16 oz orzo ((454g))
10 oz cherry tomatoes (chopped (about 1 ½ cups))
3 mini cucumbers (chopped (about 1 ½ cups))
½ red onion (chopped, soaked in water for 10 minutes, then drained)
1 large bell pepper (chopped (red, green, or half of each))
½ cup chopped fresh parsley and mint *see note
1 cup Kalamata olives (chopped (about 4.7oz))
4 oz feta cheese (crumbled)
For the lemon vinaigrette:
2 tablespoons lemon juice
2 tablespoons red wine vinegar
½ cup extra virgin olive oil
½ teaspoon dried oregano
Salt to taste
Optional: 1-2 cloves garlic (finely minced)

Steps:

  • Cook and drain the orzo: Bring a large pot of salted water to a boil over high heat. Add the orzo, and cook, stirring occasionally, for 7-8 minutes, or until al dente. Drain and rinse under cold water until cooled. Drain again and put into a large mixing bowl.
  • Make the vinaigrette dressing: Combine the dressing ingredients in a jar and shake to combine.
  • Mix all the ingredients: Toss the orzo, the veggies and herbs, the dressing, and the crumbled feta and olives together.
  • Chill: Refrigerate for an hour or two to chill the salad and infuse the flavors or serve right away.

2 teaspoons lemon zest (1 lemon)
6 tablespoons freshly squeezed lemon juice (2 to 3 lemons)
1 medium clove garlic, grated
1/2 cup extra-virgin olive oil, plus more as needed
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 large red, yellow or orange bell pepper, diced
1/2 large seedless English cucumber, watery pulp scooped out and discarded, diced (about 1 1/2 cups)
1/2 medium red onion, finely chopped (about 3/4 cup)
1 (15.5-ounce) can chickpeas (garbanzo beans), rinsed and drained
1 cup pitted and halved Kalamata olives
1 cup roughly chopped walnuts
1/4 cup finely chopped fresh mint
3 tablespoons finely chopped fresh Italian flat-leaf parsley
3 tablespoon kosher salt
1 pound dried orzo
6 ounces brine-packed Greek feta, crumbled (optional)

Steps:

  • To make the dressing, in a small mixing bowl, whisk together the lemon zest and juice, garlic, 1/2 cup olive oil, 2 teaspoons of salt and 1 teaspoon of pepper. Set the dressing aside.
  • To make the salad, combine the bell pepper, cucumber, onion, chickpeas, olives, walnuts, mint and parsley in a large mixing bowl.
  • Meanwhile, bring a large pot of water to a boil. Stir in 3 tablespoons of salt and a small splash of olive oil. Add the orzo and cook for 7 to 9 minutes, or according to the directions on the package. Drain the orzo in a colander, then add it to the vegetable mixture while the orzo is still hot. Immediately pour the dressing onto the orzo and vegetables, and stir to combine. The hot orzo will readily absorb the dressing. Add a splash more olive oil if the salad seems too dry. Allow the salad to cool to room temperature, and add the feta, if desired. Cover and refrigerate for 1 to 2 hours.
  • Give the salad a stir, then taste and adjust the seasoning before serving, if need be.

1 large cucumber, peeled and diced into large pieces
8 ounces feta cheese, cubed
8 ounces black olives, sliced
1 pint grape tomatoes, halved
1 small red onion, finely chopped
4 tablespoons parsley, well chopped

1/4 cup red wine vinegar
3/4 tablespoon oregano

Steps:

  • In large bowl, combine cucumber, feta, black olives, tomatoes & parsley.

12 ounces marinated artichoke hearts (2 - 6 ounce cans)
1 tomatoes, seeded and chopped
1 cucumber, seeded and chopped

2 ounces black olives, drained (2 ounce can)
1/4 cup parsley, chopped

6 ounces uncooked orzo pasta
3 tablespoons finely chopped red onions
3 tomatoes, seeded and chopped
2 tablespoons chopped fresh basil
2 tablespoons finely chopped kalamata olives
2 tablespoons capers (the small ones)
1 teaspoon grainy mustard (such as Maille)
6 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
salt (to taste)
pepper (to taste)
4 ounces feta cheese, crumbled

Steps:

  • Boil Orzo pasta in water until al dente.
  • Drain and allow to cool.
  • Mix the pasta with the onion, tomato, basil, olives, and capers.
  • In a small bowl whisk together the mustard and lemon juice.
  • Gradually whisk in the oil until it forms an emulsion.
  • Add in the oregano, salt and pepper.
  • Pour over the pasta mixture and toss to coat.
  • Chill in the refrigerator until cold.

This is a more exciting spin on a side dish I had at a restaurant once. I eat this for lunch all by itself! If you're serving this to a group of people, since everyone likes their salad a little differently, I suggest having a small bowl of crumbled Feta, some lemon juice, and a small bowl of chopped Kalamata olives. That way everyone can change it up and customize it!

1 cup dry orzo pasta
1 cup roma tomato, finely diced
1 cup cucumber, finely diced
1/2 cup kalamata olive, chopped
3/4 cup red onion, finely chopped
1 cup feta cheese, crumbled
1/4 cup Italian parsley, chopped
1 tablespoon extra virgin olive oil
2 tablespoons lemon juice (FRESH!)
salt and pepper

Steps:

  • -Put a large pot on to boil. Once it reaches a boil, salt the water generously.
  • -While you're waiting for the water to boil; chop your vegetables and parsley, crumble your Feta (unless you bought it pre-crumbled, I do), and juice your lemons. (You could also do this beforehand but I'm a huge multitasker).
  • -Boil the orzo for 5-7 minutes, make sure to pay attention to it's doneness because if you overcook it the salad won't have the correct texture.
  • -Once the orzo is soft all the way through, shock it in ice-water, drain and put in a large mixing bowl.
  • -Add the extra virgin olive oil and immediately stir it in well so the orzo doesn't stick to itself.
  • -Add all of the vegetables, feta cheese, lemon juice (sparingly at first, make sure you don't make it too lemony; you can add more later!), parsley and a dash or salt and pepper. Stir well to combine everything evenly.
  • -Put the salad into a sealable container or cover the top of your bowl with plastic wrap. Place in the refrigerator and let sit for at least an hour!
  • -This should stay good for 3-5 days! Enjoy!

1 cup cut fresh green beans, cooked
2 large tomatoes, seeded and chopped
