This is an old Pennsylvania Dutch recipe I've always served as a side dish. The simple addition of onion and celery gives the potatoes a special flavor, and the parsley adds color.

1 large onion, finely chopped
2 to 3 celery ribs, finely chopped
6 tablespoons butter, cubed
2 slices white bread, torn
3 cups mashed potatoes
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 350°. In a large saucepan, saute onion and celery in butter until tender. Remove from the heat. Stir in the bread, potatoes and parsley. Spoon into a greased 1-qt. casserole. , Bake, uncovered, until top is lightly browned, 45 minutes.

4 stalks celery
2 medium onions
2 tablespoons margarine
1 loaf stale bread
3/4 cup milk
4 cups potatoes, mashed
3 teaspoons poultry seasoning
salt and pepper

Steps:

  • Soak bread in milk, set aside.
  • Saute finely chopped celery and onions in margarine over low flame. Add cold or freshly mashed potatoes and mix with celery and onions. Add seasoning, squeeze bread dry and mix all ingredients together being careful to keep flame low.
  • Let cool.
  • Spoon into salted cavity of chicken or turkey.

3 potatoes, peeled and cubed
½ cup butter
2 celery stalks, finely chopped
1 large onion, minced
2 tablespoons dried summer savory
2 eggs, beaten
6 slices bread, cut into cubes
salt and ground black pepper to taste

Steps:

  • Place potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two, then mash.
  • Melt the butter in a skillet over medium heat; cook the celery and onion in the butter until the onion has turned translucent, 5 to 7 minutes. Fold into the mashed potatoes along with the savory, and allow to cool until just warm.
  • Place the cooled mashed potatoes into a large bowl, and stir in the beaten egg. Gently fold in cubed bread, then season to taste with salt and pepper. Refrigerate until ready to use.
  • Use as a stuffing for turkey, or bake in buttered loaf pans at 350 degrees F (175 degrees C) for 30 to 40 minutes.

My grandmom's secret ingredient to her stuffing was stale Italian bread to soak up the stock, and Trisha's grandmother used saltines for a nice crunch. On the show, we cooked up a combination of both of our family traditions!

Number Of Ingredients 10

1 1/2 loaves day-old Italian bread (24 ounces), cut into 1-inch cubes (about 10 cups)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
8 tablespoons (1 stick) unsalted butter, plus more to grease your baking dish
3 medium carrots, preferably rainbow, peeled and diced (about 1 cup)
3 stalks celery, diced
1 large sweet onion, diced
1 tablespoon fresh thyme leaves
2 cups lightly crumbled saltine crackers (1 sleeve or about 40 crackers)
About 4 cups vegetable stock, chicken stock or turkey pan juices

Steps:

  • Preheat the oven to broil.
  • Place the bread cubes on a baking sheet lined with parchment and drizzle over the olive oil. Sprinkle with salt and pepper and toast for 3 to 5 minutes until golden brown. Make sure to watch them so they don't burn. Remove the cubes and switch the oven to 375 degrees F.
  • Melt the butter in a medium skillet over medium heat. Add the carrots, celery, onion and thyme and season with salt and pepper. Saute until softened, about 8 minutes. Remove the vegetables to a large bowl.
  • Add the toasted bread and saltines to the vegetables. Add the stock slowly, tossing gently, until the bread is moist but not too soggy; you may not use all of your stock. Place in a greased 9-by-13-inch baking dish and bake, uncovered, for 45 minutes until golden brown.

MASHED POTATO STUFFING

It wouldn't be Christmas in our family without this satisfying stuffing made from potatoes. My mother-in-law shared the recipe years ago, and I've since passed it on to our grown children.

8 cups riced cooked potatoes
4 cups fine soft bread crumbs
2 large onions, chopped
1 cup butter
1 cup egg substitute
1 to 2 tablespoons poultry seasoning
2 teaspoons salt
1/2 teaspoon pepper
1 turkey (10 to 12 pounds)

Steps:

  • In a bowl, combine the potatoes and crumbs; set aside. In a skillet, saute onions in butter until tender; add to potato mixture. Stir in egg substitute, poultry seasoning, salt and pepper. , Just before baking, stuff turkey. Skewer and fasten openings. Tie drumsticks together. Place with breast side up on a rack in a roasting pan. Cover and bake at 325° for 3 to 3-3/4 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing.

1 tablespoon olive oil
1 large onion, minced
2 garlic cloves, minced
1 tablespoon paprika
2 1/2 lbs potatoes, peeled and diced (3-4 idahos)
salt, to taste
pepper
3 tablespoons fresh parsley or 3 tablespoons fresh dill, etc
3 -4 tablespoons flour
1 egg
1 cup fresh breadcrumb
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon garlic powder
cooking spray

Steps:

  • Preheat oven to 350°F.
  • Heat oil in a skillet, add onions, and cook 5 minutes.
  • Add garlic and paprika and turn heat to low, cook 7 minutes more.
  • Meanwhile heat water, salt, potatoes in a large pot, bring to boiling, lower heat and simmer for 10-15 minutes.
  • Drain potatoes and return them to pot over medium heat until water is evaporated.
  • Remove from heat and cool slightly.
  • Mash potatoes, add onion mixture, herbs, egg, salt, pepper, and flour.
  • Use your hands to form 8 patties.
  • Combine crust ingredients, dredge each knish through the crumb mixture, shaking off excess.
  • Grease a baking sheet with cooking spray, spray tops and bottoms of knishes, bake 30-40 minutes, turning after 20 minutes.

  • Melt margarine in large skillet and saute onions and celery.
  • Stir in the bread crumbs to toast for a few minutes.
  • Add other ingredients together and combine with potato mixture. Mix thoroughly.
  • Put in margarine greased bread pans.
  • Bake at 350 degrees for 1 hour.
  • Note: You can toast bread crumbs in oven instead of putting in skillet.

I just love this recipe. I've never written it down and I hope this is pretty close, because I always just make it by heart. As a child I always demanded this during Thanksgiving and Xmas. It's a savory and delicious side dish anytime. UPDATE: Just went home to Michigan and found copy my grandmother wrote down and this recipe is EXACT! It's scaled down 1/3 so make double and triple this recipe if you have a large family, because I GUARANTEE they'll love it!

1 lb hamburger
1 large onion, chopped
1 large boiling potato, chopped in cubes
2 stalks celery, chopped
2 cups beef broth
1/2 cup water
1 teaspoon garlic salt
1 teaspoon ground black pepper
1 teaspoon ground sage
1 egg
3/4 loaf whole wheat bread, torn into pieces

Steps:

  • Heat oven to 350°F (unless stuffing in a turkey or chicken, cook as usual for a stuffed bird).
  • In a small sauce pan add half the onions, all the celery, all the potato and all the broth and water. Bring to a boil and cook around 10-15 minutes or until potatoes, onions and celery are nice and soft. Mash with a potato masher until vegetables are mashed into fine pieces.
  • In a frying pan brown ground beef with the other half of the onion. Drain about half of the fat. Add garlic salt, sage and pepper.
  • In a large bowl add beef mixture, vegetable liquid, egg and torn pieces of wheat bread. Mix until combined. If too dry you might need to add a little more water or you can use beef broth.
  • Pour mixture into a casserole dish and bake for 30 minutes or until nice and brown.
