GRANDMA'S GROUND BEEF CASSEROLE
As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
- Mix sour cream, cream cheese, and onion in a bowl.
- Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.
- Bake in the preheated oven until Cheddar cheese has browned, 25 to 30 minutes.

GRANNY'S CHEROKEE CASSEROLE
My Granny always made this for Thanksgiving and Christmas dinner.

- Preheat oven to 350 degrees F (175 degrees C).
- Place ground beef and onions in a large, deep skillet. Cook over medium high heat until beef is evenly brown. Drain any excess fat.
- Add the soup, rice, tomatoes, garlic powder, thyme, oregano and sugar. Mix well and cook over medium heat for 10 minutes. Place in a 9x13 inch casserole dish.
- Top with cheese slices and bake for 15 to 20 minutes or until cheese is bubbling and browning.

- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add the egg noodles, and cook until tender, about 8 minutes. Drain and transfer to a greased 9x13 inch baking dish.
- Melt the margarine in a saucepan over medium heat. Whisk in the flour using a fork so that no lumps form. Gradually stir in the milk. Bring to a simmer, stirring constantly, then add the cheese. Cook and stir until smooth. Stir in the cream of mushroom soup, and then the dried beef. Stir into the noodles in the casserole dish, and top with crushed potato chips.
- Bake for 30 minutes in the preheated oven, until the sauce is thick and bubbling, and top is toasted.

- 1. Preheat oven to 325 degrees.
- 2. Butter all slices of bread, chop into cubes (you can remove crusts if you prefer).
- 3. Cover bottom of a cooking sprayed 13x9x2 baking dish with 1/2 of the bread cubes. Add a layer of the chipped dried beef (chop it out of package, do not lay down the slices, 1/2 of the cheddar cheese. Repeat with a second layer. (If you don't want to take the time to layer, I just dump everything in a bowl and mix well, then pour into the baking dish).
- 4. Beat eggs slightly. Add milk to eggs, beat til well blended. Salt and pepper to taste. Pour over your layers or mixture. (If you choose to mix everything together, add the egg mixture to the bread mixture, stir together, than pour in greased baking dish).
- 5. Bake at 325 for 45-50 mins. ENJOY!!!!

- Preheat the oven to 325 degrees F (165 degrees C).
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.

- Preheat oven to 350.
- Brown ground beef and onions in a dutch oven until beef is no longer pink.
- Drain excess fat.
- Add the remaining ingredients, except for the cheese, and mix well.
- Cook over medium heat for 10 minutes.
- Place in a 9 x 13 casserole dish and top with the slices of cheese.
- Bake for 15 to 20 minutes, until cheese is bubbling and starting to brown.
- **NOTE**-Thisfreezes well (without the cheese, of course) so I usually make mine in 2 8 x 8 disposable pans and put one in the freezer for later.
- Add a small salad and some fruit and you've got an easy meal!
- **Istill think when I read it each time that it is too much garlic powder, but I have tried with less and it really does need that much.
- I also don't know why the sugar is there, but the taste is not the same without it!
MOM'S DRIED BEEF AND CORN CASSEROLE
This was my mom's favorite casserole when she was younger. However, she didn't get it very often because her brothers didn't like it as much. I like it, though, so I posted it! To make the dish less salty, rinse the beef in water before cooking. Also, cut down on the addition of salt in the recipe. (I find I need to do these things, to suit my tastes)

- Saute 1 tablespoon butter and onion, add beef and mushrooms.
- For the white sauce: Melt 2 tablespoons butter with a wooden spoon.
- Blend in flour, salt and pepper, and stir until bubbly and then remove from heat.
- Stir in milk.
- Put it back on the burner, and stir constantly.
- Bring to a boil, and boil for 1 minute- Keep stirring so it doesn't burn.
- In a small bowl, beat egg yolks and add the prepared mustard, and salt and pepper to taste.
- Combine the egg yolk mixture with the white sauce mixture and dried beef mixture.
- Add the 2 cups corn.
- Pour into a 2 1/2 quart baking dish.
- Grate 1/2 cup cheese on top.
- Sprinkle paprika on top.
- Bake covered at 350 degrees for 30 minutes.
