5-Ingredient Breaded Deep Fried Bananas (Banana Empanada)-- a quick and easy dish that can be served as a side for feijoada or as a dessert topped with ice cream. These can be gluten-free, Paleo,a nd Whole30.

Vegetable oil (enough to completely cover the bananas)
5 ripe but firm small bananas
1 cup all-purpose flour or whole wheat flour ((or GF flour, almond flour or coconut flour))
3 large eggs (beaten and mixed with 1 tsp water)
1 cup bread crumbs

Steps:

  • Heat the oil to 350ºF (180ºC) in a deep-fry machine or heavy-bottom saucepan over medium heat. While oil is heating, peel the bananas, remove the stringy parts that cling to the peeled fruit, and cut crosswise in half.
  • Place the flour, eggs, and bread crumbs each in a separate bowl. Dredge the banana halves in flour to get an even coating. Shake to remove excess flour. Next, soak the banana halves in the beaten eggs mixed with 1 tsp water. Finally, cover the banana halves in bread crumbs.
  • Fry each half until lightly golden (do NOT overcrowd the pan), about 1 to 2 minutes. Remove with a slotted spoon. Place on a plate lined with a double layer of paper towels.

8 popsicle sticks
10 oz dark chocolate, chopped and melted in a double boiler
2 bananas, peeled and cut width-wise into 8 pieces
1-1/2 cups dry-roasted peanuts, chopped and divided
1 cup flour
2 tsp sugar
2 tsp baking powder
1 tsp ground cinnamon
1 egg
1 cup milk
1/2 cup peanut butter
Oil, for frying

Steps:

  • Line a baking sheet with parchment paper. Dip a popsicle stick into the melted chocolate. You want to have about a half-inch of chocolate on the tip. Stick the chocolate-covered end into the bottom of a banana piece, about halfway in. Place the banana on the baking sheet and repeat with the remaining pieces. When complete, place the baking sheet in the freezer for about 15 minutes. Keep the remaining chocolate warm. Place 1 cup of the chopped peanuts on a shallow plate. Remove the bananas from the freezer, and one at a time, use a spoon to cover each piece with chocolate. Remove any excess on the edge of the spoon. Dip and roll each banana into 1 cup of the peanuts and then place them back on the baking sheet. Reserve the leftover chocolate. Place the baking sheet into the freezer for 30 minutes. Heat deep fryer to 375°F. About 20 minutes into the banana freezing time, prepare the batter by combining the flour, sugar, baking powder, and cinnamon in a medium-size bowl. In a large bowl, whisk together the egg, milk, and peanut butter. Whisk the dry ingredients into the wet ingredients until smooth. Fold in the remaining chopped peanuts. Remove the bananas from freezer. One at a time, dip each banana into the batter being sure to cover the entire banana up to the popsicle stick. Let the excess batter drip off. Carefully submerge the banana into the hot oil and hold onto the end of the popsicle stick for about 6-8 seconds. Release and let it continue to fry, turning it with a pair of tongs until evenly dark golden brown. Remove the banana from the oil and drain it on paper towels. Repeat with the remaining bananas. Serve immediately with the leftover chocolate for dipping.

9 bananas, firm and ripe, sliced into 1 inch pieces

Steps:

  • In a small bowl, combine the first four ingredients.
  • In a large bowl, combine the egg, oil, milk, and vanilla. Gradually add the flour mixture to the egg mixture, stirring often.
  • Pour the oil to a depth of 2 inches into a Dutch oven; heat to 375 degrees. Dip the banana slices into the batter; fry in hot oil 3 1/2 to 4 minutes or until golden. Drain on paper towels.

5-Ingredient Fix Contest Entry. My inspiration for this recipe came from the "King". It's no secret that one of Elvis Pressely's favorite snacks was a fried peanut butter and banana sandwhich encrusted in potato chips. So I went for the banana encrusted in potato and peanut butter then deep fried it of coarse. I was surprised how well the flavors worked and the banana was just perfect. A great easy snack or what a way to dress up a banana split.

2 large bananas, sliced down the middle then in half
1/2 cup Simply Potatoes Traditional Mashed Potatoes
1/4 cup powdered sugar
2 1/2 tablespoons peanut butter
oil (for frying)

Steps:

  • Warm potatoes 30 seconds in microwave.
  • With a spoon make sure potatoes are mashed really good getting all lumps out.
  • Add peanut butter and combine with powdered sugar, blend well.
  • Place bananas in batter make sure bananas well coated on all sides.
  • Drop bananas in hot oil cook for 45-60 seconds.
  • Serve with powdered sugar sprinkled on top.

Steps:

  • Cut the bananas in half horizontally.
  • Insert popsicle sticks in the middle of the banana halves. Transfer bananas to a parchment paper-lined baking sheet, and freeze until solid.
  • In a tall glass or mixing cup, add chocolate and coconut oil. Microwave in 30-second intervals for 1 minute and a half, and mix until smooth.
  • In a bowl, mix the peanut butter and almond milk until smooth.
  • Dip the bananas into the chocolate coating, then drizzle the peanut butter sauce on the banana.
  • Place bananas in freezer until the coating has hardened.
  • Enjoy!

1/2 cup hazelnuts, toasted and finely chopped
1/2 cup fresh breadcrumb
vegetable oil
1 1/2 tablespoons butter
1 cup brown sugar
4 tablespoons water
1 1/4 cups coconut milk

Steps:

  • Peel the bananas and cut them in half lengthways, then half again, so that you have long strips.
  • Mix the hazelnuts and breadcrumbs in a bowl and roll the banana pieces in it.
  • Press some of the mixture into the flesh to make sure it is well coated.
  • Heat all the sauce ingredients in a small heavy sauce pan, stirring constantly.
  • Heat the oil in a wok to 180 degrees Celsius.
