GREEK FRIES

Greek Fries image

I used to get these fries at cheap little Greek restaurants. When I moved, however, no place served them anymore. So I started experimenting and found it was quite easy to make them on my own. These are a simple and delicious way to do fries.

AIR FRYER LOADED GREEK FRIES

Air Fryer Loaded Greek Fries image

Air-fried french fries loaded with Greek flavors. These are great on their own but also pair nicely with lamb, steak, or chicken. Cheese is a must for loaded fries but since feta doesn't melt, I incorporated it into the tzatziki sauce.

GREEK FRENCH FRIES

Greek French Fries image

The smell of these babies frying in extra virgin olive oil reminds me of my childhood days in Kefalonia. The aroma would perfume the whole village when my yiayia would fry these potatoes. Back when I was a little girl in the 80's, Greeks were still only using extra virgin olive oil, even for frying. Nowadays, it's a bit different in Greece with cheaper oils readily available. You can use corn oil if you want to make these often, but you have to do it at least once with extra virgin olive oil. Don't be cheap.

Provided by Kefalonitissa

Categories     Potato

Time 25m

Yield 2 serving(s)

Number Of Ingredients 6

4 yukon gold potatoes, sliced as you desire
2 -3 cups extra virgin olive oil (or if you wanna deep fry them in that expensive liquid, use more)
salt
Greek oregano
pecorino romano cheese or kefalotiri
1/8-1/4 fluid ounce lemon juice

Steps:

  • In a large skillet, heat the olive oil. To test when it's ready, use the handle on a wooden spoon by placing it erect in the oil. If bubbles start forming around it, you know it's ready.
  • Add the potatoes, being careful not to crowd them. If you put too many, the temperature of the oil will drop, and they will come out mushy. Fry them in batches instead.
  • Once golden brown, remove and place on paper towels.
  • Season with salt, pepper, and oregano.
  • Add some grated cheese if you wish. Just remember not to salt the potatoes too much if you add the cheese.
  • A few drops of lemon juice on top is a must for my Greek taste buds.

  • To make this super easy Greek fries recipe, start by preparing the potatoes. Wash and peel the potatoes and cut into strips. At first slice the potatoes lengthwise into 1/2 cm (1/4 inch) slices and then cut each slice into strips. Place the potatoes in a large bowl with plenty of water to cover them.
  • Now it’s time to make a decision. Greek fries can be either fried or baked (for a healthier version).
  • If you choose to bake your Greek fries, then layer a large baking tray with parchment paper and pour in 2-3 tbsps of olive oil. Place the tray in the oven and preheat at 200C.
  • As soon as your oven is well preheated, drain and dry the potatoes and remove the baking tray from the oven. Place the potatoes on the baking sheet and season with salt and dried oregano. Toss the potatoes around to get them coated with the oil (add some more oil if necessary) and layer them evenly on the baking sheet.

  • Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
  • (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible. See the video for full instructions!
  • Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.
  • Add the fries to a dry bowl and toss them with the olive oil, Greek seasoning and kosher salt. Line two baking sheets with parchment paper. Spread the fries in straight lines on the paper, placing them as far apart as possible.

  • Peel the potatoes and cut in long pieces, don’t try to make them perfectly shaped. Soak them in a bowl of water for at least an hour. Drain and place them in a bowl, salt them and mix them with your hands so that all pieces are covered.
  • In a pot or pan that has enough space for the potatoes in one layer, add some olive oil, about an inch high.
  • Heat the olive oil on medium heat, once the oil starts making sizzling noises (I measured a temperature of about 330 F) you add the potatoes. Fry the potatoes at this temperature for about 5 minutes. Stir gently a few times so that the potatoes do not stick. After that, lower the heat and continue frying for another 5 minutes and then raise the heat slightly and fry for 2-3 minutes more until you have a golden color.
  • Place a plate with paper towels and remove the fries with a slotted spoon and place them on the napkins. Place another napkin on top to absorb any oil.
