SPICY-SWEET BAKED CHICKEN DRUMSTICKS RECIPE

This Baked Chicken Drumstick Recipe is a sweet and spicy one! Sticky and addictive, these baked drumsticks are perfect for parties and mid-week meals!

20 chicken drumsticks
1/3 cup flour ((any variety for GF))
3 tablespoons corn starch
1 tablespoon salt
3 1/2 cups pineapple juice
1 cup brown sugar
1/4 cup soy sauce
1/4 cup rice vinegar
2 tablespoons fresh grated ginger
3 cloves garlic, (minced)
1/4-1/2 cup Sriracha sauce

Steps:

  • Preheat the oven to 450 degrees F. Line two rimmed baking sheets with foil, spray with non-stick cooking spray, and set aside.
  • Mix the flour, corn starch, and salt together in a bowl. Using paper towels, dry each drumstick and roll them in the flour mixture for a light dusting. Then lay them out on the baking sheets, evenly spaced.
  • Bake the drumsticks for 30 minutes, flipping once.
  • In the meantime, pour the pineapple juice and all remaining ingredients in a sauce pot. (If you are sensitive to heat, add 1/4 cup Sriracha; if you really like spicy food, add 1/2 cup.) Bring the sauce to a boil, reduce the heat and simmer for 30 minutes.
  • Then pour the sauce over the drumsticks evenly. Roll the drumsticks around in it to coat, and place back in the oven, uncovered.
  • Bake another 20 minutes, until the sauce is thick and sticky and the drumsticks are well coated. Serve warm.

1 cup apricot preserves
1/2 cup ketchup
1/4 cup soy sauce
2 teaspoons bottled minced garlic (or 1 1/2 tsp garlic powder, I use 2 cloves fresh minced)
1 -2 tablespoon bottled hot sauce
12 chicken drumsticks
hot cooked rice

Steps:

  • For sauce~ in a small saucepan, combine preserves, ketchup, soy sauce, garlic and hot pepper sauce.
  • Cook and stir over medium heat until preserves are melted.
  • Arrange drumsticks in a single layer in 13x9 baking pan.
  • Pour sauce over drumsticks, turning to coat.
  • Bake uncovered in a 350º oven for 40 to 45 minutes or until chicken is done, spooning sauce over drumsticks once during baking.
  • Serve drumsticks over rice.
  • If desired, spoon sauce from baking pan over chicken and rice.

1/2 cup finely chopped yellow onion
1/4 cup fresh orange juice (from 1 large orange)
1/4 cup ketchup
1/4 cup orange marmalade
1/4 cup apple cider vinegar
2 tablespoons low-sodium soy sauce
1 tablespoon Dijon mustard
1/2 teaspoon Chinese five-spice powder
1/2 teaspoon paprika
1/4 teaspoon freshly ground black pepper
1 garlic clove, minced
8 skin-on chicken drumsticks (about 1 pound)
Chopped fresh parsley, for sprinkling

Steps:

  • Add the onion, orange juice, ketchup, orange marmalade, apple cider vinegar, soy sauce, Dijon, five-spice, paprika, black pepper and garlic to a large resealable plastic bag. Close the bag and shake to incorporate. Add the chicken drumsticks to the bag. Reseal and marinate for at least 1 hour in the refrigerator. (Chicken can be prepped the day before and refrigerated overnight.)
  • Preheat oven to 400 degrees F.
  • Pour the entire contents of the bag onto a foil-lined sheet tray. Bake, turning the drumsticks halfway through baking, until the chicken is cooked through, the juices run clear and an instant-read thermometer inserted into the thickest part of meat (avoiding bone) registers 160 degrees F, about 25 minutes.
  • Remove to a platter and let rest 5 minutes, then sprinkle with parsley and serve warm.

BUFFALO DRUMSTICKS

8 drumsticks
2 tablespoons vegetable oil
1 teaspoon chili powder
1 teaspoon garlic powder
Salt and freshly ground black pepper
1/4 cup (1/2 stick) unsalted butter, melted
1/4 cup hot sauce
1 tablespoon BBQ sauce

Steps:

  • For the chicken: Preheat the oven to 375 degrees F. Rinse and pat dry the drumsticks. Mix the oil, chili powder, garlic powder, and some salt and pepper in a medium bowl or resealable plastic bag. Toss the drumsticks in the seasoned oil to coat well. Bake the drumsticks on a wire rack placed on a baking sheet (so air circulates around chicken) until very tender and the skin is crisp, 50 minutes.
  • For the spicy sauce: Mix together the butter, hot sauce and BBQ sauce in a large bowl.
  • Toss the drumsticks in the spicy sauce until well coated. Place the drumsticks back on the rack and continue baking an additional 10 to 15 minutes.
  • Cook's Note: For an alternate milder sauce, whisk together 1 tablespoon maple syrup, 1 teaspoon hot sauce, juice and zest of 1 lime, 1 clove of garlic, minced and some salt and pepper.

8 chicken drumsticks
4 tablespoons red wine vinegar
2 tablespoons tomato paste
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon Worcestershire sauce
1 clove garlic
1 pinch cayenne pepper

Steps:

  • Slash chicken legs 2-3 times with a sharp knife.
  • Place in glass baking dish side by side to marinade.
  • Mix remaining ingredients together and pour over chicken.
  • Refrigerate 1 hour.
  • Cook on hot grill about 20 minutes, turning and brushing with the marinade.
  • Check to make sure they are done and be careful not to burn them.
