We grow potatoes and found this recipe is a great way to use up leftover mashed potatoes. This dish is a favorite among our family and friends.

3 cups mashed potatoes (prepared with milk)
1 large egg, beaten
1/2 cup grated Parmesan cheese
2 tablespoons butter, melted
1-1/2 teaspoons salt
1 can (8 ounces) pizza sauce
3 ounces sliced pepperoni
4 fresh mushrooms, sliced
1 cup shredded mozzarella cheese

Steps:

  • In a bowl, combine potatoes, egg, Parmesan cheese, butter and salt. Press onto bottom and up the sides of a greased 10-in. pie plate. Spread pizza sauce over potato mixture to within 1/2 in. of edges. Top with pepperoni and mushrooms. Sprinkle with mozzarella cheese. Bake at 400° for 25-30 minutes or until heated through and cheese is melted.

Made using just 2 ingredients, this potato crust pizza is super easy to make. Add your favourite pizza toppings and enjoy as a delicious lunch or dinner. There is no flour, oil or yeast used in this recipe. This makes it a gluten-free, quick and easy bake.

4 medium / approximately 650g potatoes
1 egg
Mixed herbs and spices (optional)
Salt to taste

Steps:

  • Peel and grate the potatoes.
  • Place the grated potatoes into a muslin cloth or kitchen towel and squeeze out as much water as you can. SEE NOTE 1
  • Remove the potatoes from the kitchen towel or muslin cloth and transfer to a bowl.
  • Add in one egg and any spices or herbs of your choice. Mix until well combined.
  • Place the grated potato mixture onto a lined baking sheet and press out to form a circle. It should be between 9 inches ( 25cm ) and 12 inches ( 30cin diameter.
  • Bake without topping in a preheated oven of 350°F / 180°C for between 20 and 25 minutes until the crust is crispy and browned at the top and around the edges.
  • Remove the baked crust from the oven and top with a pizza sauce and toppings of your choice. Place the topped pizza back into the oven and bake for a further 10 minutes until the cheese has melted and the toppings baked to your preference.
  • Spread the pizza with your favourite sauce or go ahead and try out this easy and delicious sauce recipe:
  • In a pot combine a can of tomatoes or 3 peeled and chopped tomatoes, mixed herbs and salt to taste.
  • Let this mixture simmer on the stove for about 10 to 15 minutes until reduced and thickened. Spread over pressed pizza dough.

1 large potato, peeled and thinly sliced
1 tablespoon water
1/3 pound lean ground beef
1/3 cup condensed cheddar cheese soup, undiluted
1/4 cup 2% milk
1/2 cup pizza sauce
1/3 cup shredded part-skim mozzarella cheese
1/3 cup shredded cheddar cheese

Steps:

  • Place the potato slices in a small microwave-safe dish; add water. Cover and microwave on high for 10 minutes or until tender; drain. Layer potato slices evenly on a 7-1/2-in. pizza pan coated with cooking spray; set aside., In a skillet, cook beef over medium heat until no longer pink; drain. Stir in soup and milk. Pour over potatoes. Top with pizza sauce and cheeses. , Bake at 400° for 15-20 minutes or until heated through and cheese is melted.

3 Idaho potatoes, peeled and grated
1 teaspoon salt
1 egg, lightly beaten
1 tablespoon unsalted butter
1/2 cup chopped onion
2 cups sliced mushrooms
1 1/2 cups grated Swiss cheese
4 eggs
1 1/2 cups light cream
Salt and pepper

Steps:

  • Preheat oven to 400 degrees F. Heavily oil a 9-inch metal pie pan. Squeeze out excess liquid from grated potatoes and place in large bowl. Mix in salt And egg until well combined. Press potatoes into pie pan and up the sides. If mixture is too sticky, dip fingers in flour. Bake crust for 30 minutes or until it begins to turn golden brown, brushing occasionally with oil.
  • In a medium skillet melt butter over medium heat and cook onion until tender. Stir in the mushrooms and cook until golden brown.
  • Spread grated cheese over bottom of potato crust. Spread out the onion and mushroom mixture over the cheese. In a medium bowl, whisk or beat together with a fork the eggs and the cream. Season mixture with salt and pepper and pour over vegetables and cheese.
  • Reduce oven heat to 375 degrees F and bake for 40 minutes or until firm. Allow quiche to cool for 15 minutes before slicing and serving.

This delicious vegetarian entree is very easy to put together and uses things that most people have in their pantry's. The grated potato crust is fabulous and I can imagine using it for all sorts of entrees. If you love cauliflower cheese, this pie is for you!

2 cups packed grated raw potatoes
1/2 teaspoon salt
1 egg, beaten
1/4 cup grated onion
1 cup packed grated strong cheddar cheese
1 medium cauliflower, broken into small florets
1 garlic clove, crushed
1 cup chopped onion
3 tablespoons butter
1 dash thyme
1/2 teaspoon basil
1/2 teaspoon salt
2 eggs
1/4 cup milk
black pepper
paprika

Steps:

  • Set the freshly grated potato in a colander over a bowl. Salt it and leave for 10 minutes. Then, squeeze out the excess water. Beat in the egg, salt and grated onion.
  • Pat into a well oiled 9 inch pie tin, building up the sides of the crust with lightly floured fingers. Bake at 400*F for 40 to 45 minutes, until browned. After the first 30 minutes, crush with some more oil to crispen it.
  • Meanwhile saute the onions and garlic in the butter for 5 minutes. Add the herbs and cauliflower and cook, covered, 10 minutes longer, stirring occasionally. Season to taste with salt and the pepper.
  • Spread half the cheese into the baked crust. Top with the saute, then the rest of the cheese. Beat together the egg and milk and carefully pour over. Dust with paprika.
  • Lower the oven temperature to 375*F and bake for 35 to 40 minutes longer, until custard is set and is pie is nicely browned.

1 lb ground beef
1 small onion, chopped
1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of mushroom soup
1 (14 1/2 ounce) can green beans, drained
1 (4 ounce) can sliced mushrooms, drained
6 -7 potatoes, peeled, cooked and mashed
1 egg, beaten
1 teaspoon salt
1/2 teaspoon pepper
1 (2 7/8 ounce) can French-fried onions
1/2 cup cheddar cheese, shredded

Steps:

  • In a skillet, brown ground beef and onion, drain well. Stir in soups, beans and mushroom. Simmer until heated through. Meanwhile, combine hot mashed potatoes, egg, salt and pepper; mix well. Spread into the bottom and up the sides of a greased 13-in.x9-in.x2-in. baking dish or two greased 9-in. pie plates. Spoon ground beef into the potato crust. Bake at 350 degrees for 45-50 minutes or until lightly browned. Remove from oven; sprinkle with french-fried onions and cheese. Return to oven for 5 minutes or until cheese is melted.
  • Note: If freezing don't include cheddar cheese or french-fried onions prior to freezing.
