All-star recipe for Greek Green Beans. Velvety, tender green beans & potatoes, braised in a tomato-olive oil sauce. Flavor-packed, satisfying, vegan, and gluten-free.

Greek extra virgin olive oil (I used Private Reserve Extra Virgin Olive Oil)
1 large yellow onion, finely chopped
5 garlic cloves, minced
1 tsp ground cumin
2 tsp dried oregano
1 28-oz can peeled whole tomato
1 cup water
1 bay leaf
1 1/2 lb fresh French green beans, trimmed and cut into 1 1/2-inch pieces (frozen green beans work wonderfully in this recipe)
3 Yukon Gold potatoes (about 1 lb), cut into small piece (1/2 to 3/4-inch pieces)
Salt and black pepper
lemon juice
1/2 cup chopped fresh parsley leaves

Steps:

  • Preheat the oven to 300 degrees F.
  • In a large Dutch Oven, heat 1/4 cup extra virgin olive oil over medium heat. Add the onions and cook until tender, stirring occasionally (about 5 mins). Then add the garlic, cumin, and oregano. Cook another 2 mins, stirring regularly, until fragrant.
  • Add tomatoes, water, bay leaf, beans, and potatoes. Season with salt and pepper. Raise the heat and bring to a high simmer for 15 minutes, stirring occasionally.
  • Cover and transfer to the heated oven. Cook until the sauce slightly thickens, and the beans and potatoes can easily be cut with side of your fork; about 35 minutes or so. (It's a good idea to check once partway through cooking, add a little bit of water if needed.)
  • Remove from oven and stir in 2 tbsp lemon juice and chopped fresh parsley. Stir in a generous drizzle of olive oil (at least another 1/4 cup).
  • Serve immediately with Greek pita bread or your favorite rustic bread to sop up the sauce!

⅓ cup olive oil
1 onion chopped
1 pound green beans
1 medium potato sliced (1/4 inch thickness-cut in half) (optional)
3 medium tomatoes grated or 12-15 ounces chopped tomatoes
¼ cup chopped parsley
1 teaspoon sugar (optional)
½ teaspoon salt
fresh pepper

Steps:

  • In a medium pot, heat olive oil at medium to low heat. Sauté onion until soft.
  • Add potatoes and heat for 2-3 minutes.
  • Add beans and mix until covered with the olive oil.
  • Add the tomatoes, parsley, sugar and salt and pepper and mix.
  • Add hot water just enough to half cover the beans.
  • Simmer with the lid on for about 40 minutes (do not boil).
  • The beans are ready once there is no water left and the beans are soft.
  • Enjoy with bread and feta cheese

500g dry white kidney beans or cannellini beans or navy beans (18 ounces)
3-4 carrots, finely chopped
1 large white onion, finely chopped (if you love onions, add one more!)
3 stalks of celery, finely chopped
130ml extra virgin olive oil (1/2 cup)
2 tbsps tomato paste
a pinch of paprika (hot or sweet, according to preferance)
salt and freshly ground pepper, to taste (min 2 flat teaspoons each)

Steps:

  • To prepare the fasolada (Greek bean soup), place the beans in a saucepan with plenty of cold water to cover them. Bring to the boil, turn the heat down to medium and parboil for 30-35 minutes, until slightly tender. Drain in colander and set aside.
  • Finely chop the onion, celery and carrots. Add 3-4 tbsps of olive oil in a deep pan, add the chopped vegetables and blend. Sauté for about 2 minutes and add the tomato paste and continue sautéing for a minute.
  • Add the parboiled beans in the pan and pour in enough boiling water to cover the beans and little bit more and blend lightly. Place the lid on and simmer the fasolada for about 35 minutes, until the beans are tender.
  • Towards the end of cooking time, pour in the remaining olive oil and season with salt and pepper. Boil for a few more minutes, until the soup becomes thick and creamy.
  • Serve this traditional Greek bean soup (fasolada) while still steaming hot with a few Kalamata olives and of course some village bread. Enjoy!

This is a main dish in Greece, not a side dish, and a prime example of plant-based eating! Good crusty bread is essential for mopping up the sauce and I always need to have a healthy chunk of feta on the side. Serve fasolakia warm or at room temperature for best flavor.

¼ cup olive oil
1 small onion, grated
1 ½ pounds fresh green beans, trimmed
4 tomatoes, pureed
2 yellow potatoes, peeled and cut into wedges
½ teaspoon salt, or to taste
ground black pepper to taste
1 pinch white sugar
water to cover

Steps:

  • Heat olive oil in a large saucepan over medium heat and stir in onion. Cook until onion has softened, about 5 minutes. Add green beans and stir to coat in the oil. Cook, stirring occasionally, 2 to 3 minutes. Add pureed tomato, potatoes, salt, pepper, and sugar. Stir well, then add water until beans are barely covered.
  • Bring to a simmer, partially cover with a lid, and cook gently over medium-low heat until green beans and potatoes are soft, 25 to 30 minutes. Uncover towards the end of cooking to reduce sauce if it is too watery.

500 g Greek fassolia gigantes (butter beans)
1 kg tomatoes
160 ml olive oil
280 g onions, finely sliced
1 tablespoon tomato puree
3 cloves garlic, peeled & finely sliced
1 teaspoon sugar
salt and black pepper
3 tablespoons parsley, finely chopped
1 tablespoon oregano
1 teaspoon thyme

Steps:

  • Pick the beans clean from stones and grit and soak them in cold water overnight.
  • Drain and rinse them in a colander, put into a large saucepan or a pressure cooker, cover with plenty of cold water and boil them until they are cooked but still a little hard.
  • This type of bean cooks quickly, so be aware until you get used to them.
  • They take hardly 2 minutes in a pressure cooker and about 30-40 minutes otherwise.
  • If they get overcooked, they get mushy and soggy and they do not taste at their best.
  • This first step then is also the most important in this recipe.
  • Drain the beans through a colander and keep aside.
  • In the same saucepan, heat the olive oil and fry the onions, the garlic and the dried herbs, until they start turning pale golden.
  • Add the tomatoes with all the juice from the cans or, if fresh tomatoes are used, add 150 ml water.
  • Then add the tomato puree and sugar, break up the mixture with a fork, season with salt and pepper, cover and cook for 30 minutes or until the sauce thickens.
  • Mix the parsley into the tomato sauce, add the beans and mix well.
  • Spread the beans in an oven dish.
  • Sprinkle a little oregano and black pepper on the top and cook in a pre-heated oven at 350 grades F/ 80 grades C, for 30 minutes, without stirring, until they look slightly crisp on top and quite dry.
  • Alternatively, add the beans to the tomato sauce, mix well, cover and simmer for 10-15 minutes.

  • Heat half the olive oil in a large skillet over medium heat. Add the chopped onions and sauté until transculent and tender. The traditional recipe for Greek green beans calls for fresh ripe tomatoes, but if you like you can substitute with canned chopped tomatoes, or Passata tomato juice.
