Perfectly Paired Turkey Injection Marinade and Rub image

This delicious marinade paired with the rub gives your turkey just the right amount of flavor while helping to make it melt-in-your-mouth tender and juicy. Great for deep frying or just plain old roasting.

1 cup chicken broth
½ cup lemon juice
½ cup butter, melted
1 clove garlic, minced
1 teaspoon English mustard powder
1 teaspoon minced fresh ginger
1 cup butter, softened
3 sprigs fresh rosemary, leaves stripped and finely chopped
2 sprigs fresh thyme, leaves stripped and chopped
2 small cloves garlic, minced
1 (14 pound) whole turkey, neck and giblets removed
1 tablespoon olive oil, or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Stir chicken broth, lemon juice, 1/2 cup melted butter, 1 clove garlic, mustard powder, and ginger together in a bowl. Cover bowl with plastic wrap and refrigerate marinade for flavors to blend, about 30 minutes.
  • Mix 1 cup softened butter, rosemary, thyme, and 2 cloves garlic together in a bowl until rub is evenly combined.
  • Separate skin from the meat of the turkey by running your hand under the skin to separate. Spoon rub mixture evenly under the skin in several different parts of the turkey.
  • Pour marinade into a meat injector and inject the meatiest parts of turkey with marinade, changing the angle of the needle several times.
  • Brush turkey with olive oil and season with salt and pepper; place in roasting pan and cover with plastic wrap. Refrigerate turkey for 12 to 24 hours.

I love this soup because of the "Cajun feel" to it, but it's not at all spicy. It freezes well, and it's a great protein source! Additional Cajun seasonings could be added if desired.

1 lb dried red beans
1/4 cup chopped onion
2 tablespoons chopped green peppers
1 tablespoon minced garlic
2 quarts water
2 cups smoked turkey, cut in 1 ",cubes
4 cups cooked rice
salt and pepper

Steps:

  • Place all ingredients, except rice, in crockpot.
  • Cook 6 hours on High, or overnight on Low.
  • Check broth.
  • If too thick, add water to suit.
  • Adjust salt and pepper to taste.
  • When ready to serve, stir in rice.
  • Stir in some parsley or chopped green onions when serving, if desired.

This is a great change from normal Thanksgiving turkey. The outside skin isn't meant for eating. You need to use a combo of hard and softwood; e.g., hickory plus wild grape or applewood. You need to be conversant with smoker techniques.

1 (13 -16 lb) turkey
1/4 cup ground coffee
1/4 cup cocoa powder (high quality, like Ghiradelli)
10 star anise

Steps:

  • Rinse bird inside and out. Lightly pat dry the outside.
  • Rub the chocolate and coffee powder all over the skin. Place two star anise inside the cavity and divide the rest among the breast portions and the legs/thighs. Wrap the legs and wings with foil.
  • Smoke at 225 degree for 5 - 6 hours or until the bird reaches an internal temp of 180 degrees. Follow your smoker's directions.
  • Let rest for 15 minutes. Do not eat the skin. It will be extremely blacked and was there for flavoring the meat, not ingestion itself.
