2 cups all-purpose flour
1 cup white sugar
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
¼ cup butter
1 egg
¾ cup orange juice
1 tablespoon grated orange zest
1 ½ cups fresh or frozen cranberries
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a medium bowl, mix together the flour, sugar, baking powder, salt and baking soda. Cut in the butter until the mixture resembles coarse crumbs.
  • In a small bowl, beat the egg, orange juice and orange zest. Blend into the dry mixture. Stir in the cranberries and walnuts. Transfer to the loaf pan.
  • Bake in the preheated oven 65 to 70 minutes, or until a wooden toothpick inserted at center comes out clean. Cool in pan 10 minutes, remove to wire rack and cool completely before serving.

1 cup unsalted raw cashews
1 cup unsalted raw macadamia nuts
1 cup unsalted raw pecans
1 cup unsalted raw shelled pistachios
2 tablespoons unsalted butter
2 tablespoons chopped rosemary, plus 2 whole sprigs, for garnish
2 tablespoons light brown sugar
1 tablespoon chopped thyme
3/4 teaspoon cayenne pepper
1 teaspoon fine sea salt
1 cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  • Combine the cashews, macadamias, pecans and pistachios in a large bowl.
  • Melt the butter in a small saucepan. Pour the butter over the nuts and combine with a wooden spoon. Stir in the chopped rosemary, brown sugar, thyme, cayenne pepper and salt until combined.
  • Spread the nuts evenly on the parchment-lined rimmed baking sheet and cook until toasted and fragrant, 12 to 14 minutes.
  • Allow the nuts to cool slightly until they are warm, about 5 minutes.
  • Combine the dried cranberries with the warm nut medley in a large bowl. Season with salt, if desired. Garnish with the rosemary sprigs before serving.

1/2 cup chopped walnuts

1/2 teaspoon almond extract
Whipped cream or ice cream, optional

Steps:

  • In a bowl, combine the flour, sugar and salt. Add cranberries and nuts; toss to coat. Stir in the butter, eggs and extract (mixture will be very thick if using frozen berries). Spread into a greased 9-in. pie plate. , Bake at 350° for 40 minutes or until a toothpick inserted in the center comes out clean. Serve warm with whipped cream or ice cream if desired.

My Mother-In-Law has been making this for breakfast on Christmas day since I met my Dear Husband and before. It's really wonderful, and we always look forward to brunch at Mom's. This recipe can be changed all about, too. I've used pepper-jack cheese and shrimp, Havarti and crab...We just like it best the way Mom makes it! This goes very well with little sweet rolls, fresh strawberries, juice and coffee.

8 slices white bread, cubed
3 cups shredded sharp cheddar cheese
1 lb Little Smokies sausage, cut in thirds
5 eggs
2 1/2 cups milk
3/4 teaspoon dry mustard
10 3/4 ounces cream of mushroom soup
1/2 cup milk

Steps:

  • In a greased 9X13 casserole dish, alternate layers of bread, sausage, and cheese.
  • Beat eggs, then add milk, salt, and mustard. Pour over meat and cheese mixture. Refrigerate overnight.
  • Mix soup and milk together in a pourable cup. Cover and refrigerate overnight.
  • Next morning, pour the soup and milk mixture over all, bake 300*F 1-1/2 hours until set.

1/2 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped fresh or frozen cranberries
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in cranberries and walnuts., Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 20-25 minutes or until golden brown. Cool on a wire rack. Cut into bars.

This would be yummy for any day but it is Christmas inspired because I made it on Boxing Day morning out of leftovers I had floating around from Christmas day. Plus, after eating so much the day before it was kind of nice to start the next day with a healthy breakfast. If you use Splenda instead of sugar this is pretty diabetic friendly too.

2 cups fresh cranberries
1/2 cup orange juice
4 teaspoons sugar or 4 teaspoons Splenda granular
1/3 cup unsalted mixed nuts (I used cashews, walnuts, hazelnuts, brazil nuts & almonds)
1 cup low-fat Greek yogurt

Steps:

  • Put the cranberries in a saucepan with the orange juice and sugar or Splenda.
  • Cover over a low heat for about 5 minutes, stirring frequently. You want the cranberries to pop and for the juices to have thickened up a good deal.
  • At the same time as the cranberry mixture is cooking put another pan on a high heat and toast the nuts. Stir or toss them frequently to make sure they don't burn.
  • Pour the cranberry mixture into two dessert bowls.
  • Put 1/2 cup of yogurt on top of the cranberry mixture in each bowl.
  • Sprinkle the nuts on top of the yogurt.
  • Serve.
