GRANDMA MARIE MINALL'S ZUCCHINI BREAD
This recipe care was found with the edges brown, stain markes all over the card and the ink had smudges from oil spills. This recipe was obviously one of Grandma's favorites. It is a moist and very tastey bread.

Steps:
- 1. Preheat oven to 350 Deg. Butter and flour 2 bread pans or spray with non stick baking spray.
- 2. In you mixing bowl combine flour, cinnamon, baking powder, baking soda and salt. In a separate bowl combine the wet ingredients; sugar, oil eggs and vanilla. Cut your zucchin in half and remove seeds. Grate zucchini with skin on. Add wet mix to your dry mix and blend together. Mix in remaining ingredents by hand; zucchini, walnuts and raisins.
- 3. Divide batter between your two loaf pans and bake for 50 min.

Grandma made several different quick breads. We all loved this Zucchini Bread which was among the best! This recipe makes two loaves. Eat one now and freeze one for later, if you like.

- 1. Preheat oven to 325 degrees. Grease and flour two 8 by 4 inch loaf pans. Set aside. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl. Beat eggs, oil, vanilla, and sugar together in another large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
- 2. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool. Wrap in heavy duty foil to freeze one or both loaves. Bread freezes well.
GRANDMA'S ZUCCHINI BREAD
This is a family recipe that was taught to us by Grandma Betty. We always shredded the zucchini in the late summer and would freeze it for making this at Christmas time for the family. Grandma would make sure each family would get a loaf. I now carry that tradition by giving as Christmas presents to family and friends.

- 1. Preheat oven to 350 Grease and flour glass loaf pans (3-4 pans)
- 2. Mix Oil , Sugar , Zucchini and vanilla together.
- 3. Beat Eggs well and then add to oil , sugar mix .
- 4. Mix and then sift dry ingredients together. Slowly add dry mix to wet mix. Mix until no lumps remain .
- 5. Fill glass loaf pans (greased and floured) to about 2/3 full.
- 6. Bake at 350 for 1 hour or until centers are done. I usually insert a butter knife and if it comes out clean , it's done. Let cool in pans.
GRANDMA'S ZUCCHINI BREAD
Grandma gave me her recipe card in 1990 ... a recipe cut of some newspaper years before. It was yellowed when she gave it to me 14 yrs ago. This is quick and delicious! If my kids new there was a vegetable in it would they be surprised!!

- (Please note that the zucchini needs to be grated).
- First mix together the sugar, eggs, salad oil, vanilla, Then mix the dry ingredients flour, salt, baking powder, baking soda, cinnamon.
- Then add the zucchini and dry ingredients to the sugar-egg mixture and mix well do not over mix!
- Pour into 9x5 loave pans.
- Bake one hour on 350 then check with a toothpick for doneness if toothpick is still wet add additional time until toothpick comes out dry.
