CHIPOTLE STEAK (COPYCAT)

This copycat Chipotle Steak recipe tastes even better than the real thing. The marinade is quick and easy and full of the smoky, spicy flavors you love!

3 cloves garlic
2 tablespoons adobo sauce ((see note 1))
2 tablespoons ancho chile powder ((see note 2))
2 tablespoons olive oil (or rice bran oil, plus more for the cooking surface (see note 3))
2 teaspoons ground cumin
2 teaspoons dried oregano ((see note 4))
Salt and freshly ground black pepper
4 pounds steak (such as sirloin, round steak, or flat iron steak (see note 5))

Steps:

  • To make the marinade, in the bowl of a food processor or blender, add garlic, adobo sauce, ancho chile powder, olive oil, cumin, dried oregano, 1 tablespoon salt, and 1 teaspoon pepper. Blend until smooth (add water if needed to fully blend the marinade).
  • In a large zipper-top plastic bag or bowl, add steak and marinade, tossing to coat. Let the beef marinate at room temperature for 30 minutes or up to 12 hours in the refrigerator. Bring to room temperature for at least 30 minutes before cooking.
  • In a large skillet over medium-high heat, heat 2 tablespoons olive oil until shimmering. Add marinated steak to the skillet and cook, stirring occasionally, until the temperature reaches 135 degrees for rare or 145 degrees for medium-rare. Depending on the size of your skillet, you can cook the steak in batches.
  • Remove to a cutting board and tent with foil for 10 minutes. Chop into small pieces. Season to taste with salt. Serve with your favorite burrito toppings such as rice, beans, guacamole, and salsa.

1 beef flank steak (about 1-1/2 to 1-3/4 pounds) or 1 beef top round steak, cut 1 inch thick (about 1-3/4 pounds)
salt
1/3 cup fresh lime juice
1/4 cup chopped fresh cilantro
1 tablespoon packed brown sugar
2 teaspoons minced chipotle chiles in adobo
2 tablespoons adobo sauce (from chilies)
2 garlic cloves, minced
1 teaspoon freshly grated lime peel

Steps:

  • Combine marinade ingredients in small bowl; mix well. Place beef steak and marinade in food-safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight.
  • Remove steak from marinade; discard marinade and salt to taste. Place steak on grid over medium, ash-covered coals. Grill flank steak, uncovered, 17 to 21 minutes for medium rare to medium doneness (top round steak 16 to 18 minutes for medium rare doneness; do not overcook), turning occasionally. Carve steak across the grain into thin slices.

I found this recipe on Epicurious, and it really caught my eye. I love the way the chipotles give the stew a light smokiness. It's almost as if it were prepared over a campfire. And of course, anything spicy is definitely good!

1 1/2 lbs boneless chuck roast, trimmed and cut into 1 inch cubes
salt (to taste)
fresh ground black pepper (to taste)
2 -3 tablespoons vegetable oil
1 medium onion, coarsely chopped
2 -3 cloves garlic, minced
1 teaspoon ground cumin
1 (14 1/2 ounce) can tomato puree
1 -2 canned chipotle chile
1 -2 tablespoon adobo sauce (from canned chipotle chiles)
1/2 cup beef stock or 1/2 cup water
1 (15 1/2 ounce) can hominy, rinsed and drained
flour tortilla (optional)

Steps:

  • Season beef to taste with salt and pepper.
  • Brown beef on all sides in oil in a large skillet, but do not overcrowd pan.
  • Add onion, garlic and cumin to skillet.
  • Cook, stirring, until onion is tender, about 5 minutes.
  • Add tomato puree, chipotles, adobo sauce, and stock or water to meat, mixing well.
  • Simmer, stirring occasionally, over low heat, until meat is tender, about 1 1/2 hours (if stew starts to dry out just add some beef stock or water).
  • Add hominy to pan and cook for 15 minutes more, or until dish is heated through.
  • Check dish for salt and pepper, if needed.
  • Serve in bowls with warmed flour tortillas, if desired.

We like it chili-y! To make this slightly less healthy, which (evidently) is my eternal quest, make sure to add lots of cheddar cheese and sour cream. And avocado. And onion. And a big glass of milk. *murp* And maybe, on the side, a timely appointment in the cardiac department. No, seriously, it's not that unhealthy.

1 1/2 lbs beef shoulder top boneless blade steaks (I use top sirloin) or 1 1/2 lbs flat iron steaks (I use top sirloin)
1 tablespoon canola oil
2 cups chopped onions
1 cup chopped green sweet pepper
4 garlic cloves, minced
2 (15 ounce) cans pinto beans (I mixed kidney and pintos) or 2 (15 ounce) cans black beans, rinsed and drained (I mixed kidney and pintos)
1 -2 teaspoon chopped chipotle chile in adobo
1 (15 ounce) can tomato sauce
1 (15 ounce) can diced tomatoes, undrained
1/2 cup water, drained (HA! Fooled ya! Don't drain. ,o)
4 tablespoons chili powder
1 teaspoon dried basil, crushed
1/2 teaspoon black pepper
shredded cheddar cheese (optional)
sour cream (optional)
chopped onions (optional) or scallion (optional)
avocado, slices (optional)

Steps:

  • Cut beef into ¾" cubes.
  • In a 4-quart Dutch oven, brown meat, half at a time, in 1 tablespoon hot cooking oil.
  • Remove meat, reserving drippings in pan.
  • Cook onion, sweet pepper and garlic in drippings until tender; drain fat.
  • Return meat to Dutch oven. Stir in chipotle chili peppers in adobo sauce.
  • Stir in beans, tomatoes, tomato sauce, water, chili powder, basil and black pepper.
  • Bring to boiling; reduce heat.
  • Simmer, covered, about 1 hour or until the meat is tender.

1/2 lb. beef sirloin steak, grilled, thinly sliced
1/2 cup rinsed canned pinto beans
1 Tbsp. chopped canned chipotle peppers in adobo sauce
4 flour tortillas (10 inch)

Steps:

  • Microwave VELVEETA in microwaveable bowl on HIGH 1 to 2 min. or until VELVEETA is completely melted, stirring every 30 sec. Add meat, beans and peppers; mix well.
  • Heat large heavy nonstick skillet on medium-high heat. Spoon about 1/2 cup meat mixture onto half of 1 tortilla; fold in half. Add to skillet; cook 1 min. on each side or until filling is heated through and quesadilla is golden brown on both sides. Remove from skillet. Repeat with remaining tortillas and filling.
  • Cut into wedges.

1/2 cup chipotle chile in adobo
1 large lime, juice of
2 teaspoons dried oregano
1 tablespoon chili powder
3/4 cup dark beer
1/4 cup olive oil, plus extra for pan
2 lbs flank steaks
1 red bell pepper, sliced (more if desired)
1 poblano pepper, sliced (more if desired)
1 medium red onion, sliced (more if desired)
salt and pepper
12 flour tortillas (6-8 inch)
sour cream
salsa
shredded cheese
guacamole

Steps:

  • In work bowl of a food processor, combine garlic and chilies; pulse to form a chunky paste.
  • Add lime juice, oregano, chili powder, beer and olive oil. Pulse to combine.
  • Place steak in a shallow dish or large zip-top plastic bag. Add marinade and turn to coat. Cover and refrigerate for at least 3 hours or overnight.
  • Heat grill to medium-high. Brush excess marinade from steak and season well with salt and pepper. Grill until medium-rare to medium. Set aside and let rest, covered loosely with foil, for 10 minutes before slicing.
  • Meanwhile, heat a large sauté pan over high heat. Add enough oil to lightly coat pan.
  • When oil is hot, add peppers and onion; season with salt and pepper. Cook quickly, stirring constantly, until vegetables are just softened and starting to brown. Remove from heat.
  • Cut steak into thin slices across grain. Top with peppers and onion.
  • Serve with tortillas and your favorite toppings.

  • Pat beef dry and season with salt and pepper. salt and black pepper, to taste
1 large onion, peeled and sliced into thin rings
1 medium green bell pepper, seeds removed and sliced into thin rings
1 cup ketchup
1/2 cup water
2 tablespoons olive oil
1 tablespoon Worcestershire sauce
2 teaspoons garlic, minced
2 teaspoons dried oregano
1 teaspoon celery seed, crushed slightly

Steps:

  • Place beef in bottom on a 9x13 baking dish. Sprinkle both sides with salt and pepper.

  • In a bowl, mix together the ketchup, water, olive oil, Worcestershire sauce, garlic, oregano, celery seed and ground chipotle chile.
  • Pour the sauce over the beef and vegetables, trying to cover beef as much as possible.

  • Serve beef with roasted vegetables on top, and spoon more pan sauce over each serving if you like.
