2 cups frozen cut green beans, thawed
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) cut wax beans, drained
1 medium red onion, halved and sliced
1 can (6 ounces) pitted ripe olives, drained
1/2 cup julienned green pepper
1/2 cup peeled, seeded and chopped cucumber
3/4 cup bottled Greek vinaigrette
1 cup (4 ounces) crumbled feta cheese

Steps:

  • Combine the first seven ingredients in a large salad bowl. Drizzle with vinaigrette; toss to coat. Chill until serving and sprinkle with cheese. Serve with a slotted spoon.

1/2 red onion, sliced in half-rounds
1/2 pound feta cheese, 1/2-inch diced (not crumbled)
1/2 cup calamata olives, pitted
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon Dijon mustard
1/4 cup good red wine vinegar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup good olive oil

Steps:

  • Place the cucumber, peppers, tomatoes and red onion in a large bowl.
  • For the vinaigrette, whisk together the garlic, oregano, mustard, vinegar, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion. Pour the vinaigrette over the vegetables. Add the feta and olives and toss lightly. Set aside for 30 minutes to allow the flavors to blend. Serve at room temperature.

1 lb green beans, trimmed
Salt and pepper, to taste
Crushed red pepper flakes, optional, to taste
Quality crumbled feta cheese, to taste
2 tbsp (or more to your liking) pitted olives, chopped
2 tbsp Early Harvest Greek extra virgin olive oil
2 tbsp freshly squeezed lemon juice
1 to 2 garlic cloves, minced
2 tbsp chopped fresh dill
1/2 tsp sweet Spanish paprika
Salt and pepper, to taste

Steps:

  • Prepare dressing. In a small bowl, whisk together extra virgin olive oil, lemon juice, garlic, fresh dill, Spanish paprika, pinch of salt and pepper. Set aside for now.
  • Bring a large pot filled with water to a boil. Add green beans. Cook for 5 minutes, then, keep the pot of boiling water going, but using tongs, transfer green beans to an ice bath (a bowl of ice and ice cold water) for 5 minutes. Return beans to boiling water to finish cooking until tender, about 10 more minutes or so. Drain well.
  • Transfer warm beans to a mixing bowl. Toss with a little salt and pepper. Give the dressing a quick stir to combine well, then pour over the green beans. Toss again to coat.
  • Transfer to a serving platter. Sprinkle crushed pepper flakes and crumbled feta. Top with chopped olives. Serve at room temperature.

Kosher salt and ground black pepper
2 medium garlic cloves, finely grated
1 small red onion, halved and thinly sliced
1/3 cup red wine vinegar
3 tablespoons extra-virgin olive oil, plus more, to serve
1 ripe avocado, halved, pitted, peeled and chopped into ½-inch pieces
1 cup lightly packed flat-leaf parsley, torn if large
1/2 cup lightly packed fresh dill, chopped
1 teaspoon grated lemon zest
1 teaspoon lemon juice

Steps:

  • In a large microwave-safe bowl, toss the beans with 1 teaspoon salt. Cover and microwave on high until hot, 3 to 3½ minutes, stirring once halfway through.

1/2 cup crumbled feta cheese

4 ripe plum tomatoes
2 tablespoons chopped of fresh mint
1 garlic clove, roughly chopped
1 small lemon, juice of
3 tablespoons olive oil
2 (400 g) cans butter beans, drained
75 g pitted black olives
1 small red onion, thinly sliced
200 g feta, roughly cubed
salt & freshly ground black pepper
warm pita bread, to serve

Steps:

  • Roughly chop one of the tomatoes and place in a liquidizer with half the mint and garlic and whizz until smooth.
  • Add the lemon juice and the live oil and some salt and pepper and whizz again to make a smooth dressing.
  • Cut the remaining tomatoes into wedges and toss with the butter beans, olives, red onions, feta and dressing.
  • Transfer to serving plates, scatter over the reserved mint and serve with warm pitta bread.

1 lb. (450 g) "B"-size red potatoes (about 5-7 potatoes)
12 oz. (350 g) frozen green beans
1 can (15.5 oz. or 398 mL) reduced-sodium chickpeas, rinsed and drained
1 pkg (5 oz.) salad greens (spinach, romaine, or blend) (about 6-8 cups/1.5-2 L)
½ cup (125 mL) sliced black olives, drained
Optional: grilled chicken or shrimp, crumbled feta cheese, roasted red peppers
6 tbsp (90 mL) olive oil
¼ cup (50 mL) red wine vinegar
½ tsp (2 mL) dried oregano
¼ tsp (1 mL) each dried basil, onion powder, and salt (see cook's tip)

  • Slice the potatoes into wedges.Place the potatoes into the Multipot. Add enough cold water to just cover the potatoes. Kosher salt and freshly ground black pepper
2 red bell peppers, cut into 1/2-inch wide strips
3 tablespoons plus 2 teaspoons extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice
2 tablespoons red wine vinegar
1 1/2 teaspoons minced fresh garlic (from 1 large clove)
1/2 teaspoon dried oregano
1 large English cucumber, seeded and cut into 1/2-inch dice
1 pint cherry tomatoes, sliced in half lengthwise
3/4 cup minced red onion
1/2 cup chopped fresh parsley
1/2 cup pitted kalamata olives
8 ounces feta cheese, 1/2-inch diced

Steps:

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Combine the farro with 4 cups of water and 1 teaspoon salt in a large saucepan. Bring to a boil, then lower the heat and simmer, uncovered, until the farro is tender, about 30 minutes, adding more water if needed. Drain and pour into a large bowl.
  • Place the red pepper slices on the prepared baking sheet and toss with 2 teaspoons olive oil, 1/4 teaspoon salt and a few grinds of black pepper. Roast for 20 minutes, turning once halfway through. Set the peppers aside to cool slightly.
  • Meanwhile, whisk together the lemon juice, vinegar, garlic, oregano, 1 teaspoon salt and 1/2 teaspoon pepper in a small bowl. Slowly whisk in the remaining 3 tablespoons olive oil. Pour over the hot farro, stir well and cool to room temperature, stirring occasionally.
  • Add the cucumber, tomatoes, red onion, parsley and olives and roasted peppers to the bowl with the farro. Stir until combined, then gently fold in the feta. Serve at room temperature, or store in the refrigerator, covered, for up to 3 days, before serving.

1 pint grape tomatoes, quartered
3 small pickling cucumbers, peeled & chopped
2/3 cup kalamata olive, pitted & halved
6 ounces feta cheese, crumbled (I used feta with basil & tomato)
1/4 teaspoon salt, to taste
1/4 teaspoon black pepper, to taste
2 large garlic cloves, chopped
1/2 cup fresh lemon juice
1/3 cup olive oil
1 teaspoon dried oregano or 2 tablespoons fresh oregano

Steps:

  • Dressing: In a small bowl or measuring cup, whisk together the dressing ingredients.

Fassolia Piaz are white beans boiled and made into a salad. There are a lot of variations of this salad but we like it with tomatoes, onion, tuna, parsley, served with olive oil and lemon juice.

500 grams of medium size beans (white haricot beans, cannellini, or navy beans soaked overnight)
Salt
Extra virgin olive oil
2 tomatoes
Parsley
Lemon juice
1 medium onion
Freshly ground black pepper
Fresh oregano, optional
2 cans of tuna fish (optional)

Steps:

  • Soak beans overnight.
  • Next day strain, add fresh water and boil. When they start boiling foam is formed on top which remove with a slotted ladle. When this is done, strain them again and put fresh water to cover the beans. When they start boiling, add salt, reduce heat and simmer for about 1 - 1 ½ hours covering with lid, until they are soft.
  • When they are cooked, strain them and let them cool.
  • Add olive oil, lemon juice, taste and adjust salt if necessary and sprinkle some black pepper on top.
  • Serve with all the other ingredients i.e., tuna, finely chopped tomato, onion and parsley, oregano.
