DUFF'S CURRIED PASTA SALAD

Steps:
- Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente; drain and toss with the milk in a large bowl.
- Meanwhile, toast the curry powder in a small dry skillet over medium heat until fragrant, about 1 minute. Whisk in the peanut oil and cook until the oil is curry-colored; let cool. Whisk the mayonnaise, chutney and curry oil in a large bowl, then whisk in the vinegar to make a smooth dressing. Season with 1/4 teaspoon salt, and pepper to taste.
- Add the broccoli slaw mix, scallions and cilantro to the dressing and toss until combined. Stir in the pasta and toss to coat. Cover and refrigerate until serving.

- Boil the pasta in salted water for 8 mins. Drain, then cool under the cold tap.
- Meanwhile, mix the mayo, curry paste, yogurt, lemon juice, chutney and sultanas with plenty of seasoning. Add the pasta, coriander, cucumber and celery, and toss everything together to coat in the curried mayonnaise. Pack into a container or bowl.

- Drain the fruit and arrange it in an oven-proof casserole dish. Dot the fruit with butter or margarine. Mix the sugars and the curry powder together, sprinkle over the top of the fruit.
- Bake at 400 degrees F (205 degrees C) until slightly brown, about 15 to 20 minutes.

CURRIED FRUIT & PASTA SALAD
This dish goes great with pork, although we often eat as the main dish itself. I find this is an 'addictive' salad-- there is never any leftover. Initially I couldn't imagine that these flavors would go well together, but it is perfect. Do not omit any of the ingredients otherwise you will miss them. The chicken can be subbed for tuna, although we don't care for that variation. Prep time includes pasta cook time as you prep while it cooks. We don't always chill first. This recipe is a family favorite and I don't know where it came from.

- Cook pasta according to directions, drain.
- Combine miracle whip and seasonings in a small bowl.
- Toss the pasta and seasonings together, then add grapes and chicken.

YUMMY FRUIT 'N' PASTA SALAD
This is my take on the recipe that is usually printed on the box of Acini de Pepi. It has become one of our favorites. I even will eat the left-overs for breakfast. You can substitute the mandarin orange juice instead of the pineapple juice. Prep time includes letting it set overnight in the fridge.

- Cook sugar, salt, eggs, flour and pineapple juice until thick and bubbly, cool.
- When cooked mixture is fully cooled, pour over pasta.
- Mix well, cover and store in fridge overnight.
- In the morning, add fruit, Cool Whip and marshmallows.

- While pasta cooks, combine in a large bowl, the mayonnaise, chutney, curry, salt, and cayenne; mix well.

- Tear lettuce and spinach into bite size pieces.
- Cut grapes in half.
- Drain orange segments.
- Mince garlic.
- Peel, seed and slice avocado.
- In salad bowl combine lettuce, spinach, orange segments and grapes.
- In screw top jar combine salad oil,vinegar,garlic, brown sugar, chives, curry powder and soysauce.
- Shake dressing until combined.
- Just before serving toss some of the dressing with the salad.
- Garnish with avocado and almonds.
- Pass around the remaining dressing.
