I first had this sandwich at a small restaurant and immediately went home to duplicate the recipe. I've been making my grilled cheese sandwiches this way ever since!

2 slices Italian bread
1 tablespoon softened butter, divided
1 tablespoon prepared pesto sauce, divided
1 slice provolone cheese
2 slices tomato
1 slice American cheese

Steps:

  • Spread one side of a slice of bread with butter, and place it, buttered side down, into a nonstick skillet over medium heat.
  • Spread the top of the bread slice in the skillet with half the pesto sauce, and place a slice of provolone cheese, the tomato slices, and the slice of American cheese onto the pesto.
  • Spread remaining pesto sauce on one side of the second slice of bread, and place the bread slice, pesto side down, onto the sandwich. Butter the top side of the sandwich.
  • Gently fry the sandwich, flipping once, until both sides of the bread are golden brown and the cheese has melted, about 5 minutes per side.

1 loaf (1 pound) French bread
1 cup prepared pesto
1 pound thinly sliced deli turkey
1/2 pound provolone cheese, thinly sliced
2 small zucchini, thinly sliced
2 medium tomatoes, thinly sliced
1 medium red onion, thinly sliced

Steps:

  • Preheat oven to 350°. Cut the top fourth off loaf of bread. Carefully hollow out the bottom, leaving a 1/2-in. shell. (Discard removed bread or save for another use.) Spread pesto on the inside of top and bottom of bread. Set top aside., In bottom of bread, layer the turkey, cheese, zucchini, tomatoes and onion. Gently press the layers together. Replace bread top and wrap tightly in foil. , Place on a baking sheet. Bake 25-30 minutes or until heated through. Let stand 10 minutes before cutting.

1 cup sourdough starter
1/4 cup water
3 tablespoons purchased pesto sauce
3 cups bread flour
1/4 cup grated parmesan cheese
3/4 teaspoon salt
1/8 teaspoon coarse ground black pepper
1 teaspoon yeast (optional)

Steps:

  • Add ingredients to bread machine according to manufacturer's instructions.
  • Select cycle-- regular white, or dough cycle if baking in conventional oven (yeast is not necessary if baking in conventional oven).
  • If baking in oven, at end of dough cycle shape into loaf and place in lightly greased bread pan, or shape into free-form loaf (round or elongate) and place on lightly greased baking sheet.
  • Cover and let rise until about doubled.
  • Bake at 350 degrees F about 30 to 40 minutes, or until golden brown.
  • Remove from pan and cool on wire rack.
  • Brush crust with butter if a soft crust is preferred.

6 ounces smoked chicken, sliced
1/4 cup pesto sauce
1 medium yellow bell pepper, cut in rings
1 medium tomatoes, sliced
8 slices mozzarella cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cut off top 1/3 of the bread loaf. hollow bread loaf leaving about 1/4 inch of the bread wall.
  • Layer 1/2 of each ingredient; then repeat.
  • Replace top of loaf.
  • Wrap tightly in foil.
  • Bake 40 minutes.
  • Let stand 5 minutes.

One of my favorite sandwiches--I keep a round loaf of sliced sourdough in the freezer at all times, just for this sandwich. A good ciabatta would be equally good, I think. You could easily sub your favorite cheese for the provolone, try swiss. Feel free to adjust ingredient amounts to suit your taste. Lovely with a cup of soup or side salad, for a satisfying quick and easy lunch or weeknight meal. Enjoy!

1 -2 slice lightly smoked deli turkey (thin slices)
1 slice provolone cheese
romaine lettuce
1 slice fresh tomato
1 slice red onion (thin slice) (optional)
1 teaspoon butter, softened (or mayonnaise)
1 teaspoon good quality pesto sauce (to taste)
1/4 teaspoon white wine Dijon mustard (optional)
1 dash balsamic vinegar (optional)
2 slices fresh sourdough bread, lightly toasted

Steps:

  • For each sandwich, spread each slice of lightly toasted bread on one side with softened butter, pesto and white wine Dijon mustard (use more or less, to taste).
  • Assemble your sandwich with romaine, slice of fresh tomato and thin slice of red onion, slice of provolone cheese, one or two thin slices lightly smoked deli turkey meat, and a light drizzle of balsamic.
  • Slice in half to serve. Enjoy!

A festive way to serve party sandwiches. For baby and bridal showers, I add a bit of food coloring to match the theme and garnish the serving platter with fresh flowers. If you are making 2 loaves you can use one white and one wheat loaf and alternate the slices. The loaf can be made ahead of time. Posted by request.

1 loaf firm bread, unsliced
softened butter
3 cups shrimp or 3 cups eggs, salad (finely chop ingredients)
1/2 lb cream cheese, softened
mayonnaise or cream
food coloring (optional)

Steps:

  • Remove the bread crusts and slice the loaf lengthwise into 4 slices.
  • Butter 2 slices on 1 side for the top and bottom, butter the 2 remaining slices on both sides.
  • Spread a layer of salad (you can use the same or different salads) on the bottom slice, add another slice then salad, repeat and top with the last slice butter side down.
  • Press down on the loaf just enough to compact the layers.
  • Combine cream cheese with enough mayonnaise or cream to make it spreadable, add food coloring.
  • "Frost"the top and sides of the loaf, garnish and chill.
  • To serve, cut into 1/2 inch slices.

  • Place the wrapped sandwich on a secure shelf in the fridge. Place a cutting board on top of the sandwich, and then place a heavy weight on the cutting board (helps distribute the weight). You can use a cast iron pan, a brick, books, or anything else you can find. Press for at least 4 hours, up to overnight (12 hours).
  • Once the sandwich is pressed, slice vertically into 4-6 individual sandwiches. Serve immediately or wrap up the sandwiches and save for a to-go or picnic lunch. Refrigerate and enjoy within 2-3 days.
