Steps:

  • Chop 1 English cucumber. Sprinkle with 1 teaspoon kosher salt; let sit 10 minutes. Whisk 1 tablespoon rice vinegar, 2 teaspoons each sugar and soy sauce, 1/2 teaspoon sesame oil, 2 sliced scallions, 1 minced garlic clove and a pinch of red pepper flakes in a large bowl. Drain the cucumber and toss with the dressing; season with salt. Top with chopped cilantro.

3 large cucumbers - sliced lengthwise, seeds scooped out, and cut into 1/2-inch thick half rounds
2 teaspoons salt
1 tablespoon soy sauce
1 tablespoon white sugar
3 cloves garlic, thinly sliced
2 teaspoons rice vinegar
1 ½ teaspoons toasted sesame oil
1 teaspoon hot chili oil
½ teaspoon red pepper flakes

Steps:

  • Place cucumbers into a colander, sprinkle with salt, and let drain at least 30 minutes. Shake off excess liquid but don't rinse the cucumbers.
  • Whisk soy sauce, sugar, garlic, rice vinegar, sesame oil, hot chili oil, and red pepper flakes in a salad bowl. Stir in cucumbers to coat with dressing. Chill 2 to 3 hours before serving.

1/2 cup rice vinegar
2 tablespoons sugar
2 tablespoons fresh lime juice
2 tablespoons fresh ginger, minced
1 red chili pepper, minced (1 1/2 tablespoons)
1 tablespoon toasted sesame oil
3 cucumbers, peeled, seeded, and cut crosswise into 1/4-inch slices (looks like a 1/4 moon)
4 scallions, white and light green parts, sliced thin
1/4 cup packed fresh basil leaf, chopped
table salt & fresh ground pepper

Steps:

  • Bring vinegar and sugar to boil in saucepan over medium-high heat. Reduce heat to medium-low and simmer until mixture reduces by half, 5 to 6 minutes. Transfer to medium bowl and cool to room temperature.
  • Whisk in lime juice, ginger, chile, and sesame oil. Toss in cucumbers, scallions, and basil; season with salt and pepper, and let sit for 10 minutes or up to 1 hour. Serve.

1 1/2 teaspoons dry wasabi (or to taste)
2 cucumbers
2 tablespoons rice wine vinegar or 2 tablespoons distilled white vinegar, mixed with 1 tbsp water
2 teaspoons sugar
1 teaspoon sesame oil
salt and black pepper, freshly ground
1 green onions or 2 scallions, thinly sliced
1 tablespoon black sesame seeds or 1 tablespoon sesame seeds (toasted white)

Steps:

  • Mix the wasabi with 1/2 teaspoon warm water in the bottom of a mixing bowl and let it stand for 5 minutes.
  • Peel the cucumbers, cut each one in half lengthwise, and use a melon baller or spoon to scoop out the seeds.
  • Cut the cucumbers widthwise into 1/4-inch crescents.
  • Add the vinegar and sugar to the wasabi and whisk until smooth.
  • Whisk in the sesame oil, salt, and pepper.
  • Just before serving, add the cucumbers, green onion, and sesame seeds to the dressing and mix well.

2 English cucumbers
1/2 medium red onion, chopped
1 -2 jalapeno pepper, seeded and chopped
3 tablespoons fresh lime juice
1 tablespoon soy sauce
1 tablespoon sesame oil
1/4 cup chopped unsalted dry roasted peanuts, for garnish (optional)

Steps:

  • Cut cucumbers in half lengthwise and remove seeds.
  • Slice the cucumbers thinly
  • Place cucumbers, onions and chillies in a bowl
  • Combine remaining ingredients (except the peanuts) and drizzle over the salad
  • Toss well, (at this point you may place the salad in the fridge for an hour or so but I like to finish it and serve at once)
  • Garnish with the peanuts & serve.

  • When I made this today it was about 97 degrees outside, and I chilled the cucumbers for about 15 minutes in the fridge before tossing them together. I served the salad with a mildly sweet plum wine we bought while in Chengdu. The dish is light, cooling, and tasty!
