Here's a family-sized version of my grandma's summertime dessert. I can still taste the sweet juicy berries she piled over warm biscuits and topped with a huge dollop of fresh whipped cream. 2 cups all-purpose flour
2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
1 large egg, room temperature, beaten
2/3 cup half-and-half cream
1 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/8 teaspoon vanilla extract
Additional butter
1-1/2 cups fresh strawberries, sliced

Steps:

  • Preheat oven to 450°. Combine flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk egg and half-and-half. Add all at once to crumb mixture; stir just until moistened. , Spread batter into a greased 8-in. round baking pan, slightly building up the edges. Bake until golden brown, 16-18 minutes. Remove from pan; cool on a wire rack. , Beat heavy cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until stiff peaks form. Split cake in half crosswise; butter bottom layer. Spoon half the strawberries over bottom layer. Spread with some whipped cream. Cover with top cake layer. Top with remaining berries and whipped cream. Cut into wedges.

This is my grandmother's biscuit recipe. It is my all-time favorite and has a really good flavor to it. Be sure not to roll out too thin, you want high biscuits! I usually just pat out the dough to the desired thickness, usually 1/2 inch.

2 cups all-purpose flour
2 tablespoons white sugar
4 teaspoons baking powder
½ teaspoon cream of tartar
½ teaspoon salt
½ cup vegetable shortening
1 egg
⅔ cup milk

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Sift flour, sugar, baking powder, cream of tartar, and salt into a bowl. Use a pastry cutter to chop vegetable shortening into the flour mixture until it resembles coarse crumbs. Whisk egg and milk together in a separate bowl and slowly add milk mixture to flour mixture, stirring as you pour, until dough is moistened and well-mixed. Drop dough by spoonfuls onto an ungreased baking sheet.
  • Bake in the preheated oven until biscuits have risen and are golden brown, 10 to 12 minutes.

During the Summer months, grandma would make these bicuits and put all kinds of berries on them with whipped cream. As a kid I thought they were the greatest. Well here I am older now and making my own. I garnish mine with a piece of my chocolate mint leaves I have in my spice garden.

1 c self-rising flour
3 Tbsp margarine or butter at room temperature
7 Tbsp milk
1 tsp pure vanilla extract
whipped cream or cool whip as desired

Steps:

  • 1. Preheat oven to 450.
  • 2. Combine all ingredients until batter is blended.
  • 3. Using a tablespoon; drop onto a cookie sheet that has been sprayed with cooking spray. If you have a nonstick cookie sheet; it works well also when sprayed with cooking spray.
  • 4. Place in oven and bake about 10 minutes or untl golden brown.
  • 5. Remove biscuits and cut in half and serve with your favorite fresh fruits of the season and top with your favorite whipped cream. Can be served hot or cold.

This recipe can be used for either shortcake or upside down cake. Grandmom used to make this a lot and she put fresh strawberries, raspberries or blackberries on the shortcake. In the winter she would use canned peaches. She used pineapples for the upside down cake.

1 cup sugar
1 egg
1 teaspoon vanilla
2 cups self-rising flour

  • Bake at 350 untill brown- approximately 20 minutes.
  • If you don't have self-rising flour you can use- 2 cups plain flour, 2 teaspoons baking powder and 1/4 teaspoons salt.

6 cups sliced fresh strawberries
1/2 cup sugar
1 teaspoon vanilla extract
SHORTCAKE:
3 cups all-purpose flour
5 tablespoons sugar, divided
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup cold butter, cubed
1-1/4 cups buttermilk
2 tablespoons heavy whipping cream
TOPPING:
1-1/2 cups heavy whipping cream
2 tablespoons sugar
1/2 teaspoon vanilla extract

Steps:

  • Combine strawberries with sugar and vanilla; mash slightly. Let stand at least 30 minutes, tossing occasionally., Preheat oven to 400°. For shortcakes, whisk together flour, 4 tablespoons sugar, baking powder, baking soda and salt. Cut in butter until crumbly. Add buttermilk; stir just until combined (do not overmix). Drop batter by 1/3 cupfuls 2 in. apart onto an ungreased baking sheet. Brush with 2 tablespoons heavy cream; sprinkle with remaining 1 tablespoon sugar. Bake until golden, 18-20 minutes. Remove to wire racks to cool completely., For topping, beat heavy whipping cream until it begins to thicken. Add sugar and vanilla; beat until soft peaks form. 2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
4 tablespoons shortening
2/3 cup milk
1 egg yolk, well beaten

Steps:

  • Combine dry ingredients in medium bowl.
  • Add shortening, and cut into dry ingredients.
  • Add milk and egg yolk together, and mix just until all dry ingredients are moistened.
  • Dump out onto a lightly floured surface and knead about 4-5 times (very lightly!) and pat dough into a 1/3 inch thickness.
  • Use a cookie cutter to cut out shapes.
  • Bake on lightly greased cookie sheet for 10-15 minutes, or until golden brown.
  • Serve with berries or other cut fresh fruit and sweetened whipped cream.
  • Yum!
