This homemade granola is packed with flavours of cinnamon, nutmeg and coconut. It's a delicious accompaniment to yogurt for one hearty, filling breakfast!

4 cups large flake oats (rolled oats)
1 cup almonds
1/2 cup coconut oil (melted)
1/2 cup maple syrup
1/4 cup brown sugar (optional)
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup coconut flakes (or unsweetened shredded coconut)
Chocolate chips
Dried cranberries
Dried figs (chopped)
Dried apricots (chopped)

Steps:

  • Preheat oven to 325 degrees Fahrenheit. Line a large baking sheet with parchment paper and set aside.
  • Meanwhile, in a bowl, mix oats with almonds.
  • In another bowl, whisk together the coconut oil, maple syrup, brown sugar (if using), vanilla extract, cinnamon, salt and nutmeg until well combined. Pour over oat/almond mixture. Stir well to combine.
  • Pour mixture onto prepared baking sheet, pressing down so it's an even layer. Bake for 20 minutes.
  • Rotate the baking sheet and bake the granola for another 15 minutes.
  • Remove the baking sheet from the oven, add coconut chips (or shredded coconut) over top and bake for another 3 to 4 minutes.
  • Allow the granola to cool completely on the baking sheet before breaking up into clusters. The more you handle, the smaller the pieces you will have. If desired, stir in optional granola add-ins to taste. Serve and enjoy!

2 cups Grape-Nuts
1-1/2 cups sweetened shredded coconut
1 cup toasted wheat germ
1 cup sunflower kernels
1 cup chopped almonds
1 cup chopped walnuts
1/2 cup sesame seeds
1 cup packed brown sugar
1 cup butter, cubed
1 cup honey
1/2 cup canola oil
2 tablespoons molasses
3 teaspoons vanilla extract
1/2 teaspoon salt
3 cups raisins

Steps:

  • In a very large bowl, combine the first eight ingredients. In a large saucepan over medium heat, cook the brown sugar, butter, honey, oil and molasses for 2-3 minutes or until sugar is dissolved. Remove from the heat; stir in vanilla and salt. Pour over oat mixture and toss to coat. , Transfer to two greased 15x10x1-in. baking pans. Bake at 350° for 20-25 minutes or until golden brown, stirring twice. Cool, stirring occasionally. Stir in raisins. Store in airtight containers.

Homemade granola couldn't be easier with Alton Brown's recipe from Good Eats on Food Network. Maple syrup sweetens this healthy melange of oats and nuts.

3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  • Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

⅓ cup pure maple syrup

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Line 2 baking sheets with parchment paper.
  • Combine oatmeal, sunflower seeds, pumpkin seeds, sesame seeds, flax seeds, wheat germ, chopped dried cherries, salt, and cinnamon in a large bowl.
  • Mix applesauce, maple syrup, and vanilla in a separate bowl.

2 cups sweetened shredded coconut
2 cups sliced almonds
3/4 cup vegetable oil
1/2 cup good honey
1 1/2 cups small diced dried apricots
1 cup small diced dried figs
1 cup dried cherries
1 cup dried cranberries
1 cup roasted, unsalted cashews

Steps:

  • Preheat the oven to 350 degrees F.
  • Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 by 18 by 1-inch sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.
  • Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, figs, cherries, cranberries, and cashews. Store the cooled granola in an airtight container.

4 teaspoons pure vanilla extract
1 teaspoon salt
8 cups rolled oats
2 cup chopped pecans or walnuts, or slivered almonds

Steps:

  • Preheat oven to 275 degrees F.
  • Line 2 cookie sheets with parchment paper and reserve.
  • Combine brown sugar and water in a 4-cup microwave proof glass measuring cup or bowl. Place in microwave on high for 5 minutes and cook until sugar is completely dissolved. Remove from microwave, add vanilla extract and salt.
  • In a large mixing bowl, combine oats, nuts, and brown sugar syrup mixture. Stir until thoroughly mixed. Spread the granola onto cookie sheets and bake 45 minutes to 1 hour or until golden and crunchy.
  • When the mixture comes out of the oven, it is still very pliable. You may choose to add in dried fruit as a finishing touch at this time. When granola has cooled completely, store in an airtight container.

50g pumpkin seed
50g sunflower seed
50g cashew
25g pine nut
4 medjool dates , sliced
75ml maple syrup
25g soft brown sugar
1 tbsp olive oil

Steps:

  • Heat oven to 180C/160C fan/gas 4. Roughly blitz hazelnuts, pumpkin seeds, sunflower seeds, cashew nuts, pine nuts and dates in a food processor (or bash with a rolling pin in a sandwich bag), and transfer to a bowl.
  • Bring maple syrup, sugar and olive oil to boil in a small saucepan. Pour over the granola and stir well. Spread onto a large baking sheet and bake for 35-40 mins, turning regularly, until golden brown. Leave to cool in a large bowl before serving sprinkled over your oats. Keeps for 1 week.

Steps:

  • Heat oven to 275 degrees F.

175g mixed nuts (pecan halves and peanuts in their red skins)
450g rolled oats
50g sesame seeds
50g sunflower seeds
125ml sunflower oil
100ml runny honey (try one of the lightly flavoured flower ones)
half a 170g packet dried berries and cherry

Steps:

  • Preheat the oven to 190C/Gas 5/fan oven 170C. Halve some of the pecans, leave some whole. Mix with peanuts, oats, sesame seeds, sunflower seeds and a pinch of salt in a large bowl. In a jug, measure the oil and pour into the mixture, then measure the honey - it will slide out easily. Stir together with a fork to break up any big clumps of oats.
  • Pour on to a large baking tray with sides, preferably non-stick, in a thin layer. Bake for 20-25 minutes, stirring well at least twice and bringing the mixture in from the edges, until it is golden. Transfer to a large bowl and leave to cool.
  • Mix in the berries and cherries and serve with plenty of chilled milk.
  • Store for up to 1 month in airtight container.
