whipped cream, optional

Steps:

  • Combine all ingredients in a medium sauce pot and heat through, making sure not to boil, stirring occasionally.
  • Serve hot, or over ice!
  • Top with whipped cream (optional).

Steps:

  • Mix the ground coffee, allspice, and cinnamon in a small bowl, and place into the filter of a drip coffee maker. Pour 4 cups of water into the coffee maker, and turn on the machine. When coffee has finished dripping, pour into 2 cups. Stir in cream and sugar to taste.

Unless I can basically put a wedge of pumpkin pie from my Thanksgiving leftovers into the blender and stir it into hot coffee, it's likely not "pumpkin spice" enough for me! I took the heart of my pie filling recipe and converted it into a mix I keep in the fridge. I just spoon a few tablespoons into a cup with searing hot coffee and foamed hot milk for a latte that feels homemade and has such a clear, deep flavor.

About 3/4 cup Pumpkin Spice Mix, recipe follows
1/2 cup whole milk
1 1/2 cups hot strongly brewed coffee
Two 2-ounce shots whiskey
Whipped cream, to serve
Ground cinnamon, to serve
One 15-ounce can pumpkin puree
1 cup whole milk
1 cup sugar
2 tablespoons molasses
1 tablespoon pumpkin pie spice
1/2 teaspoon kosher salt

Steps:

  • If the pumpkin spice mixture is not warm, heat it in a small saucepan or microwave. In a small saucepan, heat the milk over medium heat, whisking as it heats, until it simmers and becomes foamy, 3 to 4 minutes. (Alternatively, microwave the milk until it's hot and then whisk.) Add the warm pumpkin spice mixture into the warm milk and continue to whisk until frothy.
  • To serve, divide the hot coffee and whiskey between two tall heat-resistant glasses or mugs. Divide and stir the pumpkin-milk mixture into the glasses, stirring to keep the foam up, until smooth. Top with whipped cream and a dusting of cinnamon.
  • Make the pumpkin mix: In a medium saucepan, whisk together the pumpkin puree, milk, sugar, molasses, pumpkin pie spice and salt. Mix until thoroughly combined. Bring to a simmer over medium heat, stirring, 2 to 3 minutes. If not using immediately, transfer to a storage container and refrigerate for up to 1 week.

  • In a small saucepan, heat milk, pumpkin, sugar and pie spice until bubbles form around sides of pan and sugar is dissolved. Transfer to a bowl; stir in coffee and vanilla. Refrigerate, covered, several hours or overnight., Place milk mixture, ice cream and ice in a blender; cover and process until blended. If you have fresh organic eggs which are safe to eat raw or warmed, make this as suggested. If not, just use steamed milk or soymilk on top of your coffee! But I found this to be a great protein post work out snack.

1 cup coffee, hot
1 large egg
1/4 cup rice milk
1 tablespoon molasses
1 teaspoon pumpkin pie spice

Steps:

  • Brew coffe as you're used to. It should be really steaming hot. Stir in molasses.
  • Place egg, rice milk and pumpkin pie spice in a blender and blend until foamy.
  • Slow speed down and slowly drizzle in the steaming hot, sweetened coffe.
  • As soon as all coffee is incorporated in the egg mixture, give it another whirl at high speed.
  • Serve immediately.
  • If made with steamed milk, stir half of the spice and molasses into the coffee and heat the other half of the spice with the milk. Steam milk and top coffee with steamed spiced milk.

I purchased from World Market a 16.5 oz. bottle of Pumpkin Spice Syrup by Torani with the inscription "Authentic Coffehouse Flavor" for $5.99. According to the ingredient list, it was basically caramel sauce with nutmeg. That's it...caramel sauce and one spice with no pumpkin whatsoever and expensive. Though it was tasty, in order to get a good infusion of the spice, quite a bit needed to be added to each serving. The recipe below is basic. Vanilla may be added and can imagine pumpkin puree or caramel sauce being a good addition, as well.

1 1/2 teaspoons cinnamon
3 teaspoons pumpkin pie spice
1/4 teaspoon ground cloves (optional and will be spicier) or 1/4 teaspoon nutmeg (optional and will be spicier)
2 teaspoons vanilla extract (optional)

Steps:

  • Mix first 5 ingredients in a 1 quart saucepan and bring to a boil.
  • Reduce heat and simmer for 10 minutes, stirring often; cool completely.
  • Strain in a coffee filter or a strainer lined with cheesecloth.
  • Add 2 teaspoons vanilla extract, after it has cooled completely, if desired.
  • Pour into an air-tight bottle or jar and store in the refrigerator. Keeps for 1-2 weeks.
