BOLD TASTIN' GRILLED STEAK
During the summer grilling season, grilled steak is a must. This recipe is for a marinade that will give your steaks tons of flavor. It has an Asian flair. The ingredients in the Beau Monde seasoning are unique but work together. We let our steaks marinate overnight. They had not only a rich color but also flavor. Simple to throw...

- 1. Mix together all 9 Beau Monde Seasoning spices and place in a small jar or zipper bag. (I couldn't find ground bay leaves so I used my blender to grind up 2 bay leaves.)
- 2. Combine soy sauce, onion, and garlic in the container of an electric blender. Cover and process at high speed for about 1 min. or until the mixture is very smooth.
- 3. Stir in gravy coloring.
- 4. Stir in Beau Monde seasoning.
- 5. Arrange the meat in a shallow baking dish. (I prefer to use gallon zipper bags.) Pour 1/2 c marinade over top, for each piece of meat. Cover and refrigerate for up to 24 hours.
- 6. Allow to stand at room temperature for 2 hours before grilling. On your favorite grill, slightly oil, then place the meat on top and cook to your desired preference.

- 1 MIX steak sauce, lime juice and 1 tablespoon of the chipotle peppers until well blended. Remove 1/2 cup of the steak sauce mixture for brushing onto steaks as they cook. Pour remaining steak sauce mixture over steaks in large resealable plastic bag; seal bag. Turn bag over several times to evenly coat steaks. Refrigerate 30 min. to marinate. 2 MEANWHILE, mix butter and remaining 2 tablespoons chipotle peppers until well blended; cover. Refrigerate until ready to use. 3 PREHEAT grill to medium heat. Remove steaks from marinade; discard bag and marinade. Grill steaks 8 to 10 min. for medium-rare to medium doneness, turning occasionally and brushing with the reserved steak sauce mixture. Remove steaks from grill; cut in half. Top with the butter mixture before serving.

- In a small saucepan, combine the chili sauce, steak sauce, shallots and beer. Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until slightly thickened. Set aside 1/2 cup for serving and keep warm. Sprinkle steaks with salt and pepper., Lightly oil the grill rack. Grill steaks, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting occasionally with sauce mixture. Serve with reserved sauce.
