DUFF'S CURRIED PASTA SALAD



Duff's Curried Pasta Salad image

Kosher salt
8 ounces elbow macaroni
1/4 cup cold milk
2 tablespoons curry powder (preferably Madras-style)
1/4 cup peanut oil
2 tablespoons mayonnaise
1/4 cup mango chutney, finely chopped
1/4 cup rice wine vinegar
Freshly ground pepper
1 10-ounce bag broccoli slaw mix
1/2 cup chopped scallions
1/4 cup roughly chopped fresh cilantro

Steps:

  • Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente; drain and toss with the milk in a large bowl.
  • Meanwhile, toast the curry powder in a small dry skillet over medium heat until fragrant, about 1 minute. Whisk in the peanut oil and cook until the oil is curry-colored; let cool. Whisk the mayonnaise, chutney and curry oil in a large bowl, then whisk in the vinegar to make a smooth dressing. Season with 1/4 teaspoon salt, and pepper to taste.
  • Add the broccoli slaw mix, scallions and cilantro to the dressing and toss until combined. Stir in the pasta and toss to coat. Cover and refrigerate until serving.

4 tbsp light mayonnaise
4 tsp rogan josh curry paste
150g pot natural yogurt
juice ½ lemon
2 tbsp mango chutney
50g sultana
15g pack coriander , chopped
½ cucumber , deseeded and diced
2 celery sticks, diced

Steps:

  • Boil the pasta in salted water for 8 mins. Drain, then cool under the cold tap.
  • Meanwhile, mix the mayo, curry paste, yogurt, lemon juice, chutney and sultanas with plenty of seasoning. Add the pasta, coriander, cucumber and celery, and toss everything together to coat in the curried mayonnaise. Pack into a container or bowl.

This is my favorite traditional side dish for our holiday meals... it may sound a bit on the weird side... but go for it!

1 (16 ounce) can sliced pears, well drained
1 (20 ounce) can pineapple chunks, drained
1 (15 ounce) can apricot halves, drained
2 (15 ounce) cans sliced peaches
1 (4 ounce) jar maraschino cherries
¼ cup packed brown sugar
¼ cup white sugar
3 teaspoons curry powder
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Drain the fruit and arrange it in an oven-proof casserole dish. Dot the fruit with butter or margarine. Mix the sugars and the curry powder together, sprinkle over the top of the fruit.
  • Bake at 400 degrees F (205 degrees C) until slightly brown, about 15 to 20 minutes.

¼ cup firm tofu, crumbled
3 tablespoons pine nuts

Steps:

This dish goes great with pork, although we often eat as the main dish itself. I find this is an 'addictive' salad-- there is never any leftover. Initially I couldn't imagine that these flavors would go well together, but it is perfect. Do not omit any of the ingredients otherwise you will miss them. The chicken can be subbed for tuna, although we don't care for that variation. Prep time includes pasta cook time as you prep while it cooks. We don't always chill first. This recipe is a family favorite and I don't know where it came from.

4 cups dry small shell pasta
1 cup Miracle Whip
1 tablespoon curry powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground ginger
2 (10 ounce) cans mandarin oranges, drained
2 cups seedless grapes
2 cups chopped cooked chicken (or 2 cans tuna drained)

Steps:

  • Cook pasta according to directions, drain.
  • Combine miracle whip and seasonings in a small bowl.
  • Toss the pasta and seasonings together, then add grapes and chicken.
  • Gently stir in mandarin oranges last so that they don't get too broken up.
  • Refrigerate until chilled, enjoy!

This is my take on the recipe that is usually printed on the box of Acini de Pepi. It has become one of our favorites. I even will eat the left-overs for breakfast. You can substitute the mandarin orange juice instead of the pineapple juice. Prep time includes letting it set overnight in the fridge.

1 cup sugar
1/2 teaspoon salt
3 eggs, beaten
2 tablespoons flour
2 (11 ounce) cans mandarin orange sections, drained
1 (10 ounce) jar maraschino cherries, drained
3/4 cup shredded coconut
1 can crushed pineapple, drained reserving juice
1 can pineapple chunk, drained reserving juice
1 3/4 cups reserved pineapple juice
1 (8 ounce) bag miniature marshmallows
1 (8 ounce) container Cool Whip
1 (16 ounce) box acini di pepe pasta, cooked and drained

Steps:

  • Cook sugar, salt, eggs, flour and pineapple juice until thick and bubbly, cool.
  • When cooked mixture is fully cooled, pour over pasta.
  • Mix well, cover and store in fridge overnight.
  • In the morning, add fruit, Cool Whip and marshmallows.
  • Mix well.

1/2 cup thinly sliced scallions or 1/2 cup chopped chives
spinach leaves (optional)

Steps:

  • Cook pasta in boiling water until al dente, 8-10 minutes.
  • While pasta cooks, combine in a large bowl, the mayonnaise, chutney, curry, salt, and cayenne; mix well.
  • Add the bell peppers, peas, and scallions or chives; toss to combine.
  • Drain pasta and rinse with cold water.
  • Drain again.
  • Add the pasta to the bell pepper mixture and toss well.
  • Serve the salad on a bed of spinach leaves, if desired.
  • Sprinkle with cilantro, and almonds, if desired.

1 head red leaf lettuce or 1 head romaine lettuce
1 cup fresh spinach
1 (11 ounce) can mandarin oranges, sections
1 cup red grapes
1/2 cup salad oil
1/3 cup white wine vinegar
1 garlic clove
2 tablespoons brown sugar
2 tablespoons dried chives
1 tablespoon curry powder
1 teaspoon soy sauce
1/2 cup slivered almonds
1 avocado

Steps:

  • Tear lettuce and spinach into bite size pieces.
  • Cut grapes in half.
  • Drain orange segments.
  • Mince garlic.
  • Peel, seed and slice avocado.
  • In salad bowl combine lettuce, spinach, orange segments and grapes.
  • In screw top jar combine salad oil,vinegar,garlic, brown sugar, chives, curry powder and soysauce.
  • Shake dressing until combined.
  • Just before serving toss some of the dressing with the salad.
  • Garnish with avocado and almonds.
  • Pass around the remaining dressing.
