FARFALLE WITH CHICKEN AND MUSHROOMS



Farfalle with Chicken and Mushrooms image

This tasty recipe for Farfalle with Chicken, Mushrooms and Sherry Cream Sauce is simple enough for a weeknight meal, yet elegant enough to serve for company or a Sunday dinner with family.

Number Of Ingredients 12

1-1/4 lbs boneless (skinless chicken breasts (4 pieces))
8 ounces farfalle (you can substitute penne or rotini if you like)
1/2 cup flour
Salt and freshly ground black pepper
Olive oil
1 cup onion (chopped)
8 ounces crimini mushrooms (sliced)
4 cloves garlic (minced)
1/4 cup sherry (or Marsala)
3/4 cup low-sodium chicken broth
1/3 cup light cream or half-and-half
2 tablespoons fresh parsley (chopped)

Steps:

  • Put a pot of salted water on to boil for the pasta.
  • If your chicken breasts have tenderloins attached, remove them and set aside. Place each piece of chicken between 2 sheets of plastic wrap and gently pound to an even thickness of about 1/2-inch.
  • Combine the flour, 1 teaspoon of salt and a few grinds of black pepper in a zip-top plastic bag. Slice the chicken breasts (and tenderloins) crosswise into 3/4-inch strips, transfer them to the bag and shake until coated with the seasoned flour. Set aside.
  • Heat 2 tablespoons of olive oil in a large frying pan over medium heat. Add the onion and sauté until softened, 2 to 3 minutes. Add the mushrooms and minced garlic and continue cooking until the mushrooms are lightly browned, 4 to 6 minutes longer. Season to taste with salt and pepper, then transfer to a bowl and set aside.
  • While the onions and mushrooms are sautéing, cook and drain the pasta according to package directions. Return the pasta to the pot, drizzle with a little olive oil and set aside.
  • Return the pan you cooked the mushrooms in to the stove over medium-high heat and add 2 more tablespoons of oil. Add the chicken strips, a few at a time, shaking off any excess flour first.
  • Cook the chicken, turning often, until the strips are barely golden on the outside, 2 to 3 minutes total.
  • Deglaze the pan with the sherry, scraping up any browned bits that may have accumulated on the bottom of the pan.
  • Stir in the chicken broth and bring the mixture to a simmer. Cook until the sauce begins to thicken, 2 to 3 minutes, then return the mushroom mixture to the pan and combine.
  • Stir in the cream and parsley, cook for an additional minute, combine with the pasta and serve immediately.

SPINACH, WALNUT AND GOLDEN RAISIN PESTO PASTA WITH ITALIAN CHICKEN SAUSAGE



Spinach, Walnut and Golden Raisin Pesto Pasta with Italian Chicken Sausage image

4 chicken Italian sausage links
2 cloves garlic
1 pound farfalle pasta
1 cup toasted walnut halves
3 cups baby spinach
2 cups fresh basil
1 cup grated Pecorino-Romano or Parmesan
3/4 cup extra-virgin olive oil
1/4 cup golden raisins
1 teaspoon kosher salt, plus more if needed
1/2 teaspoon freshly cracked black pepper, plus more if needed
Zest and juice from 1 lemon

Steps:

  • Preheat a grill or grill pan to medium-high heat. Grill the sausages, covered with a medium heatproof bowl, until nice and charred and no longer pink on the inside, flipping once, 6 to 8 minutes per side. Transfer to a cutting board, let cool slightly, then slice on the bias. Set aside.
  • Meanwhile, bring a large pot of water to a boil. Poach the garlic cloves in the boiling water for 5 minutes, then transfer them with a slotted spoon to a food processor. Add the pasta to the boiling water and cook to al dente according to the package directions.
  • Meanwhile, add the walnuts to the food processor with the garlic and pulse until chopped, about 8 times. Add the spinach, basil, cheese, olive oil, raisins, salt, pepper and lemon zest and juice. Pulse about 10 times, until combined but still rustically chopped. Season with additional salt and pepper if needed.
  • Heat a large skillet over medium heat. Using a spider, add the pasta to the skillet. Add the spinach pesto and toss to combine. Heat until warmed through. Season to taste if necessary and serve immediately topped with grilled sausage slices.

We developed this recipe after we had something similar at an upscale Italian Restaurant. We made it the way we like it. It is simple, the kids love it and you can play with the ingredients to your liking.

10 chicken sausage (Asiago, spinach and chicken sausage from Sam's Club) or 10 Italian sausages, if you can't find the other
1 1/2 large onions, diced
6 fresh garlic cloves, crushed
2 large tomatoes, diced
16 ounces farfalle pasta
2 ounces fresh basil
4 ounces of kraft shredded parmesan cheese, romano and Asiago cheeses (if you can find all in one, otherwise use what you have)
1 quart half-and-half cream
garlic salt
shallot salt (Penzey's)
roasted garlic seasoning (Tones Brand)
red pepper flakes
black pepper

Steps:

  • Slice and Fry Sausage in the listed spices, as much as you like.
  • Cook noodles until el dente.
  • Fry onions and garlic, with some of the above spices in olive oil until onions are just translucent.
  • Turn off onions and gently mix in tomatoes. You do not want to cook the tomatoes.
  • Mix together the sausage, onion mixture, cheese(s), basil,cream and noodles. Cook gently over med high heat. You may not want to add all the cream at once. Cook for a little and then adjust the amount of cream to your liking.
  • Adjust the spices and add more as you need it. serve and enjoy.

I was searching for a copycat recipe for the Cheesecake Factory's similar dish and found this. It looks promising so I'm posting it here to get some opinions and to save it for myself.

1/2 lb bow tie pasta
2 tablespoons olive oil
2 -3 slices pancetta, chopped in small pieces
1/2 cup chopped onion
1/2 cup button mushroom
1/2 cup chopped roasted red pepper
1/2 cup seeded and chopped tomato
1 cup milk
1/2 head roasted garlic, paste
3 ounces cream cheese
1/2 cup grated parmesan cheese
2 fresh sage leaves, chopped fine
salt and black pepper (according to taste)
1/2 cup frozen green pea, thawed

Steps:

  • Boil pasta according to instructions on box drain and set aside. save 1/2 cup pasta water and discard rest.
  • Add oil to heated pan. Add Pancetta to the oil and let it render and get crispy a little for a couple of minutes on medium heat. Take pancetta out (leave oil in the pan) of pan and set aside.
  • Add onions to the skillet and caramelize them over low to medium heat.
  • Add mushrooms to caramelized onions and increase the flame to medium high. Sauté the mix for about 30 seconds.
  • Add red peppers and tomatoes to the mix and flip the mixture for about 20-30 seconds seconds until mixed well.
  • Add milk to the mix and bring it to simmer. Lower the heat and add roasted garlic paste to the mix and incorporate well.
  • Add cream cheese and parmesan to the mix and mix well -- let it simmer until cream cheese, garlic, and parmesan is mixed well into milk forming smooth sauce.
  • Add sage, salt and pepper (to taste) to the sauce and mix well. Add peas and pasta to mix and cook in the pan for a minute or so until pasta is well coated.
  • Add pancetta to the pasta and serve. (Use pasta water to thin the sauce if it gets too thick).

6 ounces bow tie pasta
2 teaspoons butter
1 cup chopped onion
2 cups sliced mushrooms
2 cups skim milk
1 tablespoon cornstarch, plus
1 teaspoon cornstarch
1 tablespoon chicken bouillon granule
3/4 teaspoon salt
1/4 teaspoon ground pepper
2 cups chicken breasts, cooked and cut into bite-size pieces
1/2 cup frozen peas
2 tablespoons parmesan cheese

Steps:

  • Cook pasta. Spray 2 quart casserole with Pam.
  • Saute onion and mushrooms in butter until lightly browned. Remove from pan. Add milk to same skillet. Add bouillon and cornstarch. Mix well. Cook over medium heat, stirring often, until sauce thickens. Season with salt and pepper. Add pasta, vegetable mixture, chicken and peas. Mix to combine.
  • Place mixture in cassserole. Sprinkle with parmesan cheese. Bake in 350 oven for 25-30 minutes.

1/2 cup extra virgin olive oil
1 lb Italian turkey sausage, casings removed
10 ounces cremini mushrooms, chopped
10 ounces frozen peas, thawed
1 lb farfalle pasta (bowtie)
1/2 cup parmesan cheese, freshly grated
3/4 teaspoon salt (plus more to taste)
3/4 teaspoon black pepper (plus more to taste)

Steps:

  • In a large saute pan, heat 2 tablespoons of the oil over a high flame. Add the turkey sausage and saute until golden brown, breaking up any large clumps, for about 5 minutes. Using a slotted spoon, transfer the sausage to a plate and set aside.
  • Heat 2 more tablespoons of oil in the same pan. Add the mushrooms and 1/2 teaspoon each of salt and pepper. Saute until all the liquid from the mushrooms has evaporated, about 8 minutes. Add the peas and saute for 2 minutes.
  • Return sausage to the pan and cook until the sausage is heated through and the flavors have blended, about 3 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the farfalle and cook, stirring occasionally, until al dente, about 8 minutes. Drain the pasta and reserve 1/2 cup of the cooking water.
  • Return pasta to pot and add the meat mixture. Toss over medium heat to combine and heat through, adding enough of the reserved cooking water to moisten, about 5 minutes.
  • Drizzle in the remaining oil. Season the pasta with more salt and pepper to taste. Remove the pan from the heat and add Parmesan cheese and toss to combine. Transfer pasta mixture to large bowl and serve.

This is rich and delicious, but not too heavy. My whole family loves it! I use some pureed carrots to sweeten the sauce a bit. If it suits your taste and you don't have those available, you can put a teaspoon or two of sugar in if you like. If you can't find lamb sausage, you can use ground lamb mixed with lamb sausage seasoning (typically fennel, mint, garlic, salt and pepper).

1 yellow onion, chopped
2 garlic cloves, chopped
2 tablespoons olive oil
1 lb lamb sausage, cut into 1-inch pieces
