Lemony Greek dolmades stuffed with a rice and herb mixture. The pinenuts are optional!

1 cup rice
80 grape leaves
⅓ cup fresh dill ((chopped))
⅓ cup Italian parsley ((chopped))
⅓ cup fresh mint ((chopped))
1 small onion ((diced))
4 scallions ((diced))
2 cloves garlic ((minced))
¼ cup pinenuts ((optional))
½ Tbsp dill weed
½ cup fresh lemon juice
½ cup olive oil
2 tsp sea salt
1 tsp black pepper
1½ cup hot water
1½ cups Greek yogurt
2 Tbsp fresh dill
1 clove garlic ((pressed))
¼ tsp sea salt
⅛ tsp citric acid

Steps:

  • Soak the rice in cold water and set aside while you work on the other steps.
  • Prepare freshly picked grape leaves by washing them first, then plunging them in boiling water until soft and pliable, approximately 30 seconds. Continue until all the leaves are blanched. If using brined grape leaves, rinse well before using.
  • Drain the rice and add to a large mixing bowl. Add the chopped dill, mint, onion, scallions, and parsley.
  • Toast pine nuts in a pan, if using, stirring frequently to prevent burning. Add the toasted pine nuts to the bowl with the other ingredients.​
  • Mix lemon juice and olive oil and whisk in the salt and pepper. Pour half of this mixture over the filling ingredients and mix to combine. ​​
  • Place grape leaves bumpy side up, on a plate or cutting board. I like to do five at a time. Next, add approximately 1 tablespoon of the rice mixture to the center of each grape leaf. Fold the sides of the grape leaf to cover the filling, then fold the bottom part over the filling and roll up all the way up as tightly as possible.
  • Line the bottom of a 9" x 13" baking dish with the larger grape leaves that are not desirable for cooking. This is done to prevent the dolma from burning or sticking to the bottom of the pan.
  • Place rolled Dolmades in tight rows in the prepared baking dish until you fill the entire dish. Sprinkle with dill weed, if using. If you have extra dolma left, add it as a second layer.

1/2 cup extra-virgin olive oil
1 large yellow onion, finely chopped
1 small fennel bulb, halved, cored and diced
1 teaspoon grated lemon zest
1/2 cup pine nuts
1 cup long-grain rice
1 1/2 cups chicken stock
2 tablespoons finely chopped dill leaves
1/4 cup finely chopped flat-leaf parsley
Kosher salt and freshly ground black pepper
1 (8-ounce) jar grape leaves, rinsed and drained
2 lemons, juiced

Steps:

  • To make the filling, coat a large saute pan with 1/4 cup of the oil and place over medium heat. Add the onion, fennel and lemon zest and stir until soft, about 10 minutes. Add the pine nuts and rice, saute for 2 minutes, stirring to coat. Pour in just 1/2 cup of the chicken stock and lower the heat. Simmer until the liquid is absorbed and the rice is al dente, about 10 minutes. Scrape the parboiled rice mixture into a bowl and add the dill and parsley; season with salt and pepper. Allow to cool. Now on to the grape leaves.
  • Bring a big pot of water to a simmer. Blanch the grape leaves in the hot water for 5 minutes until pliable. Drain then trim the stems and any hard veins from the leaves. Pat dry with paper towels.
  • To assemble the dolmades, lay a grape leaf on a work surface, shiny-side down. Put 2 tablespoons of the rice filling near the stem end of the leaf. Fold the stem end over the filling, then fold both sides toward the middle, and roll up into a cigar ¿ it should be snug but not overly tight because the rice will swell once it is fully cooked. Squeeze lightly in the palm of your hand to secure the roll. Repeat with remaining grape leaves and filling.
  • Place the dolmades in a large Dutch oven or wide deep skillet, seam-side down in a single layer. Pour the remaining cup of broth, remaining olive oil, and the lemon juice over the dolmades, the liquid should reach halfway up the rolls, add some water if necessary. Cover the pan and simmer over low heat for 30 to 40 minutes, until the dolmades are tender when pierced with a fork. Serve warm, at room temperature or cool.

1/4 cup extra-virgin olive oil
1 cup minced onion
1/2 cup pine nuts
1 cup raw jasmine rice
1/2 cup chopped currants or 1/2 cup raisins
1/2 cup minced fresh Italian parsley
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh fennel greens
1/2 teaspoon grated lemon zest
1/2 teaspoon salt
1/4 teaspoon ground cardamom
1/8 teaspoon ground cinnamon
2 3/4 cups chicken stock, divided
1/4 cup fresh lemon juice
1/4 cup olive oil
1 lemon, cut in half lengthwise and thinly sliced, for garnish

Steps:

  • Separate the grape leaves, and rinse them under cold running water.
  • Soak the leaves in cold water while the rice cooks and cools.
  • Heat a medium saucepan over medium heat and add 1/4 cup extra-virgin olive oil.
  • When the oil is hot, add in the onion and saute until it is soft.
  • Add in pine nuts, raw rice, and currants; cook, stirring for 2-3 minutes.
  • Add in parsley, chives, tarragon, fennel greens, lemon zest, salt, cardamom, cinnamon, and 2 cups of chicken stock and bring to a simmer; do not stir.
  • Cover, decrease heat, and let the rice cook until it is tender and the liquid has been absorbed, about 20 minutes.
  • Remove the rice from the heat, fluff it with a fork, and transfer it to a large bowl to cool.
  • Drain the grape leaves and lay them out on a towel to dry.
  • Working with one leaf at a time, place a rounded teaspoonful (don't overstuff) of the rice filling at the base of the leaf where it connects to the stem.
  • Cover the filling with the tail end of the leaf and roll it.
  • Fold the sides of the leaf to the center to enclose the filling, and roll up the package.
  • Finish with the seam on the bottom; repeat to roll the remaining grape leaves.
  • Line the bottom of a 3-quart saucepan with the grape leaves that have ripped or torn.
  • Place a layer of rolls in the pan, drizzle a little of the lemon juice on top, and lay a few grape leaves over them to cover.
  • Continue to layer the rolls in the pan.
  • Top with more ripped or torn grape leaves to cover.
  • Pour the olive oil, remaining 3/4 cup chicken stock, and remaining lemon juice into pan, cover, and place the pan over medium heat.
  • Braise for about 45 minutes at a bare simmer.
  • Remove the pan from the heat and let cool until the rolls are easily handled.
  • Arrange the grape leaves on a tray and garnish with sliced lemon.
  • Serve warm or at room temperature.
  • Make ahead: the stuffed grape leaves can be kept, covered and refrigerated for 3 days.

6 tablespoons olive oil
1 onion, chopped
2/3 cup (about 4 1/2 ounces) Uncle Ben's Long Grain and Wild Rice
1/2 teaspoon ground allspice
1 1/2 cups water
1/4 cup dried currants
1/4 cup pine nuts
1 8-ounce jar grape leaves,* drained
1/4 cup water
1/4 cup fresh lemon juice
Fresh lemon wedges
Chopped fresh parsley
*Available at Greek, Middle Eastern and most Italian markets.

Steps:

  • Heat 2 tablespoons oil in heavy medium saucepan over medium heat. Add onion and sauté until tender, about 5 minutes. Add rice and allspice and stir 30 seconds. Add 1 1/2 cups water and currants and bring to boil. Reduce heat to low, cover and simmer until water is absorbed and rice is tender, about 20 minutes. Remove from heat.
  • Heat 1 tablespoon oil in heavy small skillet over medium-low heat. Add pine nuts and sauté until golden brown, about 6 minutes. Mix nut mixture into rice. Season with salt and pepper.
  • Bring large pot of water to boil. Add grape leaves and stir to separate. Turn off heat; let stand 1 minute. Drain. Rinse with cold water to cool; drain well.
  • Cover bottom of heavy large skillet or Dutch oven with about 10 grape leaves, pressing about 1 inch up sides of skillet. Arrange 1 leaf, vein side up, on work surface. Place 1 rounded tablespoon rice filling near stem. Fold in sides, then roll up jelly roll fashion. Repeat with remaining filling and leaves. Arrange stuffed leaves, seam side down, close together in leaf-lined skillet. Drizzle 3 tablespoons oil over. Add 1/4 cup water and fresh lemon juice. Bring to boil. Reduce heat to medium-low, cover and cook 50 minutes. Cool completely. (Grape leaves can be made 1 day ahead. Cover and refrigerate.)
  • Arrange stuffed grape leaves on platter. Garnish with lemon and parsley.

1 32-ounce jar grape leaves, rinsed, drained, tough stems trimmed
Plain yogurt and lemon wedges

Steps:

  • Heat oil in heavy large saucepan over medium-high heat. Add onions; sauté until translucent, about 7 minutes. Stir in rice, lemon juice, parsley, dill and 1 cup hot water. Season with salt and pepper. Reduce heat.
  • Cover and simmer until rice is partially cooked and no liquid remains, stirring occasionally, about 12 minutes. Remove from heat.
  • Cover bottom of heavy large wide saucepan with some grape leaves. Place 1 large grape leaf on work surface. Spoon scant 1/4 cup rice mixture in center at widest part of leaf. Fold bottom of leaf over. Fold sides in. Roll up. Place seam side down in pan. Repeat filling and rolling with remaining rice filling and grape leaves, stacking filled leaves atop one another in pan if necessary. Pour enough hot water over just to cover. Place heavy large heatproof plate over stuffed grape leaves. Cover.
  • Simmer over medium-low heat until leaves are tender and rice is cooked through, about 1 hour. Using slotted spoon, transfer stuffed grape leaves to platter. Serve warm or cold with yogurt and lemon wedges.

LAMB AND RICE STUFFED GRAPE LEAVES

These lamb and rice stuffed grape leaves (dolmas) take some time and effort to put together, so maybe make a double batch. In restaurants these are usually meatless, but I love the lamb in these. No matter what you use, how much rice you use will affect how much liquid you need.

½ pound ground lamb
½ cup uncooked long grain rice
¼ cup olive oil
2 tablespoons chopped fresh mint
1 tablespoon dried currants
1 tablespoon pine nuts
1 ½ teaspoons kosher salt
1 teaspoon ground black pepper
½ teaspoon ground cumin
¼ teaspoon ground cinnamon
¼ teaspoon dried oregano
1 large egg
1 (16 ounce) jar grape leaves
1 tablespoon olive oil
juice of one lemon
4 cups hot chicken broth
2 teaspoons olive oil, or as desired

Steps:

  • Place ground lamb, rice, 1/4 cups olive oil, mint, currants, pine nuts, salt, pepper, cumin, cinnamon, oregano, and egg in a bowl. Mix together thoroughly with a fork. Cover and refrigerate until ready to use.
  • Gently unroll and separate grape leaves. Rinse in cold water to remove brine. Drain. Reserve broken or less-than-perfect leaves to line pot.
  • Place grape leaves on work surface with smooth side down (ribs of leaves up). Place a rounded tablespoon of lamb-rice filling near bottom-center of grape leaf. Fold bottom sections of leaf over mixture, fold over sides, and roll toward the top of the leaf into a firm cylinder. Don't roll too tightly or leaves may burst when rice cooks.
  • Drizzle 1 tablespoon olive oil into pot; line bottom of pot with 1 or 2 layers of reserved grape leaves. Place dolmas in pot by arranging them along the sides, then working toward the center to cover the bottom. Leave enough space between dolmas to allow for expansion, but close enough to hold their shapes when cooking. If necessary, stack another layer on top of the first so they all fit. Pour in lemon juice and 2 teaspoons olive oil.
  • Invert a small plate and then a larger plate over the dolmas to weigh them down while they cook and prevent them from shifting. Pour in hot chicken broth. Bring to a simmer, uncovered, over medium-high heat. As soon as liquid is heated through and starting to bubble (2 to 4 minutes), reduce heat to low, cover the pot, and cook 35 minutes. Remove plates and check for doneness. Dolmas should look a bit puffed up, and a fork should pierce them easily. If not quite done, continue cooking without the weights: cover the pot and simmer until rice is tender, 10 to 15 minutes longer.
  • Serve warm or chilled. Garnish with curls of lemon zest, if desired.

1/2 pound grape leaves
2 large onions, finely chopped
2/3 cup extra virgin olive oil
2 tablespoons pine nuts
1 1/2 teaspoons tomato paste
1 cup short-grain or risotto rice
2 tablespoons currants or tiny black raisins
Salt and black pepper
1 teaspoon ground allspice
2 to 3 tablespoons chopped mint
2 to 3 tablespoons chopped dill
2 tomatoes, sliced
1 teaspoon sugar
Juice of 1 lemon, or to taste

Steps:

  • If using grape leaves preserved in brine, remove the salt by putting them in a bowl and pouring boiling water over them. Make sure that the water penetrates well between the layers. Leave them to soak for 20 minutes, then rinse in fresh, cold water and drain. If using fresh leaves, plunge a few at a time in boiling water for a couple of seconds only, until they become limp, then lift them out. Cut off and discard the stalks.
  • For the filling, fry the onions in 3 tablespoons of the oil until soft. Add the pine nuts and stir until they are golden. Stir in the tomato paste, then add all the rest of the ingredients down to and including the chopped dill. Mix well.
  • On a plate, place the first leaf, vein side up, with the stem end facing you. Put one heaped teaspoonful of filling in the center of the leaf near the stem end. Fold that end up over the filling, then fold both sides toward the middle and roll up like a small cigar. Squeeze the filled roll lightly in the palm of your hand. Fill the rest of the leaves in the same way. This process will become very easy after you have rolled a few.
  • Line the bottom of a large, heavy-bottomed pan with tomato slices and any leftover, torn, or imperfect grape leaves, then pack the stuffed grape leaves tightly on top.
  • Mix the remaining olive oil with 2/3 cup water, add the sugar and lemon juice, and pour over the stuffed leaves. Put a small plate on top of the leaves to prevent them from unrolling, cover the pan, and simmer very gently for about 1 hour, until the rolls are thoroughly cooked, adding more water occasionally, a small coffee cupful at a time, as the liquid in the pan becomes absorbed. Let the stuffed grape leaves cool in the pan before turning them out.

Steps:

  • Heat 1/4 cup of the olive oil in a large skillet over medium-high heat; cook onions until soft, about 5 minutes. Add the rice; cook, stirring until rice begins to color. Cover; lower heat to low. Cook 5 minutes. Stir in the water, dill, pine nuts, salt and pepper, simmer 5 minutes. Let cool.
  • Place a heaping teaspoon of the filling in the center of each grape leaf with the shiny surface down. Fold the sides of the leaf over the filling; roll up loosely (the rice will swell when cooked). Place rolls in layers in a Dutch oven.
  • Sprinkle with lemon juice. Add remaining 1/4 cup of olive oil and 1 1/12 cups hot water. Place a heatproof plate over the rolls to prevent them from opening. Cover; simmer over low heat 1 hour. Let cool in the pan; refrigerate until ready to serve.
