Wonderful spice flavor that's always nice in a holiday pie! Even though it is relatively simple to make, the streusel topping can be made a day ahead for even easier preparation. Served with vanilla ice cream, it rounds out the perfect meal and definitely delivers the 'Wow!" factor.

2/3 cup walnuts
1/2 cup packed light brown sugar
1/4 cup yellow cornmeal
1/4 cup all-purpose flour
3/4 teaspoon cinnamon
1/2 teaspoon ground nutmeg
5 tablespoons unsalted butter, chilled, cut into small pieces
2 1/4 lbs granny smith apples, peeled, quartered, cored, cut into 1/2-inch-thick wedges (about 6 medium)
1/2 cup sour cream
1/4 cup sugar
2 tablespoons all-purpose flour
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 prepared pie crust

Steps:

  • For streusel topping: Combine nuts, brown sugar, cornmeal, flour, cinnamon, and nutmeg in food processor and pulse on/off until nuts are finely chopped. Add butter and process until small moist clumps form. (Can be prepared 1 day ahead. Cover and refrigerate.).
  • For filling: Position rack in center of oven and preheat to 375 degrees. Toss apples with sour cream in large bowl to coat. Mix sugar, flour, cinnamon, nutmeg, and cloves in a small bowl. Sprinkle mixture over apples and toss to coat.
  • Transfer filling to prepared crust. Sprinkle streusel topping over apples, covering completely. Bake pie until apples are tender and streusel is golden, tenting pie if streusel browns too quickly, about 1 hour. Transfer pie to rack and cool slightly.
  • Serve pie slightly warm or at room temperature (and definitely with some vanilla ice cream!).

Steps:

  • Preheat the oven: Preheat the oven to 400°F with a rack in the middle and another rack below it. Place a large rimmed baking sheet on the lower rack to catch any of the drippings from the pie.
  • Toss the apples with lemon juice or vinegar: As you slice the apples, put them in a bowl and toss them with a little lemon juice or apple cider vinegar. The acidity of the lemon juice or vinegar will help keep the apples from discoloring while you work and will intensify the apple flavor in the pie.

1 ½ cups finely crushed graham cracker crumbs
¼ cup white sugar
6 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.

  • Turn the oven off but do not open the door, allowing the cheesecake to cool in the oven for at least 4 hours; this helps prevent cracking. Refrigerate to allow cake to fully set before serving, 2 to 4 hours more.

My favorite apple pie. I love the way the fresh apples taste layered in thin slices, rather than premade into a syrupy filling. The sour cream and walnut topping compliment this perfectly. You are welcome to peel the apples as you wish, but I do not cleanly peel the apples, leaving a little bit of peel here and there. I like the added texture, flavor, and nutrients.

SOUR CREAM TOPPING
1 cup(s) sour cream

FILLING

Steps:

  • Preheat oven to 375 degrees F.
  • Prepare streusel: Combine flour, brown sugar, cinnamon and salt. Stir in walnuts. Add butter and vanilla and lightly stir with a fork until evenly moist. Set aside.
  • Prepare Sour Cream topping: In small bowl, combine sour cream and white sugar. Cover and refrigerate.
  • Layer the apple slices in the pie shell very tightly and densely, without gaps. Spread the sour cream mixture over the apples leaving a half-inch border at the edge. Cover with streusel all the way to the edge.
  • Cover edge of piecrust with foil to avoid overbrowning. Place on a cookie sheet and bake for 10 minutes. Reduce temperature to 350 degrees F. Bake about 45 minutes or until topping is browned and pie is bubbling.
