Categories     dessert

Time 10h20m

Yield 4 servings

Number Of Ingredients 4

5 tablespoons sugar
2 tablespoons balsamic vinegar
1 pound strawberries, hulled and halved
2 tablespoons chopped fresh basil, plus 4 whole leaves for garnish

Steps:

  • Combine the sugar and vinegar in a small saucepan. Cook, stirring constantly, over medium heat until the sugar completely dissolves, 3 to 5 minutes. Remove from the heat and cool, the mixture should be the consistency of maple syrup.
  • Combine the strawberries and basil in a food processor and puree. Add the sugar mixture and pulse the machine to combine. Pour into an 8-inch square baking dish, cover loosely with plastic wrap and freeze for about 2 hours.
  • When the edges begin to harden, use the tines of a fork to scrape them into bits. Repeat the procedure in 1 to 2 hours, and then occasionally thereafter, until the mixture is frozen through in "shavings." Freeze overnight.
  • Spoon the granita into serving dishes and garnish each with a basil leaf, then serve.

TOMATO & BASIL GRANITA

Tomato & basil granita image

An unusual and delicious dinner party starter

Provided by Barney Desmazery

Categories     Dinner, Lunch, Snack, Starter, Supper

Time 25m

Yield Serves 8 as a starter

Number Of Ingredients 7

900g very ripe tomatoes
1 tsp salt
1 tbsp sugar
1 garlic clove , finely chopped
1 tsp ground black pepper
1 tbsp red wine vinegar
bunch basil leaves , removed from stalk

Steps:

  • Chop the tomatoes and place in a bowl with all the other ingredients except the basil leaves. If you have time, leave them to macerate at room temperature overnight. Blitz in a blender - in batches, then strain through a fine sieve. Shred the basil leaves and stir through.
  • Clear a shelf in the freezer and place a sided metal tray in to chill. Make up your mix and leave to cool, then pour into the tray and cover with cling film. Freeze the liquid until frozen around the edges and slushy in the middle. Use a fork to break up the ice into smaller crystals. Return the tray to the freezer. Repeat the breaking up process every half hour (at least three times) until it's completely frozen and the texture of snow. For a quicker method: freeze the mixture in an ice tray, then blitz the cubes in a food processor just before serving. The texture will be slightly slushier, but just as delicious.

FRESH GINGER GRANITA

Fresh Ginger Granita image

This recipe is from The Culinary Institute of America's Cooking at Home with The Culinary Institute of America, Here's what they say," Also known as granité, this frozen dessert is based on a few simple ingredients and a minimal amount of equipment. Its distinctively flaky and granular texture is achieved through a unique, yet simple, freezing technique made easily at home. Often served to cleanse the palate, granitas also supply a subtle ending to a decadent meal."

Categories     Frozen Desserts

Time 25m

Yield 8 1/2 cup servings

Number Of Ingredients 4

3 tablespoons fresh gingerroot, thickly sliced
3 1/2 cups water
1 1/2 cups sugar
2 teaspoons fresh lemon juice

Steps:

  • In a blender or food processor, purée the ginger with 1 cup of water. Combine the ginger purée, sugar and the remaining water in a saucepan. Bring to a bare simmer over high heat, not allowing the mixture to boil.
  • Strain the mixture through a fine-mesh strainer and add the lemon juice. Pour into a prechilled, non-reactive baking pan. Place in the freezer.
  • Stir the granita every 15-20 minutes until it is evenly frozen with large crystals, about 2 hours.
  • Or, let it freeze without stirring until solid, about 4 hours. When solid, use a metal spoon to scrape it into a light, granular texture or place broken pieces into a food processor and chop to desired texture.
