A homestyle gravy, made with a flour roux, bacon drippings and broth or water here, or for a creamy version, use milk. Shown served over a baked pork tenderloin and rice.

1/4 cup bacon drippings
1/4 cup butter
1/2 cup all-purpose flour
3 to 4 cups of whole milk, chicken broth or water, more or less
1 tablespoon chopped bacon, optional
1 teaspoon pepper, or to taste
1/4 to 1/2 teaspoon Cajun seasoning, or to taste, optional
1 teaspoon salt, or to taste, as needed

Steps:

  • Melt together the bacon drippings and butter in a skillet over medium heat; whisk in the flour a little at a time, until fully incorporated.
  • Cook, stirring constantly, for about 3 minutes until golden in color.
  • Slowly add in 2 cups of the liquid, a little at a time, stirring constantly, adding more water as needed.
  • Bring to a boil, reduce, add bacon and seasonings, and let simmer for about 4 minutes, whisking in additional liquid as needed to correct consistency. Taste and correct seasonings as needed.

¼ cup all-purpose flour
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
4 cups milk, divided

Steps:

  • Heat bacon drippings in a skillet over medium heat; whisk flour into drippings until smooth. Reduce heat to low and cook the flour mixture until it turns a caramel brown color, stirring constantly, about 15 minutes. Be careful, the roux burns easily. Stir in salt and black pepper.
  • Whisk 1/2 cup milk into the roux until thoroughly blended. Continue whisking milk into the gravy, 1/2 cup at a time, whisking in each amount of milk completely before adding more. Bring gravy to a simmer and whisk constantly until thick, smooth, and bubbling.

2 cups whole milk

cooked biscuits for serving

Steps:

  • Brown bacon in a large skillet until crisp.
  • Remove bacon and leave 2 tablespoons bacon fat in the skillet.
  • Whisk flour into the bacon fat and cook 1 minute.
  • Add milk a little bit at a time, stirring after each addition.
  • Bring to a boil, reduce heat, and simmer until thick and bubbly.

One day DH wanted biscuits and gravy, but I didn't have sausage, only bacon. So, I found a recipe online and went for it. Thus, bacon gravy was born!

6 slices bacon
2 tablespoons bacon grease
2 tablespoons flour
2 cups milk
salt and pepper

Steps:

  • Preheat a large skillet to medium-hi. Place 6 slices of bacon in the skillet and cook until just under crispy.
  • Remove bacon from skillet and drain; set aside. Discard all but 2 tablespoons of the bacon grease.
  • Add flour to grease, and whisk together. Cook for about a minute without burning the flour.
  • Add milk; whisk together.
  • Heat until bubbling. Simmer for 5-10 minutes, until sauce starts to thicken.
  • Meanwhile, crumble bacon. Add salt and pepper (to taste), and bacon to gravy. Allow to simmer until desired consistency.
  • Serve over biscuits.

½ cup milk

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.

1 teaspoon baking soda
1 cup cornmeal

Steps:

  • in seperate bowl mix all dry ingredients, flour,cream of tartar, baking soda, cinnamon.
  • in another bowl beat eggs, add honey, oil, add peanut butter mix well, and apple sauce an stir.add wet mixture to dry a little at a time stiring well.
  • make 1/2" balls, roll in a mixture of 1 c cormeal and 2 tsp of cinnamon. place on a parchment lined baking tray. shape into paws if desired.

I serve mine over toasted low carb bread or over cooked, semi-mashed cauliflower and either way, it's very good! For my non-low carb eaters, I serve it over biscuits and there are never any leftovers!

12 ounces bacon (usually 12 slices)
1/4 cup bacon grease
1/4 cup flour
1 1/4 cups heavy whipping cream
3/4 cup water

Steps:

  • In a heavy fry pan cook the bacon over med-high heat until done. Remove the bacon to a plate to cool and carefully (it's hot!) remove all, but 1/4 cup of the bacon grease from the pan (reserve the extra for another use). Dice up bacon.
  • Turn the heat under the pan to med-high and whisk the flour into the bacon grease that is in the pan. Continue to stir, allowing the roux to turn light golden brown and to froth.
  • Turn the heat down to medium and add the cream and water to the pan while continuing to stir. The gravy will thicken as it continues to cook. Once it is as thick as you would like, return the cooked, diced bacon to the pan, stirring to incorporate in the gravy. Salt and pepper to taste. Remove from the heat and serve.
