BEST LEMON SQUARES
I'd lost my family recipe for lemon squares and spent a lot of time trying new ones that would measure up. None did, but thankfully I recently found the recipe again. Best lemon squares out there.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Process 2 cups flour, butter, and 1/2 cup confectioners' sugar in a food processor until mixture resembles coarse crumbs; press into the prepared baking dish.
- Bake in the preheated oven until the edges of the crust are golden brown, 18 to 22 minutes. Cool crust to room temperature.
- Beat white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest together in a bowl using an electric mixer until light and fluffy; pour onto the cooled crust.
- Bake in the oven until custard is set, 25 to 28 minutes. Cool lemon squares completely; dust the top with more confectioners' sugar.

MOM'S LEMON BARS
These are the best lemon bars I've ever had. The key to these is the butter/shortening combo in the crust, you must use both, do not substitute one for the other.

Steps:
- Mix the first 4 ingredients and press into the bottom of a 9x13 pan.
- Bake at 350F for 20 minutes.
- Mix the next 4 ingredients, my mom always uses a little more lemon juice than is called for. Remove pan from oven and pour filling over the top.
- Bake for 25 more minutes or until they start to brown at the edges.
- Sprinkle with powdered sugar when they come out of the oven, cool.
- Cut into squares and serve.

Another of Mom's great recipes. This is one that I haven't tried yet, but I certainly am going to try it soon!! I have to try all the recipes to remember the desserts, it's been so many years since I've had some of them.

Steps:
- BASE: Sift together sugar, flour, baking powder and salt. Add butter and work with fingers until crumbly mixture forms.
- Mix together egg, milk and lemon flavoring.
- Add to flour mixture.
- press in 8-inch well greased pan.
- FILLING:.
- Mix together all ingredients. pour over base.
- Bake in 350F oven for 20-25 minutes or until top is beginning to turn slightly brown.

LEMON SQUARES
The sweetened condensed milk in the lemon topping makes these bars a bit like a lemon cream pie with its layer of smoothness atop a shortbread-like base.

- For the crust: Lightly brush a 9- by 13-inch baking pan with butter. Beat the butter and granulated sugar with an electric mixer in a large bowl until light and fluffy, about 4 minutes. Whisk the flour, cornstarch and salt together in a medium bowl. Slowly add the dry ingredients to the butter and mix just until combined. Evenly press the dough into the prepared pan. Cover and refrigerate at least 1 hour.
- Preheat the oven to 325 degrees F. Pierce the dough all over with a fork. Bake until golden, about 30 minutes. Cool.
- For the filling: Whisk the sweetened condensed milk, granulated sugar, flour, salt, eggs and yolks in a large bowl until thick and light. Lightly whisk in the citrus juices. Pour the filling into the crust. Bake until set but still loose in the center, about 25 minutes. Cool to room temperature, and then refrigerate at least 1 hour.
- Cut into 2-inch squares and just before serving, dust generously with confectioners' sugar.

Steps:
- Mix crust ingredients together.
- Pat mixture into a 9x13-inch pan.
- Bake 20 minutes at 350°F.
- While crust is baking, combine these filling ingredients first: beaten eggs, sugar, and lemon juice.
- Gradually add flour and baking powder to the mixture.
- Mix well until "frothy".
- Immediately after taking crust out of oven, pour in filling.
- Bake 20-25 minutes at 350°F
- Tip: Watch filling at 20 minutes - it should turn a little brown spotted on top, but not a lot.
- Sprinkle with powdered sugar when cool.

- In a medium bowl, use an electric hand mixer to blend together softened butter, 2 cups flour and 1/2 cup powdered sugar. Mix for about 3 minutes until the mixture resembles coarse crumbs. Press into the bottom of an ungreased 9" x 13" inch pan. Bake for 18 to 20 minutes or till lightly golden at edges.
- While base layer is baking prepare the topping. In medium sized mixing bowl, whisk eggs well. Add 2 cups granulated sugar and 1/4 teaspoon salt and whisk to combine. Whisk in lemon juice and lemon zest (if using). Finally, whisk in 1/4 cup flour until well incorporated. Pour over the warm, baked crust. Return to the oven for an additional 18 to 20 minutes at 350 degrees until topping appears to be set and is just beginning to lightly brown.
- Allow to cool completely then sprinkle surface liberally with powdered sugar. Cut into serving sized pieces and store in an airtight container.
