DEVILS ON HORSEBACK
A family favorite my uncle makes. They are a wonderful balance between salty and sweet, with a combination of crispy, chewy, and crunchy textures. My family destroys a tray of these in fifteen minutes.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Soak the toothpicks in a bowl of water. Grease a 9x13-inch baking dish.
- In a bowl, mix together the soy sauce and ground ginger. Place the brown sugar into a shallow bowl. Spread open a pitted date, then stuff it with a smoked almond. Wrap the date with half a bacon slice, secure it with a toothpick, dip the bundle in soy sauce mixture, and then dip it into brown sugar. Place the wrapped dates into the prepared baking dish. If desired, sprinkle a little more brown sugar over the bundles.
- Bake in the preheated oven until the bacon is brown and crisp, 15 to 25 minutes. Allow to cool for about 15 minutes before serving; serve warm or at room temperature.

- Preheat oven to 400 degrees. Place 24 toothpicks in a small bowl filled with water; let soak 15 minutes. Line a baking sheet with parchment paper and fit with a wire rack; set aside.
- Halve dates lengthwise being careful not to cut all the way through. Place a small amount of cheese in the center of each date. Wrap a piece of bacon around each date. Secure bacon with a toothpick.
- Place dates on prepared baking sheet. Bake until bacon is cooked through, 20 to 25 minutes.

- Gather the ingredients.
- Cut a small slit in the side of each date. There may already be a slit since the dates have been pitted.
- Carefully push a piece of the cheese into the date.
- Smooth the date back around the cheese if you can. Handle the dates gently because they are fragile.
- Wrap one of the pieces of the bacon around each stuffed date, covering the cheese, and secure with a toothpick if necessary.
- Place all of the stuffed and wrapped dates on broiler pan with a rack.
- Preheat oven broiler. Broil the bacon-wrapped dates 4 to 6 inches from the heat source for 9 to 12 minutes, turning twice during the cooking time, until the bacon is crisp; don't let it burn. Let stand for 5 minutes, then serve.

BACON-WRAPPED DATES
A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

- Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
- Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
- Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.

- If the dates still have pits, slice carefully down along the length of the date. Open it and remove the pit. Discard.
- Spoon 1/2-1 teaspoon goat cheese into the middle of each date and pinch together to close. It's okay if some filling is sticking out, it doesn't need to be completely sealed.
- Cut the bacon slices in half and wrap one half slice to around a date (the bacon ends should slightly overlap). Repeat nineteen more times.
- Preheat the oven to 400 F. Place bacon wrapped dates in a cast iron pan seam side down.
- Fry over medium high heat for 3-4 minutes, until the bacon shrinks and seals itself around the dates. Flip and fry another 2-3 minutes until it has a bit of colour.
- Flip dates back over and transfer pan to the oven. Bake at 400 degrees until bacon is cooked to your liking and goat cheese is gooey. This should take approximately 12-15 minutes.

- *It's essential to use the large and juicy medjool dates, as opposed to the more commonly available deglet noor, which are great for baking, but are drier and too small to stuff.
- Use a paring knife to remove the pit from dates. It's easier than you think: just run the tip along the length of the fruit like you're making an incision with a scalpel. This will force the pit out the root end.
- Slice the cheese into pit-sized strips. Stuff each date with a piece of cheese. It's OK if the cheese is larger than the crevice. The prosciutto will hold the bundle together.
