 5 minutes.
  • Drain beans in a colander before placing them on a single layer on a cutting board lined with paper towels. Pat them dry using more paper towels; set aside.
  • In a bowl, whisk together soy sauce, sesame oil, sambal oelek and brown sugar; set aside.
  • In a wok or a large skillet over medium-high heat, add oil. When hot, add ginger and garlic; sauté for 30 seconds.
  • Add blanched beans and toss constantly for 3 minutes.
  • Pour in the soy sauce mixture and stir to coat; toss continuously for 1 minute.
  • When the sauce starts simmering, season lightly with ground sea salt and freshly ground black pepper. Add sesame seeds and stir to combine.
  • Remove from the heat and serve immediately.

1 cup sour cream
2 (12 ounce) packages frozen French-cut green beans

  • Combine 2 T of the melted butter with the flour. Cook gently.
  • Remove from heat, stir salt, pepper, sugar and sour cream together and fold into cooked green beans.
  • Place in a 2 quart casserole.
  • Cover with cheese and then corn flake crumbs that have been mixed with the remaining butter.

Steps:

  • Heat oven to 350°F In 1 1/2-quart casserole, stir together soup, cheese blend and soy sauce. Stir in green beans, bell pepper and 1 cup of the onions.

50g butter
2 tbsp olive oil
250g chestnut or button mushrooms, sliced
500g green beans, trimmed
50g flour
500ml milk
100g crispy onions

Steps:

  • Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
  • Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
  • Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.
