LINGUINE WITH CLAMS, CHERRY TOMATOES AND BASIL



Linguine with Clams, Cherry Tomatoes and Basil image

2 tablespoons extra-virgin olive oil
2 cloves garlic, roughly chopped
Kosher salt and freshly ground black pepper
1/8 teaspoon red pepper flakes
1 cup cherry tomatoes
1 cup dry white wine
1 dozen littleneck clams, soaked in ice water and scrubbed
2 tablespoons unsalted butter
4 ounces linguine
2 teaspoons lemon zest
1/2 cup loosely packed fresh basil, chiffonade

Steps:

  • Heat the oil in a large saute pan with a tight-fitting lid over medium-low heat. Add the garlic, salt, pepper and red pepper flakes and saute until fragrant; don't let the garlic brown. Add the cherry tomatoes, white wine and clams, increase the heat to high and cover the pan. Cook, stirring occasionally, until all the clams have opened, about 8 minutes. As the clams open, transfer them to a large bowl. When all the clams are removed, reduce the heat to medium-low and swirl in the butter. Season with salt and pepper.
  • Meanwhile, bring a pot of generously salted water to a boil. Cook the linguine according to the package direction. Using tongs, transfer the linguine to the saute pan with the clam juice and toss to coat. Turn off the heat and add the clams and any juices that have collected in the bowl, the lemon zest and half of the basil. Using tongs, turn the linguine to coat it with the sauce. Top with the remaining basil. Serve immediately.

3 tablespoons extra virgin olive oil
3 garlic cloves, peeled
1/2 teaspoon crushed red pepper flakes
3 lbs littleneck clams, washed and brushed
1/2 cup dry white wine, such as Pinot Grigio
2 cups lidia's flavors of italy tomato sauce, with basil or 2 cups tomato and basil pasta sauce
2 scallions
10 fresh basil leaves, washed, dried, and cut into very thin strips, chopped
salt, to taste

Steps:

  • In a large and wide heavy casserole or dutch oven, over a medium flame, heat 3 tablespoons of the olive oil. Add the garlic and cook until golden brown, stirring for approximately 2 minutes. Add crushed red pepper flakes, stir, than add the clams and wine. Place a lid on the pot, turn flame to high, and cook shaking the pot occasionally for approximately 7 minutes or until clams begin to open.
  • Pour in tomato sauce, add scallions and basil. Stir well and bring mixture to a boil.
  • Using a slotted spoon, transfer clams to a serving platter and discard any unopened shells. Spoon sauce over the clams and serve immediately.

2 stalks celery, thinly sliced
2 cloves garlic, chopped
1/2 stick Spanish chorizo or linguica sausage, diced
Pinch crushed red pepper
24 littleneck clams, scrubbed clean
1 cup Portuguese white wine, or other dry white wine
Salt and ground black pepper
2 tablespoons unsalted butter
4 ears fresh corn, kernels sliced off of the cobs
1/4 cup chopped fresh parsley
10 leaves fresh basil, julienned
1 loaf crusty French bread

Steps:

  • Heat a large, deep skillet over medium heat and add the olive oil.
  • Add the celery, garlic, chorizo and crushed red pepper and saute for 3 to 4 minutes. Add the clams and white wine, season with salt and pepper, cover and steam until the clams open, 3 to 6 minutes. Discard those that don't open.
  • Stir in the butter, corn, parsley and basil. Transfer to large serving bowl. Serve with the bread.

2 cloves garlic, minced
3 tablespoons good olive oil
2 tablespoons fresh lemon juice
6 sun-dried tomato halves in oil, drained and coarsely chopped
1/2 cup chopped fresh basil leaves
1/4 cup toasted pine nuts
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
24 littleneck clams, scrubbed clean
2 1/2 tablespoons melted butter

Steps:

  • Heat a gas grill or prepare a charcoal grill with hot coals.
  • Combine the bread crumbs, garlic, olive oil, lemon juice, sun-dried tomatoes, basil, pine nuts, salt and pepper in a large serving bowl and set aside.
  • When the grill is hot, place the clams in 1 layer on the hot grate and allow the heat to open the clams. They'll open gradually for about 5 minutes, then pop-open wide when they're done. Using tongs, remove the clams from the grill and place them in the bowl with the bread crumb mixture and toss together. Drizzle with the melted butter, and serve hot.

1 pound plum tomatoes
3 dozen littleneck clams, scrubbed well
1/4 cup water
1/2 pound linguine
3 garlic cloves, minced
1 tablespoon extra-virgin olive oil
1/2 teaspoon dried hot red pepper flakes
1/2 cup fresh basil leaves, chopped

Steps:

  • In a saucepan of boiling water blanch tomatoes, 2 or 3 at a time, 10 seconds and transfer to a bowl of ice and cold water. Peel, seed, and dice tomatoes.
  • In a large heavy kettle steam clams in water, covered, over moderately high heat 5 to 10 minutes, checking after 5 minutes and transferring them as they open to a bowl. (Discard any clams that are unopened after 10 minutes.) Remove kettle from heat, reserving liquid.
  • In a 6-quart kettle bring 4 quarts salted water to a boil and cook linguine until al dente. Drain linguine in a colander.
  • While linguine is cooking, with a small knife remove meat from the largest 24 clams, discarding shells, and in a food processor pulse just until chopped coarse. Into reserved clam liquid stir chopped clams, tomatoes, garlic, oil, and red pepper flakes and simmer 2 minutes. Add linguine, basil, remaining 12 clams in their shells, and any liquid in bowl and toss well with salt and pepper to taste.

1 pint small cherry tomatoes
1 red onion, finely chopped

A handful flat-leaf parsley, finely chopped
Black pepper
1 cup dry white wine
3 tablespoons butter, cut into small pieces
3 pounds Manilla clams, scrubbed
1/2 cup basil leaves, torn

Steps:

  • Bring water to a boil for pasta, salt water and cook pasta just shy of al dente.
  • While water comes to a boil, heat extra-virgin olive oil over medium to medium-high heat. Add anchovies and melt into oil. Add tomatoes, onions and garlic to the pan, season with crushed red pepper flakes, oregano, parsley and pepper, saute until the tomatoes and onions are soft, 8 to 10 minutes.
  • Add wine and reduce for 1 or 2 minutes, melt butter into sauce and add clams to pot. Cover the pot and cook clams until they open, 6 to 7 minutes.
  • Remove any unopened clams and add pasta to the pan. Toss linguini with sauce for about 2 to 3 minutes so the pasta absorbs the flavors. Add basil to pasta and taste to adjust seasonings.

Steps:

  • In a large pot heat oil over medium-high. Add garlic, hot pepper flakes, and oregano and cook until fragrant, 1 minute. ITALIAN CLAMS IN TOMATO AND HERB SAUCE

A delicious dish that looks fancy but is actually quite easy to make. A good dish for entertaining! Adapted from "The Essential Mediterranean Cookbook" published by Borders. Mussels can be used in place of clams. Make sure your clams aren't too small... you're eating them out of the shell!

3 tablespoons olive oil
3 garlic cloves, crushed
1/4 teaspoon crushed red pepper flakes
1 1/2 lbs tomatoes
sugar
1 loaf French bread
3 tablespoons olive oil
2 lbs live clams (I use littleneck clams, but anything of comparable size or a bit larger will work)
1 red onion
6 sprigs Italian parsley
2 sprigs thyme
1 cup white wine
1 tablespoon chopped parsley
1 tablespoon thyme leaves

Steps:

  • Buy your clams the same day you intend to cook them. This ensures that you will have as few dead clams as possible.
  • Store your clams in the fridge in a colander, covered loosely with a damp paper towel.
  • Chop the tomatoes in a food processor until they are finely diced (not yet pasty).
  • Heat 3 tbsp oil in a saucepan. Add the garlic and red pepper and cook for about a minute.
  • Add the tomatoes and sugar to taste (about 1/2 tsp). Simmer for at least 1/2 hour, preferably for a whole hour.
  • Preheat the oven to 315 degrees. Slice your bread to 1/2 inch thickness. Spread a little olive oil on each slice. Toast in the oven for 10 minutes.
  • If necessary, scrub and de-beard your clams. Any clams that have broken shells must be thrown out. Any shells that are open and will not close when tapped on the counter must be thrown out.
  • Food process the onion until it is finely diced.
  • Put 3 tbsp olive oil in a large skillet that has a lid. Heat, then add onion and cook about 3 minutes. Do not brown.
  • Add the sprigs of parsley and thyme to the pan and cook another 30 seconds, then add the wine. Boil, then simmer 5 minutes.
  • Add the clams that did not get thrown out. Cover, turn the heat to high and cook 5-8 minutes, or until the clams have opened. Shake the pan frequently to stir, but do not take off the lid.
  • After clams have opened, remove from heat. Throw out any clams that did not open (they were dead before you started cooking).
  • Strain the cooking liquid into the tomato sauce. Throw out the sprigs and the onion.
  • Place toasted bread in a ring around the outside of the serving bowl. Place the clams in the middle of the bowl and pour the tomato sauce over them.
  • Garnish with chopped parsley and thyme.

SPAGHETTI WITH RAZOR CLAMS, SEAWEED, AND TOMATO-BASIL SAUCE



Spaghetti with Razor Clams, Seaweed, and Tomato-Basil Sauce image

This dish brings back memories of my childhood. I grew up only ten miles from the coast, and spent many Sunday mornings with my friends on the beach digging for clams, which we'd bring home to cook. I love the dense, chewy texture of razor clams, but if they're not available, other clams work great with this recipe, too, including Manila, Asari, and littleneck.

6 Roma tomatoes
1/4 cup extra-virgin olive oil
3 tablespoons minced shallot
1 tablespoon minced garlic
1/2 cup diced red bell pepper
1/4 cup tomato paste
1 1/2 teaspoons sugar
2 teaspoons balsamic vinegar
1/4 cup minced basil leaves
2 teaspoons salt
Pinch of pepper
(makes 2 cups)
1 pound razor clams, alive and in shells (can be found in fish markets or Asian grocery stores; or substitute with any type of shellfish)
3 tablespoons dried wakame
2 cups hot water
12 ounces dried spaghetti
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
Pinch each of salt and pepper

Steps:

  • To make the sauce, prepare a small ice bath and bring a pot of water to a boil. With a paring knife, remove the core from the tomatoes and lightly score an X on the bottoms. Blanch the tomatoes in a two-step process: add 1 tomato to the boiling water for 10 seconds, then remove and submerge in the ice bath for 10 seconds. Now add this same tomato to the boiling water again, this time for 5 seconds, and then submerge in the ice bath until cold. Drain. Repeat with the remaining 5 tomatoes.
  • Once chilled, peel the skins off the tomatoes with a paring knife, then cut the tomatoes into quarters. Use the paring knife to remove and discard the seeds, then chop the tomatoes into small pieces.
  • Heat 2 tablespoons of the olive oil in a pot over medium heat. Add the shallot, garlic, and bell pepper and cook, stirring frequently, for 10 minutes, or until soft. Stir in the chopped tomatoes and the remaining 2 tablespoons olive oil and increase the heat to high. Once the liquid starts to boil (the tomatoes will release a lot of water), cook for 5 minutes, then stir in the tomato paste. Cook for 1 to 2 minutes longer, until tomato paste is well incorporated, then stir in the sugar, balsamic vinegar, basil, and salt and pepper. Adjust the seasonings to taste.
  • To make the spaghetti with razor clams, prepare the clams by cutting the shell with a paring knife. Remove the meat, keeping the pieces as whole as possible. Rinse well in salted water to remove any sand, then wash under cold running water for a few minutes. Cut the clams into 1-inch pieces and refrigerate until ready to use.
  • In a bowl, cover the wakame with the hot water and let sit for 10 minutes. Drain well and set aside.
  • Place a large pot of salted water over high heat and bring to a boil. Add the spaghetti noodles and cook, following package instructions. Drain well and return the noodles to the pot. Stir in the butter.
  • Place a sauté pan over high heat and add the olive oil. When the oil just begins to smoke, add the clams and season with the salt and pepper. Cook for 15 seconds, turn over the clams, season again with salt and pepper, and cook for 15 seconds longer. Remove the pan from the heat.
  • To serve, divide the noodles among 4 plates and top each with 1/2 cup of the sauce, then the wakame and clams.

  • Heat olive oil in heavy large pot over medium heat. Add onion, garlic, oregano and fennel seeds and sauté until onion is tender, about 8 minutes. Add tomatoes, clam juice, white wine and liquid reserved from clams. Increase heat and boil until slightly thickened, about 15 minutes. Add clams, shrimp and crabmeat. Reduce heat and simmer 2 minutes. Mix in fresh basil and simmer until shrimp are just opaque in center, about 2 minutes longer. Season stew to taste with cayenne, salt and pepper.

Steps:

  • Preheat a grill: If using a charcoal grill, make a fire in your grill with the coals placed off to one side. When the coals are completely covered in gray ash, hold your hand about 5 inches above the grill grid; count how many seconds you can comfortably leave it there. When you can hold it there for 2 to 3 seconds, you have medium-high heat and are ready to grill. If you are using a gas grill, heat the grill for 15 minutes with the lid closed. Before beginning to cook, reduce the temperature by turning the knobs to medium-high.
  • Place a large heatproof pan on grill near, but not over, the hottest side of the grill. Add butter and garlic and cook until butter is melted, about 3 minutes. Add tomatoes and white wine.
  • Place clams directly over fire on grill and cook until opened, transferring clams to pan as they open. Season clams with salt and pepper; sprinkle with parsley. Serve immediately with grilled bread.

SUMMER CLAMS WITH BALSAMIC VINEGAR

The clams can be substituted with mussels if you like them. This is believe it or not a dish served cold. So read the recipe. Don't let all of the steps scare you it's an easy recipe.

2 lbs small clams (tiny manilas or larger littleneck clams)
2 quarts cold water
2 tablespoons salt
3 tablespoons extra virgin olive oil
3 tablespoons onions, Minced
1 garlic clove, Minced
1 large vine ripened tomatoes, cored, seeded, chopped
3 teaspoons fresh basil, chopped
1 -2 tablespoon commercial balsamic vinegar
salt and pepper
2 bunches arugula or 2 bunches romaine leaves, for garnish

Steps:

  • Rid clams of any sand by first scrubbing them under cold running water.
  • Then put them in a bowl, cover with the cold water, and sprinkle with the salt.
  • Refrigerate no longer then 30 minutes.
  • Drain and rinse.
  • Heat the oil in a 5-quart pot over medium.
  • Sauce the onion 5 to 8 minutes or until golden brown. Stir in the garlic and cook another minute.
  • Add the clams to the pot, cover securely and steam 8 minutes, or until the shells are open about an inch.
  • Steam any clams that have not opened 1 more minute. If still unopened, discard.
  • Keep the liquid simmering while you lift the clams onto a platter.
  • Add the tomato and basil to the pot, cook for a few seconds.
  • Remove the sauce from the heat.
  • Stir in one tablespoon of the balsamic vinegar, and salt and pepper the sauce to taste.
  • Here you have two choices. You can serve the clams hot or you can continue to follow the recipe to serve the clams room temperature.
  • If you choose to continue let the clams and sauce cool to room temperature. Transfer the sauce to a sealed container. If desired, remove some of the top shells from the clams.
  • Ass any liquid from the platter holding the clams to the container with the sauce.
  • Tightly cover the clams and refrigerate separately.
  • Take the sauce out of the refrigerator about 30 minutes before serving.
  • 10 minutes before serving remove the clams from the refrigerator and arrange them on individual plates.
  • Taste the sauce for seasoning, stirring in the remaining vinegar if desired. spoon the sauce over the clams arrange clusters of greens on each plate and serve.

1 tablespoon fresh thyme, or 1 teaspoon dried
1/2 cup dry white wine
12 large clams in the shell
1 1/2 pounds ripe field tomatoes, or 2 cups canned no-salt-added tomatoes
1/2 cup fish stock or bottled clam juice
8 ounces fresh linguine, eggless if possible
5 fresh large basil leaves

Steps:

  • Slice the garlic and chop the fresh thyme. Combine with wine in a pot large enough for all ingredients.
  • Scrub clams and add to pot. Bring to a boil and cook until the clam shells open. As they open, remove them from the pot and set aside. Continue cooking broth until it is reduced by half.
  • Bring water to a boil for the linguine in a covered pot.

2 tablespoons olive oil
1 pound hot Italian sausages, casings removed
1/2 cup chopped shallots
4 garlic cloves, chopped
1/4 teaspoon dried crushed red pepper
1 14 1/2-ounce can diced tomatoes in juice
1 cup canned low-salt chicken broth
2 tablespoons balsamic vinegar
4 pounds littleneck clams (about 3 dozen), scrubbed
1/2 cup chopped fresh basil

Steps:

  • Heat olive oil in heavy large pot over medium-high heat. Add sausages; sauté until almost cooked through, breaking up with fork, about 10 minutes. Add shallots, garlic and dried red pepper. Sauté until sausage is cooked through, about 5 minutes. Mix in tomatoes with juices, broth and vinegar. Add clams, cover and boil until clams open, about 8 minutes (discard any clams that do not open). Mix in basil.

4 red snapper fillets
1 teaspoon kosher salt, plus more to taste
Freshly ground pepper to taste
1 1/2 cups white wine
24 littleneck clams, scrubbed
1 teaspoon unsalted butter
2 shallots, peeled and thinly sliced
1/2 cup heavy cream
2 plum tomatoes, seeded and diced
1/4 cup thinly sliced basil leaves

Steps:

  • Season the snapper with 1 teaspoon of salt and pepper and place in a steamer. Pour the wine in a large pot and boil. Lower heat, place the steamer in the pot and cover tightly. Steam for 5 minutes. Place the clams around the snapper. Cover and steam until the clams open, about 5 minutes.
  • Remove the steamer from the pot and keep the snapper and clams warm. Simmer the wine until reduced to 1/2 cup, about 5 minutes. Remove from the pot and set aside. Place the butter in the pot and turn the heat to low. Add the shallots and stir until softened, about 1 minute. Add the reduced wine and the cream and simmer slowly for 2 minutes. Stir in the tomatoes and remove from heat. Taste and add salt if needed.
  • Place each snapper fillet on a plate and surround with clams. Spoon some sauce over and around the snapper. Scatter the basil. Serve.

For the Clam and Chorizo lovers, this is a easy dish, full of flavor. I made it a few years back and let me say, using some crusty bread to soak up this sauce is a must! Make it a Romantic dish or serve to your party guests. It is sure to please! I got this recipe from a 2006 Canadian Living magazine, and I forgot all about it, until I went through my cookbooks. This can be served as a appetizer as well. Please enjoy :)

2 tablespoons extra virgin olive oil
1 1/2 cups chorizo sausage (cut lengthwise and thinly sliced )
1 white onion, thinly sliced
1/4 teaspoon salt
1/4 teaspoon black pepper
2 garlic cloves, minced
2 lbs tomatoes, chopped
1 tablespoon sherry wine vinegar or 1 tablespoon wine vinegar
4 lbs clams (scrubbed)
1/2 cup chopped fresh basil

Steps:

  • In a dutch oven heat olive oil over medium heat.
  • fry chorizo, onion, garlic, salt and pepper stirring until onion are golden.
  • stir in tomatoes and vinegar.
  • cook over medium heat until tomatoes are tender (about 15 minutes).
  • add clams, cover and bring to a boil.
  • cook just until clams open wide (8 to 10 minutes).
  • discard any clams that do not open.
  • Remove from heat, stir in basil and serve.
  • served with crusty bread to sop up sauce.
