A family favorite my uncle makes. They are a wonderful balance between salty and sweet, with a combination of crispy, chewy, and crunchy textures. My family destroys a tray of these in fifteen minutes.

20 wooden toothpicks
¼ cup reduced-sodium soy sauce
½ teaspoon ground ginger
¾ cup dark brown sugar
20 dates, pitted and left whole
20 whole smoked almonds
10 bacon slices, cut in half crosswise

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Soak the toothpicks in a bowl of water. Grease a 9x13-inch baking dish.
  • In a bowl, mix together the soy sauce and ground ginger. Place the brown sugar into a shallow bowl. Spread open a pitted date, then stuff it with a smoked almond. Wrap the date with half a bacon slice, secure it with a toothpick, dip the bundle in soy sauce mixture, and then dip it into brown sugar. Place the wrapped dates into the prepared baking dish. If desired, sprinkle a little more brown sugar over the bundles.
  • Bake in the preheated oven until the bacon is brown and crisp, 15 to 25 minutes. Allow to cool for about 15 minutes before serving; serve warm or at room temperature.

24 large dates, pitted
12 slices bacon, halved crosswise
1/3 cup crumbled Stilton cheese

Steps:

  • Preheat oven to 400 degrees. Place 24 toothpicks in a small bowl filled with water; let soak 15 minutes. Line a baking sheet with parchment paper and fit with a wire rack; set aside.
  • Halve dates lengthwise being careful not to cut all the way through. Place a small amount of cheese in the center of each date. Wrap a piece of bacon around each date. Secure bacon with a toothpick.
  • Place dates on prepared baking sheet. Bake until bacon is cooked through, 20 to 25 minutes.

1 (8-ounce) package whole dates (pitted)
1/2 cup Asiago cheese (cubed)
8 to 10 slices bacon (each cut crosswise into thirds)

Steps:

  • Gather the ingredients.
  • Cut a small slit in the side of each date. There may already be a slit since the dates have been pitted.
  • Carefully push a piece of the cheese into the date.
  • Smooth the date back around the cheese if you can. Handle the dates gently because they are fragile.
  • Wrap one of the pieces of the bacon around each stuffed date, covering the cheese, and secure with a toothpick if necessary.
  • Place all of the stuffed and wrapped dates on broiler pan with a rack.
  • Preheat oven broiler. Broil the bacon-wrapped dates 4 to 6 inches from the heat source for 9 to 12 minutes, turning twice during the cooking time, until the bacon is crisp; don't let it burn. Let stand for 5 minutes, then serve.

A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

16 medium Medjool dates, pitted
Black pepper (optional)

Steps:

  • Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
  • Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
  • Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.

1/2 cup goat cheese
1 lb thin cut bacon (10 slices)

Steps:

  • If the dates still have pits, slice carefully down along the length of the date. Open it and remove the pit. Discard.
  • Spoon 1/2-1 teaspoon goat cheese into the middle of each date and pinch together to close. It's okay if some filling is sticking out, it doesn't need to be completely sealed.
  • Cut the bacon slices in half and wrap one half slice to around a date (the bacon ends should slightly overlap). Repeat nineteen more times.
  • Preheat the oven to 400 F. Place bacon wrapped dates in a cast iron pan seam side down.
  • Fry over medium high heat for 3-4 minutes, until the bacon shrinks and seals itself around the dates. Flip and fry another 2-3 minutes until it has a bit of colour.
  • Flip dates back over and transfer pan to the oven. Bake at 400 degrees until bacon is cooked to your liking and goat cheese is gooey. This should take approximately 12-15 minutes.

  • Preheat the oven to 400 degrees F. Cover a metal rimmed baking sheet with foil, dull side up, and fit with a baking/cooking rack; spray with non-stick spray.
  • Using kitchen scissors insert the lower blade of the scissors into the pitted area of the date (see photos) and cut a vertical opening (note: a paring knife can also be used but do not cut through the entire date, just one side). Inset an almond into the cavity.
  • Holding the date together, wrap 1/2 slice of bacon around the date (will will wrap around twice) and secure the end of the bacon with a wooden toothpick.
  • Place the Devils on Horseback on the prepared baking sheet leaving room between them. Bake in the middle of the oven for 30 minutes or until the bacon is done to your liking. The bacon will crisp further when out of the oven. The broiler can be turned on for a few minutes at the end if crisp bacon is desired however leave the pan in the middle of the oven and watch closely. Serve hot.
