1/2 lb day-old white bread, cut into 10 slices
1 cup milk, warmed
1 tablespoon vegetable oil
1 medium onion, chopped
3 eggs
1/2 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon ground nutmeg
3 tablespoons finely chopped parsley

Steps:

  • Break bread into small pieces; place in a medium bowl; Pour warm milk over bread.
  • Heat oil in a medium skillet; Add onion; sauté until golden brown.
  • Add sautéed onion, and remaining ingredients to bread mixture; blend well; mixture should be stiff; Add bread or milk to adjust consistency.
  • Working with floured hands, form smooth paste into a roll about 2 1/2 inches in diameter; Cut roll into 8 pieces; form each piece into a dumpling.
  • Bring a large saucepan of salted water to a boil; Add dumplings, one at a time, to boiling water, making sure they are not overcrowded; Do not cover; Simmer over low heat about 15 minutes.
  • Dumplings are done when they float.
  • Carefully remove dumplings with a slotted spoon; drain well.
  • Serve immediately with roast meat and gravy or sauce and cooked kale; dumplings are excellent with roast goose or duck.

My grandmother use to make these when I was a kid and we would eat them as bread right out of the frying pan. These have a crisp salty tasting bottom and soft top. So many memories this recipe brings back!!Serve with canned pears.. This is good with very crisp cooked bacon with the sauerkraut and of course sauted onions.

4 1/2 cups all-purpose flour, less 1 tbsp
1 cup milk, plus
1 tablespoon milk
1 (1/4 ounce) package yeast
1/8 teaspoon salt
2/3 cup butter or 2/3 cup clarified butter
2 eggs

Steps:

  • Heat milk a bit and dissolve yeast.
  • Make a well in the flour and pour the yeast into the well.
  • Let rest 1/2 hour.
  • Add remaining milk salt and eggs.
  • Beat vigorously til bubbles form.
  • Knead well.
  • Cover and put dough in a warm place Let rise for 1 hour.
  • Cut off 1/2 fist size pieces on floured surface let rise 15 more minutes.
  • In a deep skillet or dutch oven melt butter and add warm salted water to a depth of 3/4 inch.
  • Add dumplings arranged in one layer touching each other.
  • Put lid on pot, seal edges where lid rests with damp cloths to insure no steam escapage.
  • Cook on med low heat about 20 minutes Dumplings should have a highly desirable brown crust on bottom. May be served with sauerkraut or canned fruit.

Sweet dark plums are wrapped in a potato dough, and boiled before rolling in sweetened toasted bread crumbs. My Austrian grandmother made these delicious dessert dumplings for us every fall. These take some time to make, but to me, they're well worth the effort.

4 large russet potatoes
½ teaspoon salt
1 tablespoon butter, softened
2 eggs, beaten
¼ cup farina
1 cup all-purpose flour, or as needed
12 Italian prune plums
12 cubes white sugar
½ cup butter, melted
¼ cup white sugar
1 cup dry bread crumbs
additional melted butter and sugar for garnish (optional)

Steps:

  • Scrub potatoes, and place them into a large pot with enough water to cover. bring to a boil, and cook until tender, about 40 minutes. Drain, and cool. When potatoes are cool enough to handle, peel, and press through a ricer into a large bowl. Set aside to cool. This part of the process can be done as much as one day in advance.
  • In a large bowl, mix together the prepared potatoes, salt, egg, and 1 tablespoon of butter until well blended. Gradually stir in the farina, and then the flour. If dough is still wet, more flour can be mixed in. Turn dough out onto a floured surface, and knead until smooth, about 5 to 10 minutes.
  • Split open each plum where it cracks, and remove the pit. Replace each pit with a sugar cube, and close.
  • On a floured surface, roll out the dough to 1/4 inch thickness. Cut into twelve 3 inch squares. Place one plum into each square, and bring the corners around to the top. Pinch together all of the seams to seal.
  • Bring a large pot of water to a slow boil. Place about 4 dumplings into the water at a time. Once they float to the surface, continue to cook them for about 5 more minutes. Transfer cooked dumplings to a covered bowl, and keep warm.
  • Melt the remaining 1/2 cup of butter in a small skillet over medium heat. Stir in bread crumbs, and 1/4 cup of sugar. Continue to cook and stir until browned. Remove the bread crumbs to a plate, and roll warm dumplings in the mixture until entirely coated. To serve, place a dumpling or two on a plate, sprinkle with a little sugar and a little extra melted butter, if desired.

  • Put the butter in a jar with milk and melt in the microwave. You could also melt the butter on a stove. In the meantime combine flour, sugar, yeast, salt and eggs in a bowl. Start mixing, while adding the lukewarm milk - butter mixture slowly. Knead the dough very well until you see bubbles in the dough. Cover with a kitchen towel and let the dough rise for 1 hour or until it has doubled its size in a warm place.Meanwhile make the creamy sauce, cinnamon sugar and buttered bread crumbs.
  • In a bowl/ plate combine sugar with cinnamon and mix well. The quantity of the plums that you'll be needing depend on the number of dumplings that you will be making. Wash the plums very well and let them dry. Take 12 plums and cut them just on one side lengthwise as shown on the photo below. The stones remain inside.
  • Transfer the dough to a lightly floured silicone pastry mat or cutting board. Slightly flour the dough and rub it. Dust your hands very well. Using a dusted dough scraper or a dusted knife divide the dough in the middle and take a bit of the dough. (SEE NOTE 1 & 2)
  • Meantime put water in a large pot and bring to a boil. After 20 minutes, dust your hands and pick up one dumpling at a time. Lightly shape it into a ball once again, if it has lost its shape. Put the dumpling in the pot with boiling water. Put three more dumplings in the pot. (You can make up to 4 dumplings at one time). Cover and let cook for 5 minutes. Turn the dumplings, cover and let cook for another 5 minutes. Using a spotted spoon or something similar remove the dumplings from the pot. Put each dumpling on a separate plate and coat with buttered breadcrumbs. Repeat the process until you have cooked all the dumplings. Serve with the creamy sauce that you've made previously and plum compote.
