Recipe by Wolfgang Puck, "Wolfgang Puck's Home Cooking" originally appeared in August, 2007 EatingWell Magazine. These steaks make a better match for a fruity red a Zinfandel than a more structured Cabernet.

1/4 cup vegetable oil, plus more for rubbing
4 medium shallots, thinly sliced
4 garlic cloves, minced
1 tablespoon finely grated gingerroot
1/2 teaspoon crushed red pepper flakes (to taste)
1/3 cup chopped cilantro
1/3 cup hoisin sauce
3 tablespoons soy sauce
1/2 cup chicken stock
3 tablespoons honey
3 tablespoons unsalted butter
6 (1/2 lb) beef strip steaks (1/2 lb each)
2 large sweet onions, sliced crosswise 1/2 inch thick
salt & freshly ground black pepper, to taste

Steps:

  • Light a grill.
  • In a medium saucepan, heat the 1/4 cup of oil.
  • Add the shallots, garlic, ginger, crushed red pepper and cilantro and cook over moderate heat, stirring occasionally, until softened, about 7 minutes.
  • Add the hoisin, soy sauce and chicken stock, raise the heat to moderately high and boil until thickened, about 5 minutes.
  • Stir in the honey.
  • Remove from the heat and stir in the butter until blended; keep warm.
  • Generously rub the steaks and onions with oil and season with salt and pepper.
  • Grill the steaks over high heat for 4 minutes per side, or until nicely browned and medium-rare.
  • Transfer the steaks to a carving board and let rest for 5 minutes.
  • Grill the onions for 4 minutes per side, or until charred.
  • Transfer the onions to a platter.
  • Thickly slice the steaks and arrange on the platter.
  • Serve with the steak sauce, baked potatoes with choice of toppings and haricots verts.

The (underrated) hoisin sauce is a thickened, fermented soy-sauce-like substance, flavored with chilies, garlic, vinegar, sugar, and, of course, exotic spices. It makes a great marinade. And unless you horribly overcook it, this skirt steak is juicy and tender.

1 (1 pound) beef skirt steak
⅓ cup hoisin sauce
3 tablespoons Chinese vinegar (or sherry vinegar)
1 tablespoon soy sauce
2 teaspoons hot sauce
2 teaspoons sesame oil
1 tablespoon grated fresh ginger root
4 cloves garlic, finely minced
1 tablespoon packed brown sugar
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 green onion, light parts only, minced
Toasted sesame seeds

Steps:

  • Whisk hoisin sauce, vinegar, soy sauce, hot sauce, sesame oil, grated ginger, garlic, brown sugar, salt, and pepper together in a large mixing bowl.
  • Cut skirt steak crosswise into about 4 or 5 smaller pieces. Transfer steak into marinade and toss until all pieces are evenly coated. Cover with plastic wrap. Refrigerate; marinate at least 2 hours and up to 12 hours.
  • Line a baking pan with paper towels. Transfer pieces of steak to the paper towels and mop off some of the marinade.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Transfer steak pieces to grill. Cook to medium rare or medium, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read between 130 and 135 degrees F (about 54 degrees C). Thinner pieces might finish earlier. Transfer steak to a warm plate. Let rest for a few minutes.
  • Transfer steak to a warm serving platter and pour any accumulated juices over skirt steak. Sprinkle with sesame seeds and sliced green onions.

2 fat chicken livers
2 tablespoons plus 1 cup water
1 tablespoon canola or other neutral oil
1 large clove garlic, finely minced
1/4 to 1/2 teaspoon dried red chile flakes
1 teaspoon tomato paste
6 to 8 tablespoons hoisin sauce
1 teaspoon fish sauce (optional)
1 1/2 teaspoons cornstarch dissolved in 1 1/2 teaspoons water
2 tablespoons unsalted roasted peanuts, finely chopped
1 teaspoon sesame seeds, toasted (page 332)

Steps:

  • Rinse the chicken livers and trim away any visible membrane. In an electric mini-chopper, combine the liver and the 2 tablespoons water and process until smooth. (Or, mince the livers by hand, flipping them over occasionally with the knife blade to ensure that you are reducing them to a shapeless mass. Use the knife blade to transfer the minced livers to a small bowl and combine with the 2 tablespoons water.)
  • In a small saucepan, combine the oil, garlic, and chile flakes over medium-low heat. When the oil is sizzling and pale yellow, add the tomato paste, breaking it up with a whisk or fork. When the oil is a bright yellow-orange, immediately pour in the 1 cup water to stop the cooking. Increase the heat to medium and whisk in the liver mixture. Discard the larger liver pieces that eventually cling to the whisk. As the sauce cooks and changes color, the liver will appear as brown bits.
  • When the sauce begins to boil, whisk in 6 tablespoons hoisin sauce. Let the sauce cook for 1 minute and taste, adding more hoisin sauce, if necessary. The amount you use depends on the brand and your own taste. Aim for a sweet, tangy, spicy balance. For extra depth, add the fish sauce. Bring the sauce to a simmer, whisk in the cornstarch mixture, and then cook for about 30 seconds, or until thickened. Remove from the heat and let cool, uncovered, to concentrate the fl avors and thicken further. (The sauce may be prepared ahead and refrigerated for up to 1 day or frozen for up to 1 month. Return to room temperature or warm slightly before serving.)
  • Transfer the sauce to a bowl and sprinkle the peanuts and sesame seeds on top. Put the sauce on the table so that diners can serve themselves. (Or, divide the sauce among individual dipping sauce bowls and then sprinkle with peanuts and sesame seeds before serving.)

1 tbsp soy sauce
1 tbsp dry sherry
2 tsp sesame oil
1 fat garlic clove , crushed
1 tsp finely chopped fresh root ginger (or fresh ginger paste in a jar)
200g lean sirloin steak , thinly sliced across the grain
1 tbsp sesame seeds
1 tbsp sunflower oil
1 large carrot , cut into matchsticks
100g mangetout , halved lengthways
140g mushrooms , sliced
3 tbsp hoisin sauce
Chinese noodles , to serve

Steps:

  • Mix together the soy sauce, sherry, sesame oil, garlic and ginger in a shallow dish. Add the steak and leave to marinate for about 20 minutes (or longer, if you have time).
  • Heat a large heavy-based frying pan or wok, add the sesame seeds and toast over a high heat, stirring, for a few minutes until golden. Tip on to a plate.
  • When ready to cook, heat the sunflower oil in a large frying pan or wok until hot. Add the steak with the marinade and stir fry for 3-4 minutes over a high heat until lightly browned. Remove, using a slotted spoon, on to a plate, leaving the juices in the pan.
  • Toss the carrots in the pan and stir fry for a few minutes, then add the mangetout and cook for a further 2 minutes.
  • Return the steak to the pan, add the mushrooms and toss everything together. Add the hoisin sauce and stir fry for a final minute. Sprinkle with the toasted sesame seeds and serve immediately.

3 garlic cloves, minced

1/2 cup low-salt chicken broth
1/4 cup hoisin sauce*
3 tablespoons light soy sauce
2 tablespoons honey
2 unpeeled English hothouse cucumbers, cut into 1/4-inch cubes
1/4 cup seasoned rice vinegar
1 tablespoon toasted sesame seeds
2 teaspoons minced peeled fresh ginger
2 1-pound grass-fed New York strip steaks (each about 1 inch thick)
2 Maui or Vidalia onions, cut into 1/2-inch-thick rounds

Steps:

  • Heat oil in medium saucepan over medium heat. Add shallots and next 4 ingredients; sauté 5 minutes. Add broth, hoisin, and soy sauce; boil until slightly thickened, about 5 minutes. Stir in honey. DO AHEAD: Can be made 1 day ahead. Cover and chill. Rewarm sauce before using.
  • Mix all ingredients in large bowl. Season with salt and pepper.
  • Prepare broiler or barbecue (medium-high heat). Brush both sides of steaks and onion slices with oil. Brush steaks with some of sauce. Broil steaks until cooked to desired doneness, about 5 minutes per side for medium-rare. Transfer to work surface to rest. Broil onions until charred, about 4 minutes per side.
  • Thinly slice steak. Separate onion rings. Spoon relish into 6 bowls; place 1 bowl on each of 6 plates. Divide steak, onions, and sauce equally among plates.
  • Available in the Asian foods section of many supermarkets and at Asian markets.
